Sliced Noodle Soup

Noodle is very popular in northern part of China. Apart from the regular long noodle, there is also sliced noodle.

Mix 100 g flour and 40-50 g water in a bowl. And knead into a dough.

Brush some oil in a pan. Put the dough in it. Press the dough by hand to make it thinner.

Then flip the dough over to let the other side coated with oil.

Cut the dough into strips. Cover the dough with plastic wrap.

For the soup, I used chicken soup I cooked before:

Boil the soup in the pan. Prepare the vegetables you like. I chose carrot (chopped into slices), shiitake (cut into slices) and pakchoi.

Add in carrot and shiitake first. When they are done, stretch the dough strips and twist off into small pieces, then add into the soup.

Cook for around 2 mins.

Last, add in pakchoi. And some salt.

Dish out into bowl. Add a little sesame oil if you like.

It’s really delicious for noodle lover. And ideal for cold and rainy weather.
