Easy Version of Red Braised Pork Belly

This is the recipe I have tried so many times and never failed.

1, Put pork belly (around 500g) in a pot, add in enough cold water covers pork.

2, Also add in 1 tbsp cooking wine, 3 or 4 ginger slices. Bring to boil with high heat. Then turn to low heat and boil for 15 mins.

3, Rinse pork belly in water and wipe it with kitchen towl.

4, Cut into small pieces, like thumb size or a little bit bigger.

5, Heat a pan, Spray oil.

6, Fry pork belly pieces with low or medium heat till golden brown.

7, Put pork belly into pressure cooker, along with ginger slices, 1 bay leaf, 2 star anise, 2 tbsp light soy sauce, 1 tbsp dark soy sauce, and 1/2 1 tbsp sugar. Add in hot water to cover all the ingredients. (Light soy sauce, dark soy sauce and sugar are essential. You can just leave the rest ingredients if you don’t have.)

8, Cook in pressure cooker for 20 mins.

9, Transfer everything into a pan. Reduce the sauce with high heat.

This red braised pork belly is literally rice killer, cos it’s a perfect match with rice.

Braised Pork Totter

1, Heat a pan. Add in 1 tbsp oil.

2, Fry pork trotter till slightly brownish.

3, Add in enough hot water to cover all the pork trotters.

4, Add in ginger slices, garlic cloves, 2 tsp whiter pepper powder, 1/3 cup light soy sauce, 2 tbsp dark soy sauce, and rock sugar.

5, Bring to boil with high heat. And simmer with low heat for 20 mins.

6, Skim the broth and remove the scum.

7, Transfer everything to pressure cooker and cook under pressure cooking mode for 30 mins.

8, Heat a pan with some oil in. Stir fry chopped garlic till aromatic. Add in chopped pickled cabbage and stir fry till dry and fragrant.

9, Serve pork trotter with pickled cabbage.

Pork Ribs & Lotus Root Soup

Ever since we moved to our new house, I have started cooking with gas stove instead of induction, which means I can finally use clay pot.

I really like to make soup with clay pot. I was not a soup person as in my hometown, soup is not included in our food culture. But my husband really likes soup, all kinds of soup. I guess I got influenced by him gradually.

Lotus root is a good choice to make soup and it’s very easy.

1, Soak pork ribs in water for 20-30 mins.

2, Put ribs into clay pot, Add in enough water. Bring to boil and skim the broth.

3, Add in lotus root pieces, black beans (soaked before cooking), red dates, and some peanuts (half crushed).

4, Put the lid on and simmer with low heat for 40 mins.

5, Add in wolf berries and salt and simmer for another 3 mins.

Red dates make the soup taste sweet.

Black Vinegar Pork Trotter 猪脚醋

1, Prepare pork trotter (cut into smaller pieces), around 200g ginger, black sweet vinegar 750 ml, gula malaka (or white sugar) 200g, cooking wine 2 tbsp, Sesame oil 1 1/2 tbsp, boiled eggs.

2, Put pork trotter into a pot, add in enough water that can cover all the pork trotter. Also add in ginger slices (around 20g) and cooking wine.

3, Bring to boil with high heat and keep boiling for 15 mins.

4, Rinse pork trotter with water and drain.

5, Heat a pan, add in sesame oil. Put in the some ginger slices and stir fry till aromatic.

6, Add in pork trotter pieces. Stir fry till slightly golden brown.

7, Put all the pork totter and the rest ginger into pressure cooker. Pour in black vinegar and add in gula malaka/ sugar.

8, Set cooking time 40 mins.

9, Transfer everything into pot, add in hard-boil eggs (shell-removed). Boil for another 10-15 mins.

10, You can add in more sugar to make it less sour according to your preference.

Will taste better if keep them in the fridge overnight.

Sweet and Sour Pork Chop

1, Season pork chop with salt and black pepper.

2, Dust pork chop with potato starch. A thin starch layer is enough.

3, Heat a pan, add in oil. Fry pork chop till both sides turn golden brown. And put them aside.

4, Use the same pan, add in a bit extra oil. Fry chopped garlic till aromatic.

5, Add in sweet and sour sauce, I used Lee Kum Kee sweet and sour sauce and 1/4 cup water. Stir evenly.

6, Put pork chop back in the pan. Simmer with low heat for 5 mins. Flip once or two times while cooking.

And ready to serve.

Homemade Char Siew

This is a very simple recipe to make Char Siew pork at home, and you don’t even need to use oven.

1, Put a piece of pork shoulder butt into a big bowl.

2, Make marinade: 2 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp cooking wine, 2 tsp ground five spice, 1 tbsp sugar, slices of 1 onion, ginger slices, and a pinch salt.

3, Pour all the marinade into the bowl and fully mix with pork. Let it marinate for at least 1 hour.

4, Heat a pot. Add in 1/2 marinade, pork and pour into enough water covers pork. Bing to boil and simmer for about 40 mins or till pork is fully cooked.

5, Heat a frying pan. Add cooked pork in. Fry each sides till a bit burnt to get the black char.

6, Pour the rest marinade in and reduce the sauce.

7, Cut the pork into slices, and drizzle with the thick sauce.

My husband loves it.

Ribs, Lotus root, Black Beans and Red Dates Soup

Pressure cooker really makes my cooking easier, especially in making soup.

  1. Put all the ribs in a deep pot. Add in enough water. Bring to boil and cook for about 5 mins.
  2. Take all the ribs out and rinse under water to wash off all the dirt.
  3. Put ribs, lotus root chunks, black beans, red dates into pressure cooker.
  4. Pour in enough water covers all ingredients.
  5. Press soup button.
  6. Just 20 mins, the soup is done.
  7. Season with salt.

Very nice soup.

Braised Pork with Water Bamboo Shoot

I don’t know the exact English name for this vegetable, cause it said water bamboo choot on the package. In Chinese, we call it 茭白 (jiao bai). And its texture is very similar to normal bamboo shoot.

1, Cut pork into cubes. Peel water bamboo shoot and also cut into chunks.

2, Heat a pan. Add in oil, sear the pork till slightly golden brown.

3, Add in water bamboo shoot, stir fry evenly for 2-3 mins.

4, Add in 2 tsp light soy sauce, 1 tsp dark soy sauce and 1 tsp sugar. Stir fry a bit.

5, Pour in hot water enough to cover all the ingredients. Simmer with low heat for 20 mins.

6, Reduce the sauce by high heat.

7, Garnish with chopped spring onion.

Pig Ear & Cucumber Salad

Pig ear taste very crunchy because it’s full of soft bone. In China, Many people like to make pig ear salad.

  1. Put pig ear into a pot, Add in several ginger slices, 1 tbsp cooking wine and 1 tbsp light soy sauce. Bring to boil with high heat. Then simmer with low heat for about 30 mins. Or until chopsticks can easily poke it through.
  2. Soak in cold water and drain. Let it cool down and cut into slices.
  3. Use the knife to hit the cucumber to pat it a bit flat. And cut into small chunks. Add into pig ear slices.
  4. Chop 4 cloves of garlic and a little ginger. If you want it to be spicy, you can also add in chopped chili.
  5. Heat a pan, add in 1 tbsp oil. Saute garlic and ginger till aromatic. Add in 1 tbsp light soy sauce, 1/2 tbsp oyster sauce, 1 tsp salt and 1 tsp sugar. Mix well.
  6. Pour sauce into the pig ear & cucumber. Give it a good stir.

Pork Liver Porridge

  1. Add rice and water into a pot. Bring to boil. Rice:water is 1:4.
  2. Skim the porridge and remove the foam.
  3. Transfer all rice and water into pressure cooker. (I really use pressure cooker a lot recently). Cook for 20 mins.
  4. While porridge is being cooked, prepare the pork liver.
  5. Cut liver into slices. Wash in water again and again till no more blood.
  6. Marinate pork liver with 1 tbsp cooking wine, 1/2 tbsp light soy sauce, 1 tsp salt, 1 tsp white pepper powder, 1 pinch sugar, ginger slices and 1 tbsp starch. Mix well and marinate for 15-20 mins.
  7. When porridge is down, Keep heating it. Add in pork liver. Keep stirring cos the porridge will be very thickened. Cook for 5-8 mins till pork liver is fully cooked.
  8. Season with salt.
  9. Serve with chopped spring onion.

My husband likes this type of porridge, and he likes my pork liver porridge very much.
