Scrambled Egg with Beef (滑蛋牛肉)

1, prepare ingredients: beef slices 200g, eggs 4, light soy sauce 2 tsp, oyster sauce 1/2 1 tsp, sugar 2 tsp, water 1 tbsp, corn starch 2 tsp, 1 spring onion (chopped).

2, put beef slices in a bowl, add in light soy sauce, sugar, oyster sauce, water. Keep stirring or mixing them by hand. And let beef marinate for 5 mins.

3, add in starch, mix well and let beef rest for another 10 mins.

4, heat a pan. Add in 1-2 tbsp oil.

5, when oil is hot, add in beef slices. Quickly separate beef slices by specula. Stir fry evenly till no more pink color showed in beef.

6, beat eggs in a bowl. Season with 1/2 tap salt. Stir well.

7, pour egg into the pan.

8, push egg and beef gently to the center of the pan till egg turns almost solidified.

9, garnish with chopped spring onion and ready to serve.
