Ribs, Lotus root, Black Beans and Red Dates Soup

Pressure cooker really makes my cooking easier, especially in making soup.

  1. Put all the ribs in a deep pot. Add in enough water. Bring to boil and cook for about 5 mins.
  2. Take all the ribs out and rinse under water to wash off all the dirt.
  3. Put ribs, lotus root chunks, black beans, red dates into pressure cooker.
  4. Pour in enough water covers all ingredients.
  5. Press soup button.
  6. Just 20 mins, the soup is done.
  7. Season with salt.

Very nice soup.

Ribs & Potato Stew

  1. Wash ribs in water. Put all the ribs in a deep pot. Add in enough water. Bring it to boil for 3-5 mins. Take out all the ribs and rinse under water.
  2. Heat a pan with a little oil. Stir fry drained ribs till they turn a bit brownish.
  3. Add in ginger slices and green onion. Stir fry till aromatic.
  4. Drizzle in 1 tbsp cooking wine. Stir fry till ribs dry again.
  5. Prepare sauce: 1 tbsp light soy sauce, 1/2 tbsp dark soy sauce, 2 Tbsp rock sugar (you can reduce or add more sugar according to your taste). I also added in 1/2 tbsp Korean bulgogi sauce to add a bit spicy flavor to the dish. Pour sauce into the pan.
  6. Add in potato chunks. Stir fry to let the ribs & potato be coated with sauce.
  7. Pour in enough hot water can cover all the ingredients. Turn to low heat and simmer for 30-40 mins.
  8. Lid off. Turn to high heat and reduce the sauce.
  9. When sauce is about to dry, quickly stir fry evenly.
  10. Garnish with chopped spring onion.

Ribs & Seaweed Soup

My husband doesn’t like seaweed. But I think seaweed is really good for health. Yet, he doesn’t say no to seaweed soup. So I made this soup for him.

  1. Since I used dry seaweed, I soaked them in water till softened before I started cooking.
  2. In a deep pot, add in ribs and enough water. Bring to boil and skim the soup to remove all the dirt.
  3. Good soup takes long time. I put all the ribs in a slow cooker, with seaweed, corn, shiitake, red dates and some ginger slices.

Also pour in the water after boiling the ribs. Add more water if you want.

I cooked it for 2 hours. And just season with salt.

Braised Pork & Rib Soup Bento

The rule of my husband’s bento: there must be at least 1 meat dish.

This time, I tried pork.

  1. Prepare soup. Cos soup is time-consuming. I can let the soup on the stove while preparing other dishes. Wash ribs. Put them in a pot and add in enough water. Bring to boil. Skim the soup to remove all the dirt. Simmer for 30 mins. Add in carrot and corn. And simmer for another 20-30 mins.
  2. Pork belly in the pot. Enough water in and bring to boil. Take the pork belly out and wash clean. Cut into small chunks. Heat a pan. Add in a little oil. Sear the pork belly till brownish. Add in light soy sauce, dark soy sauce and sugar. Stir fry evenly. Add in enough hot water, also bay leaves and star anise. Lid on and simmer for about 20 mins. Lid off and reduce the sauce with high heat,
  3. I also cooked tofu & chicken pancake. 1/4 chicken breast (diced). 1/4 carrot (diced). Heat a pan. Add in 2 tsp oil, Stir fry chicken and carrot till chicken turns white in color. 100g silk tofu in the bowl. Mash it with a fork. Add in the fried chicken and carrot. Also add in some chopped green onion, 2 tbsp flour. Season with salt and black pepper. Mix well. Heat pan again. Brush it with oil. Scoop batter with a spoon and drop into pan to fry till both sides turn golden brown.

Pork is a perfect match with rice.

Soup is good. Corn adds sweet taste to it.

Oh, I also add in some fried bitter gourd rings. My husband finished everything.

Sweet & Sour Ribs (糖醋排骨)

  1. Wash ribs in water. Put all the ribs in a deep pot. Add in enough water. Bring it to boil for 3-5 mins. Take out all the ribs and rinse under water.
  2. Heat a pan with a little oil. Stir fry drained ribs till they turn a bit brownish.
  3. Add in ginger slices and green onion. Stir fry till aromatic.

  5. Prepare sauce: 1 1/2 tbsp light soy sauce, 1/2 tbsp dark soy sauce, 2 tbsp vinegar, 3 Tbsp rock sugar (you can reduce or add more sugar according to your taste). Pour sauce into the pan.
  6. Stir fry to let the ribs be coated with sauce.
  7. Pour in enough hot water can cover all the ingredients. Turn to low heat and simmer for 30-40 mins.
  8. Lid off. Turn to high heat and reduce the sauce.
  9. When sauce is about to dry, spread in white sesame. Quickly stir fry evenly.
  10. Garnish with chopped spring onion.

Bak Kut Teh (肉骨茶)

Bak kut teh is a very popular dish in Singapore. It’s kind of spice rib soup. The cooking method is not complicated but it’s a bit time consuming.

1. Wash 1 kg ribs in water. Then put them in a big pot. Add in enough water covers all ribs. Bring water to boil. Take the ribs out and rinse under water.

2. Wash the pot. Add in 1.5 L water. Bring to boil.

3. Add in 1 head of garlic (peeled or unpeeled is fine) and the spice bag. Because bak kut teh needs many herbs. So a spice bag is much more convenient and it can bought from supermarket.

4. Also put in all the ribs. Simmer for at least 1 hour.

5. Add in 1 tablespoon light soy sauce before serving.

My Husband’s Favorite Rib, Lotus Root & Peanut Soup Recipe

I was born and grew up in northern part of China. Actually, my family didn’t have the habit of having soup during the meal. I know that people from southern part really like soup. Soup to them is a must-have dish on the table.

My husband is a soup lover. He basically likes all kinds of soup. Influenced by him, I start to realize soup’s charm.

There is a chicken rice stall near where we live. If you order chicken rice there, a small bowl of lotus root & peanut soup will be served as well. My husband loves the chicken rice there and also their soup. He mentioned more than once how much he loves the soup with lotus root and peanut in it.

That’s why I decided to cook this soup.

1. Rinse ribs under water.

2. Place all ribs in the pot. Pour in enough water covers and even higher than the ribs.

3. Bring to boil with high heat. Skim the soup.

4. Add in several ginger slices, lotus root chunks, some peanuts. Turn to low heat. Cook for 1-2 hrs.

Nice soup takes long time unless you have pressure cooker.

Season with salt before serving.

The amazing part of the soup is that it tastes a bit sweet even without adding in any sugar.

My husband can have 2 bowls of it.

Rib Soup Again! (with Lotus Root and Black Kidney Beans)

My husband is a crazy soup lover. Chicken soup and Rib soup are two kinds which I always cook for him.

This time, I tried to make soup with black kidney beans.

1. Soak kidney beans in advance. 2-3 hrs maybe.

2. Wash ribs under water over and over again.

3. Place ribs in a pot. Add in enough water. Bring to boil with high heat. Skim all the dirt.

4. Turn to low heat. Simmer for 30 mins.

5. Add in lotus root and beans. Simmer for another 30 mins.

6. Seasons with salt.

Steamed Ribs with Vermicelli

1. Rinse ribs under water to wash them clean. Soak them in water to let all the blood out. Change water several times till water is clean.

2. Marinate ribs with 2 tsp light soy sauce, 2 tsp oyster sauce, 2 cloves of chopped garlic, 1/2 tsp chopped ginger, 2 tsp sugar and 1 tablespoon corn starch. Mix them all well. Marinate for around 2 hours.

3. Soak vermicelli in water till soft. Cut shorter with scissors.

4. Take the ribs out and put into another bowl. Add in 2 tsp oil, and 1 tablespoon corn starch. Mix well again.

5. Spread vermicelli in a plate. Add in 1 tsp light soy sauce, and 1/2 tsp oyster sauce. Mix with chopsticks.

6. Place ribs over vermicelli. Pour marinade on top.

7. In boiling water and steam for 15-20 mins.

8. Garnish with chopped spring onion.

Roasted Ribs

1. Peel off the white layer on the back of the ribs. So that ribs can be better seasoned and cut.

2. Prepare the seasonings: 1 tablespoon black pepper, 1 tablespoon paprika powder, 1/2 tsp ginger powder, 4 cloves of minced garlic, 1 tablespoon sugar, 1/2 tablespoon salt. Mix them well. Then sprinkle them onto the ribs and rub with finger to help the flavor go in. Wrap the ribs with plastic to put into fridge for 2-3 hrs or overnight.

3. Wrap ribs with aluminum foil. Put into 140 degree C oven for 2 hrs.

4. Open the foil up. Turn to 200 degree C and bake for another 15 mins.

5. For the sauce: 1 tablespoon hoisin sauce (main sauce for char siew pork), 1 tablespoon tomato sauce, 1 tsp light salt sauce, 1/2 tablespoon sugar. Mix them well. And brush onto the ribs. You can use any sauce you want. There is some hoisin sauce left in my fridge, so I give it a try.

6. Into the 200 degree C oven for 15 mins.

Ready to serve.

You don’t even cut the ribs with knife. It’s very easy to pull it off by hands. Very tender and juice.

My husband can’t stop licking his fingers and keep saying delicious. 🙂
