Steamed Corn Flour Bun With Vegetables

I was intended to make steamed buns with vegetable fillings inside, called Cai Tuan Zi in Chinese. It turned out corn flour is really hard to deal with. So I changed it into my special way.

corn flour 230g

plain flour 20g

hot water 200 ml.

yeast 3 g

warm water 30g

  1. Mix corn flour and flour in a big bowl. Add in hot water while stirring. and cool down.
  2. Dissolve yeast in warm water. Add yeast water into the flour mixture. Knead into dough.
  3. Cover with plastic wrap and let it rest for 30 mins.

filling

spinach 200g

medium carrot 1

thick glass noodles (boil in water till almost cooked)

black fungus.

Add in 2 tbsp light soy sauce, 1 tbsp oyster sauce, 2 tsp salt, 2 tsp sesame oil and my special ingredient Sichuan pepper oil (fry 1 tsp sichuan pepper in 2 tbsp oil till aromatic and discard the pepper corn)

Of course, you can choose meat as filling, which I think will be easier to deal with than vegetables, since minced meat can be rolled into small balls.

Divide dough into 12 small dough balls. Press them flat and add in filling, then close up. That’s my original plan. Yet I found corn flour is less sticky and cannot be closed up. So I mix dough with vegetable filling. And divide them into smaller balls. Roll them in corn flour and that’s how I made my cai tuan zi. 🙂

steam them over boiling water for 15 mins.

They taste better than I imagined. And sure they are healthy.

Ribs & Seaweed Soup

My husband doesn’t like seaweed. But I think seaweed is really good for health. Yet, he doesn’t say no to seaweed soup. So I made this soup for him.

  1. Since I used dry seaweed, I soaked them in water till softened before I started cooking.
  2. In a deep pot, add in ribs and enough water. Bring to boil and skim the soup to remove all the dirt.
  3. Good soup takes long time. I put all the ribs in a slow cooker, with seaweed, corn, shiitake, red dates and some ginger slices.

Also pour in the water after boiling the ribs. Add more water if you want.

I cooked it for 2 hours. And just season with salt.

Braised Pork & Rib Soup Bento

The rule of my husband’s bento: there must be at least 1 meat dish.

This time, I tried pork.

  1. Prepare soup. Cos soup is time-consuming. I can let the soup on the stove while preparing other dishes. Wash ribs. Put them in a pot and add in enough water. Bring to boil. Skim the soup to remove all the dirt. Simmer for 30 mins. Add in carrot and corn. And simmer for another 20-30 mins.
  2. Pork belly in the pot. Enough water in and bring to boil. Take the pork belly out and wash clean. Cut into small chunks. Heat a pan. Add in a little oil. Sear the pork belly till brownish. Add in light soy sauce, dark soy sauce and sugar. Stir fry evenly. Add in enough hot water, also bay leaves and star anise. Lid on and simmer for about 20 mins. Lid off and reduce the sauce with high heat,
  3. I also cooked tofu & chicken pancake. 1/4 chicken breast (diced). 1/4 carrot (diced). Heat a pan. Add in 2 tsp oil, Stir fry chicken and carrot till chicken turns white in color. 100g silk tofu in the bowl. Mash it with a fork. Add in the fried chicken and carrot. Also add in some chopped green onion, 2 tbsp flour. Season with salt and black pepper. Mix well. Heat pan again. Brush it with oil. Scoop batter with a spoon and drop into pan to fry till both sides turn golden brown.

Pork is a perfect match with rice.

Soup is good. Corn adds sweet taste to it.

Oh, I also add in some fried bitter gourd rings. My husband finished everything.

Oven Roasted Vegetables

I roasted potato, cauliflower, carrot by oven before. I always wanted to try roasting different kinds of vegetables at one time. And I did it today.

  1. Preheat oven to  200 Degree C.
  2. Prepare vegetables. I chose potato, carrot, cauliflower, broccoli, onion, baby corn, mushroom and cherry tomatoes.
  3. Wash them and cut. For potato, carrot, cauliflower and broccoli, they may need longer time to be cooked. So they must be in smaller size. While onion, baby corn, mushroom and cherry tomatoes. They should be in larger size.
  4. Cover the baking try with aluminum foil. Place vegetables over it. Drizzle olive oil. Sprinkle salt and black pepper. I also spread some dried herbs. And add 2 cloves of garlic. Gently toss a bit.

Into the oven and bake for 10 mins.

Flip them over. and Lower heat to 180 Degree C. Bake for another 10-15 mins.

Very nice. You can have various kinds of vegetables at one time.

And I put them in my husband’s bento box. One thing I love about bento is that he can’t be picky about the food. If I prepare vegetable for him. He has to finish it.

Corn Soup

1. Cut all the kernels from a fresh corn.

2. Put corn in a pot. Add in 1/2 cup milk. Bring to boil then turn to low heat and simmer till corn is cooked.

3. Pour all the corn with milk into a blender. Blend till smooth.

4. Pour back to pot. Turn to low heat. Keep stirring while heating. Bring soup to boil again.

5. Season with salt and pepper.

Oven Roasted Pork Ribs

This is a slow cook recipe.

1. In a small bowl, add in 2 tsp salt, 2 tsp black pepper, 2 tsp paprika powder, 1 tsp dried thyme, 2 tsp sugar, 1 tsp ground ginger, 1 tsp ground garlic. Mix them well.

2. Sprinkle seasoning over ribs and rub ribs by hands.

3. Wrap ribs with plastic and into the refrigerator for over night.

4. Preheat oven to 150 degree C.

5. Put ribs on aluminum foil. Seal them. On the tray and into the oven. Bake for 2 hrs.

6. While ribs are baking, you can prepare for the brushing sauce. Here is the sauce I used: 1 tablespoon sweet cooking wine, 2 tablespoon tomato sauce, 1 tablespoon sugar, 1 tsp black pepper and 1 tablespoon honey. Mix them well.

7. Open the foil. Take the ribs out. Save the meat juice for topping sauce.

8. Brush ribs with brushing sauce. Into the oven for 15 mins. Then brush again and bake for another 15 mins.

9. Pour the meat juice in sauce pan. Turn to low heat. Add in 2 tsp tomato sauce and 1 tsp sugar. Slow simmer till condensed.

10. I served the ribs with boiled corns, creamy linguine and potato wedges. Pour topping sauce over ribs and corn.

The ribs are really juicy and tender. Very easily fall off from the bones. My husband loves them very very much.

Prepare a Christmas Feast with a King Crab

Yesterday when my husband and I were buying groceries in a supermarket, we noticed there was sale of king crab. Turkey is too big for us to have for Christmas, so a king crab sounds a good idea.

Today when I got up, the first thing I needed to do is to defreeze the king crab we bought. Then I disassembled it into several parts.

For the central body, I took the Shell off. Then picked the meat out. Heat a pan, melt a small piece of butter. Put the meat in. Sauté a bit. Add in 1 tablespoon flour. Quickly stir. Then add in 3-4 tablespoon milk. Stir slowly and evenly to let it reduce to white sauce. Put the crab meat white sauce into the shell. Sprinkle cheese. Put into oven ( 200 degree C, 8-10 mins) or till cheese melts.

Crab legs can be divided into three parts: thigh (fat end), middle parts and thin end parts.

For the fat thigh, I used them to cook spaghetti:

Heat a piece of butter in the pan. When melted, add in crab leg. Stir fry a bit. Then add in chopped garlic. Stir till aromatic. Pour in a little white wine. Simmer a little. Season with salt and black pepper. Add in chopped parsley and cooked spaghetti. Quickly stir evenly.

For the middle crab leg parts, I roast them with garlic butter. Put a small chunk of butter in a bowl. Add in chopped garlic, a little salt and pepper. Blend well. Cut half the shell off ( or even less). Then spread garlic butter onto meat. Put into oven. 180 degree C and 20 mins.

For the thin ends, I cut them into smaller pieces. Marinate with a little cooking wine and corn starch. Heat a little olive oil in the pan. Put the crab leg pieces in. Stir fry for 2-3 mins. Add in chopped ginger and spring onion. Quickly stir fry. Add in a little cooking wine, light soy sauce and oyster sauce. Quickly blend evenly and serve hot.

For the claws, I used them to cook light soup. Put crab claws, corn pieces, Chinese yam, mushroom, ginger shreds and spring onion pieces into a pot. Pour in 1 1/2 bowls of water. Turn to high heat. When water boils, put in salmon slices. Turn to middle heat and cook for 3 mins. Add in 1 tsp sweet cooking wine and salt. Cook for another minute.

And that’s it. Our Christmas feast made by a king crab.

Mixed Vegetable Chicken Soup

1. Pour in enough water in a deep pot.

2. Put in chicken. I used several chicken drumsticks.

3. Turn to high heat. When the water boils, turn to low heat. And slow cook for half an hour.

4. Add in corn & carrot chunks. Cook for another half an hour.

5. Add in snow peas and boil for another 3 mins.


6. Sprinkle some salt and serve hot.
