Oatmeal Bar

When I made an adventurous journey in my kitchen searching for cookies, I found a pack of rolled oats. Then I remembered I bought it to make chocolate chip cookies. Now there is still 1/3 left.

When I explored the fridge for any ready-to-eat food, I found some black currant jam left in the bottle. My husband bought it long time ago to spread on his bread. I checked the expiry date, still safe to eat. So I decided to make this oatmeal bar to consume both oats and black currant jam.

Ingredients:

2 cups of oats

80g butter

70g flour

70g brown sugar

1/2 tsp salt

1/2 tsp baking soda

1. Place oats, sugar, flour, salt and baking soda in a big bowl. Mix them well.

2. Cut in butter. Make all ingredients into crumbs with ginger. This may take a little while.

3. Preheat oven to 180 degree C.

4. Press 2/3 crumbs into the baking pan very firmly.

5. Spread jam over it. Apart from jam, you can also choose peanut butter or Nutella.

6. Sprinkle the rest crumbs on top.

In to the oven, bake for 30-35 mins till golden brown.

Cool down and cut into squares.

You can put them in an airtight box and save for breakfast.

You can also add in chopped nuts. And reduced oats. And I cut down brown sugar so mine oatmeal bars are not very sweet. If you really like it to be more sweet, you can add more sugar.

Lemon Pie

Crust:

Flour 140g

Sugar 40g

Butter 120g

Mix butter into flour & sugar till it clings together. Press into pan. Use a fork poke several times on it. Bake in the oven with 180 degree C for 20 mins till lightly brown.

Filling:

Egg 2 

White sugar 150g

Lemon juice 40ml

Flour 20g

Baking soda 1/4 tsp

1/4 lemon zest

Beat together eggs with sugar and lemon juice. Add in flour, baking powder and lemon zest. Mix well. Then pour filling over cooled crust.

Bake for 25mins with 180 degree C.

After it is done and cooled, sprinkle icing sugar.

Chocolate Oat Square

I changed it a bit.

Ingredients:

Butter 80g

Brown sugar 120g

Egg 1

Vanilla 1/4 tsp

Oats 1 cup

Flour 100 g

Salt 1/4 tsp

Baking soda 1/4 tsp

Filling:

1/3 can sweetened condensed milk, around 100g

Chocolate chips 1 cup

Butter 1 tsp

Salt 1/4 tsp

Chopped walnuts 1/3 cup

Vanilla 1/4 tsp
1. Cream brown butter and  brown sugar till light and fluffy.

2. Beat in egg and vanilla.

3. Combine oats, flour, salt, and baking soda. Stir into butter mixture.

4. Press 2/3 batter into pan as base.

Filling part:

1. In a saucepan, melt butter, chocolate, with sweetened milk and salt. Stir evenly.

2. Turn off the stove. Stir in walnuts and vanilla.

3. Spread filling over the Oat base in the baking pan.

4. Sprinkle the rest 1/3 Oat batter over the filling.

5. Preheat oven to 180 degree C and bake for 25mins.

Blueberry Oat Squares

Here is the recipe I used to bake:

Ingredients:

1 cup oats

70g flour

120g brown sugar

1/4 tsp salt

1/4 tsp baking soda

80g butter

Filling: blueberry 125 g, sugar 70g, 40ml lemon juice, 2 tsp cornstarch.

First, make filling:

Boil blueberries, sugar and lemon juice in a pot. Simmer till tender about 10 mins. Add in cornstarch, stir till thickened about 1 min. Remove from heat and cool.

Oat part:

In a large bowl, mix oats, flour, brown sugar, salt, and baking soda. Cut in butter and form crumbs.

Spread 1/2 crumbs into pan as base. Then spread blueberry filling. The rest crumbs as top.

Preheat oven to 180 degree C. Bake for around 40mins until lightly golden.

Cut it into squares after cooled.
