Persimmon Pancake

Autumn is persimmon season, yet I haven’t tried persimmon before. Last Sunday when my husband and I were shopping in a Chinese supermarket, we found persimmons on the shelf. My husband was also very curious about them. So we bought 1 box of persimmons.

Persimmons taste very sweet but also with a bit astringent. So I was thinking maybe I could use them to make something sweet but at the same time to reduce the astringent taste.

1, Choose soft persimmons. As a Chinese saying goes “挑软柿子捏” which means to pick the soft persimmons as they are rotten and sweeter. But now in Chinese soft persimmon means someone who is a pushover.

2, Put persimmons in a bowl, pour hot water over them. This is to make the peeling process easier.

3, Remove the stem and peel and put persimmons in blender to blend them into paste.

4, In a big bowl, add in persimmon paste. Stir evenly.

5, Add in flour. Keep stirring while adding flour until it can be kneaded into a dough. I actually add in some sticky rice flour, so the ratio is close to sticky rice flour: plain flour= 1:3. No water is needed. I didn’t add in any sugar either, cos the persimmons are sweet enough. As I was going to use red bean paste as the filling, so I didn’t want my pancakes to be too sweet.

6, Let the dough rest for 20 mins. And then divide it into small doughs. My small doughs are about 60-70g, and the red bean paste filling for each one is about 40g.

7, Make dough flat and put the filling in the center. Wrap it up and roll into round shape. Press gentlely.

8, Heat a pan, brush it with oil. Fry the flat dough till both sides turn golden brown.

Tapioca Kueh (木薯糕)

I was very curious about tapioca, cos I have never met this vegetable? in my hometown. And am also very curious about this tapioca cake.

Ingredients:

tapioca 1 kg (I bought 1 pack from supermarket, already peeled)

Tapioca flour 4 tbsp

salt 1 pinch

sugar 200g

eggs 2

coconut milk 400 ml

 

1, Cut tapioca into long strips and remove the hard core in the center.

2, Grate them into shreds.

3, Put all tapioca shreds into a very big bowl.

4, Stir in sugar and salt. Mix well.

5, Beat in eggs, completely combine them together.

6, Add in coconut milk and stir evenly.

7, Preheat oven to 200 degree C

8, Pour all the tapioca batter into a baking tray.

9, Into the oven and bake for 1 hour, or till the surface becomes golden brown.

10, Let it cool down and cut into squares.

Coconut Cake

Ingredients:

unsalted butter 100g

sugar 100g

eggs 2

vanilla oil 1/2 tsp

flour 100g

baking powder 1/2 tsp

coconut flakes 40g

milk 20ml

1, Preheat oven to 180 degree C.

2, Cream butter with sugar till light.

3, Beat in eggs, one after another. Mix well before adding the next one.

4, Blend in vanilla oil.

5, Add in flour and baking soda. Blend till just combine.

6, Fold in coconut flakes and add in milk. Mix well.

7, Pour the batter into the greased baking pan.

8, Spread some coconut flakes over the top.

9, Into the oven and bake for 30- 35 mins.

Remember to check with toothpick.

Sweet Potato Cake Coconut Cake / Kueh

1, Boil 300g sweet potato till fully cooked.

2, Remove the peel and cut into small pieces.

3, Add them into blender with 200ml coconut milk. Blend till smooth.

4, Add paste into a bowl. Add in 2/3 cup tapioca flour, 1/2 cup corn flour, 100 ml water and 1 pinch salt. Whisk well.

5, Boil 300ml water with 1/2 cup sugar till sugar fully dissolved.

6, Add sugar water into the paste. Stir well.

7, Grease cake pan with oil. Pour paste into the pan. Steam over hot water for 15 mins.

8, In a bowl, mix 200g grated coconut with 1 pinch salt. Steam for 5 mins.

9, Cut steamed cake into smaller pieces and roll in coconut flakes.

Min Chiang Kueh (Apam Pancakes/ 面煎粿/曼煎糕)

Ingredients:

Flour 1 cup

Baking soda 1/2 tsp

Instant Yeast 1/2 tsp

Sugar 2 tablespoon

Egg 1

Water 3/4 cup

Mix all the above ingredients in a bowl. Then cover with plastic wrap and let it rest for 30-40 mins.

For the filling:

Pan-toasted white sesame 1/4 cup

ground peanut 1/2 cup

Sugar 20g

Mix them well in another bowl.

1, Heat a pan on stove. Grease it with oil. Scoop batter into the pan. tilt pan to spread the batter. Keep low heat. Cover the lid for 3-4 mins.

2, Sprinkle   ground peanut & sesame filling in it.

3, Cover the lid for another 2-3 mins.

4, Use a spatula to fold the pancake from one side to the other and press lightly.

I also made one with red bean paste filling.

Kueh Dadar

I’m so obsessed with Malay dessert recently. Today I tried to make Kueh Dadar.

Ingredients:

pandan leaves 40g

water 100ml

flour 100g

coconut milk 250ml

oil 1/2 tbsp

salt

egg 1

gula malaka 100g

coconut flakes (grated coconut) 250g

water 1 1/2 tbsp

Padan leaves knot

1, Cut pandan leaves into small pieces. Put them into blender with water. Blend till smooth.

2, Strain them to get pandan water 100ml.

3, In a big bowl, add in flour, pandan water, coconut milk, egg, oil  and 1 pinch salt. Whisk till the batter becomes smooth. Set aside for later use.

4, In a pan, add in gula malaka (finely chopped), coconut flakes, 1/4 tsp salt and 1 1/2 tbsp water, Also add in a pandan knot. Stir fry with low heat till they are fully mixed and turns brown color and moist.

5, Heat a pan, Brush it with oil. Use a ladle to scoop some batter and pour into the pan. Tilt the pan to spread the batter evenly.

6, Cook till the bottom side of crepe is done. and flip over to cook the other side for several more seconds.

7, Put the crepe on a plate. Add some coconut filling at one side. Wrap it by 3 sides and roll it to the other end.

Taste very nice!

Simple Yogurt Cake

Because all the ingredients I used are for 2 cakes. So please halve the ingredients if you only need to bake 1 cake.

Ingredients:

plain flour 330g

ground almond 60g

baking soda 2 tsp

baking powder 1 tsp

eggs 3 large ones

yogurt 360g

sugar 350g

vanilla 1 tsp

canola oil  1 cup

Preheat Oven to 180 Degree C.

1, Mix all the dry ingredients (flour, ground almond, baking soda, baking powder) in a big bowl.

2,In another bowl, beat in eggs. Whisk well.

3, Add in yogurt, mix well.

4,Add in sugar, oil and vanilla. Stir well before adding the new ingredient.

5, Add batter into the pan.

6, Into the oven for 40 mins. Remember to check with toothpick.

 

Simple Banana Cake

Ingredients:

unsalted butter   80g

Granulated sugar  80g

Egg                     1

vanilla                      1/4 tsp

Flour        100g

Baking powder    3g

ripe banana                 2

 

  1. Preheat oven to 175 degree C.
  2. Cream butter and sugar in a bowl till light.
  3. Mash bananas in another bowl.
  4. Beat egg into the butter mixture, Mix well.
  5. Add in vanilla, mashed banana and mix.
  6. Add in flour and baking powder, fold till just combined.
  7. Pour paste into baking pan.
  8. Into the oven and bake for 40-45mins. Check with toothpick.

Banana Cake

Ingredients

3 large ripe banana

2 eggs

50g butter

1 cup flour

1/2 cup sugar

1 tsp baking soda

1/2 tsp salt

1 tsp baking powder

1 tsp vanilla extract

 

Preheat oven to 180 degree C.

  1. Mash bananas in a big bowl.
  2. Beat in eggs one by one.
  3. Stir in vanilla.
  4. In another bowl, combine all the dry ingredients: flour, sugar, baking soda, baking powder, salt.
  5. Add dry ingredients into banana mixture. Mix well.
  6. Beat in softened butter. Mix well.
  7. Grease baking pan with butter. Pour batter into baking pan.
  8. Into the oven and bake for 30-40 mins. Test with tooth pick to see whether it comes out clean.
