1, Cut lotus root into slices. Boil them in hot water for about 3-5 mins.
2, Rinse them under cold water and drain them.
3, Heat a pan. Add in 1 tbsp oil. When oil is heat, turn to low heat.
4, Add in chopped garlic, ginger and red chili. Fry till aromatic.
5, Add in chopped spring onion. Fry for another 1 minute.
6, Add in 1 tsp light soy sauce, 1/2 tsp salt and 1/2 tsp sugar. Stir well.
7. Place lotus root slices in a plate. Pour the sauce over them. Mix well.
