Chocolate Chip & Peanut Cookies

Ingredients:

unsalted butter 1/2 cup

white sugar 3/4 cup (if you want the color to be darker, you can also replace half with brown sugar)

egg 1

vanilla 1 tsp

flour  1 & 1/4  cup

baking soda 1/2 tsp

salt 1 pinch

chocolate chips  1 & 1/2 cup

grate peanut 1 cup (I bought from supermarket, already chopped and toasted)

 

  1. Cream butter with sugar till light.
  2. Beat in egg.
  3. Add in vanilla. Give it a good stir.
  4. Sieve in flour, baking soda and salt. Combine till just blended.
  5. Add in chocolate chips and peanut. Stir well.
  6. Scoop 1 tbsp dough and make a dough ball. Place them on the tray. And put into fridge for about 40 mins.
  7. Preheat oven to 180 Degree C, and bake for 12-15mins. Just keep an eye on the oven. When the edge of cookie turns golden, that’s the sign of being done.

Chocolate Chip Cookies

Since the COVID-19 situation got really serious, we try to stay at home and not go out. I tried to bake the cookies I have done so many times – chocolate chip cookies!

Ingredients:

unsalted butter 1/2 cup

white sugar 1/2 cup

brown sugar 1/2 cup

egg 1

vanilla 1 tsp

flour  1 & 1/4  cup

baking soda 1/2 tsp

salt 1 pinch

chocolate chips  1 & 1/2 cup

walnut 1 cup (chopped and toasted. You can preheat oven to 150 degree C, and toast for about 10-15 mins. Just take them out when you can smell the aroma.)

 

  1. Cream butter with sugar (whit and brown) till light.
  2. Beat in egg.
  3. Add in vanilla. Give it a good stir.
  4. Sieve in flour, baking soda and salt. Combine till just blended.
  5. Add in chocolate chips and walnut. Stir well.
  6. Place dough in the fridge for about 30 mins.
  7. Scoop 1 tbsp dough and make a dough ball. Place them on the tray. And put into fridge for about 40 mins.
  8. Preheat oven to 180 Degree C, and bake for 12-15mins. Just keep an eye on the oven. When the edge of cookie turns golden, that’s the sign of being done.

Chewy Oatmeal Cookies

Ingredients:

1 cup butter

1 cup white sugar

1 cup packed brown sugar

2 eggs

1 tsp vanilla

2 cups flour

1 tsp baking soda

1 pinch salt

1 ½ tsp ground cinnamon

3 cups quick cooking oats

chocolate chips 1/2 cup

chopped walnut 1/2 cup

1. In a big bowl, cream butter together white sugar, and brown sugar.

2. Beat in eggs one at a time, then stir in vanilla.

3. In another bowl, combine all the dry ingredients: flour, cinnamon, baking soda, oats, and salt.

4. Add dry ingredients into the creamed butter mixture.

5. Fold in chocolate chips and nuts.

6. It’s better to chill the dough in the fridge for about 1 hour before baking.

7. Preheat the oven to 190 degrees C.

8. Roll the dough into small balls, and place 2 inches apart on cookie sheets.

9. Bake for 10-12 mins or till the edge becomes golden brown color.

Chewy Chocolate Cookies

Ingredients:

Flour 2/3 cup

baking powder 1/2 tsp

salt 1/2 tsp

chocolate  220g

butter 4 tbsp

eggs 2

light brown sugar 3/4 cup

vanilla 1 tsp

chocolate chunks 300g

 

  1. Preheat oven to 180 Degree C.
  2. Melt chocolate with butter in microwave. Cool down.
  3. Mix dry ingredients (flour, baking powder and salt) in a bowl.
  4. Beat eggs with brown sugar and vanilla in a large bowl.
  5. Add dry ingredients into the egg sugar mixture. Stir well.
  6. Add in chocolate butter mixture. Mix well.
  7. Fold in Chocolate chunks.
  8. Drop 1 tbsp batter onto the baking pan. Into the oven for about 12-15 mins.

Fudge Chocolate Brownie

Ingredients:

Chocolate 200g

butter 120g

white sugar 1cup

brown sugar 1/2 cup

eggs 3

vanilla 1 tsp

flour 1/2 cup

cocoa powder 1/4 cup

salt 1/4 tsp

 

Preheat oven to 180 Degree C

  1. Place chocolate and butter in a big bowl. Heat over hot water till chocolate and butter melts. Put aside and cool down.
  2. Mix white sugar and brown sugar in another bowl. Beat in egg. One each a time. Add in the next one after mix well. Add in vanilla after eggs.
  3. Combine chocolate butter mixture with sugar egg mixture.
  4. Sieve in flour, cocoa powder and salt. Combine well.
  5. Pour the batter into a baking pan.
  6. Into the oven for 30 mins.

Very nice brownie. My husband loves them.

Walnut Cake with Chocolate Glaze

Preheat oven to 180 Degree C.

Walnut 1 cup (toasted and finely chopped)

eggs 3

sugar 1/2 cup

flour 1/2 cup

baking powder 1/4 tsp

 

  1. Beat egg with sugar with  electric mixer for 6-8 mins. It will become like mayonnaise.
  2. Sieve in flour & baking powder. combine them.
  3. Fold in 1/4 walnut.
  4. Divide batter into 2 baking pans. And into the oven for 25 mins.
  5. Place cakes on rack to let them cool down.

 

Frosting:

1/4 cup butter (softened), 1 cup icing sugar, 1/2 tbsp milk.

Beat the butter with electric mixer till very light and fluffy. Add in icing sugar 1/3 each a time. Blend well. Add in milk at last. Mix everything well.

Make frosting into 2 part. Add 1/4 walnut into one of them.

Syrup: 1/2 cup warm water, 2 Tbsp sugar, 1 1/2 maple syrup. Mix well.

 

Place one cake upside down. Brush it with syrup. Spread the frosting (with walnut) onto it. Then put the other cake upside down over it. Brush it with syrup too. Spread the other frosting over the top and side of the cake. Sprinkle the rest chopped walnut over the side of the cake.

Chocolate glaze:

3 Tbsp milk, 30g chocolate. Heat in microwave till chocolate melts. Cool down to room temperature.

Pour the chocolate over the top.

Garnish with walnut at last.

The cake is super. It is a bit complicated as I did the frosting and glazing this time, which I never did before. That’s why I think this cake is a bit complicated. And you have a lot of washing to do after that. 🙂

Both my husband and I love the cake. 🙂

Double Chocolate Cookies

Ingredients:

butter 110g

chocolate 120g

vanilla 1 tsp

eggs 2

sugar 220g

flour 125g

cocoa powder 60g

baking soda 1/2 tsp

salt 1 pinch

Chocolate chunks 200g

 

Preheat oven to 165 Degree C

  1. Melt chocolate and better over low heat till completely melted and mixed together.
  2. Remove melted butter from heat and cool down.
  3. Add in vanilla.
  4. Beat eggs and sugar in a bowl till light and fluffy.
  5. Add egg & sugar mixture into melted chocolate.
  6. Mix all dry ingredients (flour, baking soda, cocoa powder, and salt) in another bowl.
  7. Add dry ingredients into melted chocolate and make it into batter.
  8. Fold in chocolate chunks.
  9. Drop 1 tbsp batter onto the baking tray.
  10. Into the oven for about 13 mins.

 

 

Crunchy outside but chewy inside.

Today, my student suddenly cancelled his lesson, so I have another day off. I decided to make some chocolate cookies.

butter 1/2 cup (I only have salted butter in the fridge. You can use unsalted butter too. Just remember to add in 1/2 tsp salt in the dough)

vanilla 1 tsp

flour  1 & 1/4  cup

baking soda 1/2 tsp

chocolate chips  1 & 1/2 cup

Recipe: Chocolate Pound Cake

I always ask my husband about which pic to choose as featured image of blog. He gives me his opinion usually from a very different perspective.

He chose this picture for this blog. And his reason is that this picture look like it’s snowing.

I was like: WHAT???

Anyway, I still followed his advice.

If you always do baking at home and search baking recipes on YouTube. I bet you know Stephanie Jaworski from Joy Of Baking. She gives so many great recipes and demonstrations, which are very easy and hardly to fail. I really like her videos. And I tried some of her recipes, they turned out really great.

I followed her instructions about this Chocolate pound cake, except I reduced sugar and I didn’t do the glaze at the end.

If you don’t have time for video, I can show you the steps:

Preheat oven to 180 degree C.

1. Dissolve 25g cocoa powder in 60 ml very hot boiling water. Set aside to cool down.

2. Prepare dry ingredients: 180g flour, 1 tsp baking powder, 1/2 tsp salt. Mix them well.

3. Cream 225g butter with 200g white sugar (in video, she says 250g. I reduced sugar to keep it less sweet) till light. Add in 1 tsp vanilla extract. And 4 eggs one by one.

4. Add in cocoa water mixture. Stir well.

5. Add in 1/2 dry ingredients and 2 tablespoon milk. Mix well. Then add the rest dry ingredients.

6. Patter in baking pan. Bake for about 60 mins.

When it’s 50mins, I checked with toothpick, it didn’t come out very clean, so I baked for another 10 mins. I didn’t make the glaze and just dust icing sugar instead. Yeah, that’s why my husband related it to snowing.

See? Stephanie’s instruction is always simple and clear to catch up with.

My husband loves the cake.

Chocolate Banana Cupcake

I got this recipe from

Ingredients:

1 cup flour

3/4 cup sugar

1/3 cup cocoa powder

3/4 tsp baking soda

3/4 tsp baking powder

1/4 tsp salt

2 small mashed bananas

1 egg

1/2 cup water

1/4 cup canola oil

1/4 cup milk

3/4 tsp vanilla

1. Preheat oven to 180 degree C.

2. Mix all the dry ingredients (flour, sugar, cocoa powder, baking soda, baking powder, salt) in a big bowl.

3. In another bowl, mash 2 small bananas with a fork. It’s ok if there’s still lumps. Beat in 1 egg. Stir well.

4. Pour in water, canola oil, milk and vanilla. Mix well.

5. Pour wet ingredients mixture into dry ingredients. Mix well.

6. Pour batter into muffin pan. Bake for 20 mins. Test with a toothpick. If toothpick comes out clean, then they are done.

Super moist and soft. Banana lumps turn to be creamy in the middle.
