Braised Pork Totter

1, Heat a pan. Add in 1 tbsp oil.

2, Fry pork trotter till slightly brownish.

3, Add in enough hot water to cover all the pork trotters.

4, Add in ginger slices, garlic cloves, 2 tsp whiter pepper powder, 1/3 cup light soy sauce, 2 tbsp dark soy sauce, and rock sugar.

5, Bring to boil with high heat. And simmer with low heat for 20 mins.

6, Skim the broth and remove the scum.

7, Transfer everything to pressure cooker and cook under pressure cooking mode for 30 mins.

8, Heat a pan with some oil in. Stir fry chopped garlic till aromatic. Add in chopped pickled cabbage and stir fry till dry and fragrant.

9, Serve pork trotter with pickled cabbage.

Trotter & Soy Bean Soup

My husband suddenly mentioned collagen the other day. Trotters came to my mind immediately. So I decided to cook this soup. A very classic Chinese trotter and soy bean soup.

It’s a very simple but time-consuming soup.

  1. Wash trotters in water and remove the hair.
  2. Soak soy beans in advance for 2 or 3 hours at least.
  3. Place trotters, soy beans, ginger slices, in a pot. Add in enough water.
  4. Turn to high heat, bring it to boil first. Skim the soup. And simmer with low heat for 2 hours at least.
  5. Season with salt and garnish some chopped spring onion.

I used the rice cooker’s soup function and simmer it for over 4 hours. It turned out amazing.

Soup is sticky and rich. Meat can easily fall off from the bone. My husband drank a whole big bowl of soup very fast. He couldn’t stop and kept saying “delicious”.

Dark Braised Trotters 

1. Cut trotters into small pieces.

2. Place trotter pieces in a pot. Pour in enough water covers trotter.

3. Turn on stove and heat till water boils. Take trotter pieces out. Rinse and drain.

4. Heat a little oil in the pan. Put trotter pieces in. Stir fry a bit.

5. Add in a little cooking wine, soy sauce, ginger slices, star anise and several sugar cubes. Then pour in hot water covers all ingredients.

6. Turn to low heat. Cover the pan with lid. Slow cook till water reduces to 1/3.

7. Turn to high heat. Keep stir frying until sauce becomes very condensed.
