Double Beef Burger

I made burgers before, but this time I tried burger bun with my white bread recipe:

This one batch can make 4 buns.

For the beef patties,I used 300g ground beef. Actually I suggest you double the batch. Because I found this 300g ground beef can only make 4 patties. Since we are making double beef burger, so the beef needs to upsize.

1, To add flavor to the beef patties,  I chopped 4 cloves of garlic and added in. Actually the best way to mix beef and garlic is to chop them together. That’s what I learned from making dumpling fillings.

2, And also don’t forget to season beef with salt and pepper.

3, Divide ground beef into 4 portions. Make them into beef ball.

4, Heat a skillet, add in 1 tbsp oil. When oil is hot, Add beef ball in.

5, Use spatula to press beef balls into flat disc. Let it fry till the down side turns beautifully golden brown. And flip over to fry the other side.

6, After flipping, Place 1 piece cheese on each patty. Fry till cheese melts and bubbling.

7, Cut bun into halves, Brush it with sauce you like, Place beef patty on it. And top with another one.

8, I also saute some chopped onion with butter and salt. Place them over the beef.

9, And just put on the other half bun.

My husband is a big fan. 🙂

Easy Hotdogs

Main ingredients are bread, sausage, butter, and mayonnaise.

Just because the other day I bought 1 pack of bread, and later I forgot about it. So I tried this way to consume them.

  1. Boil sausage (mine are the frozen type bought from supermarket) in hot water for about 10 mins.
  2. Cut bread into halves, but not cut them through completely.
  3. Spread butter over the cut side.
  4. Pan fry bread with the butter side down till slightly golden brown.
  5. Also fry the sausage a bit with the same pan.
  6. Place sausage in between the breads.
  7. Add in the sauce you like. I chose mayonnaise.

It’s very simple. my husband like them.

Sausage Bread

Ingredients:

1 cup lukewarm water

1/8 cup sugar

1 tablespoon active dry yeast

3/4 tsp salt

1 1/4 tablespoons oil

2 cups flour (roughly)

Sausage some

  1. Pour warm water into a big bowl. Add in sugar and dry yeast. Let it rest for 10 mins and wait it foams up.
  2. Add in oil, salt. Stir a bit.
  3. Add in flour, 1 cup first. Stir a bit. Then add in the other cup flour.
  4. Stir into a dough.
  5. Sprinkle some flour over the board. Knead the dough on it. Keep kneading till it’s not that sticky.
  6. Brush a bowl with some oil. Put dough inside. Cover with plastic wrap and towel.
  7. Let it rise till twice big.
  8. Boil the sausage in hot water for about 8 mins.
  9. Take the dough out. Roll it into oval shape. Divide it into 12 pieces.
  10. You can make it into the shape you like. Can roll it around the sausage or just press the sausage onto the dough.
  11. Cover again with plastic wrap and towel. Let them rise again till 1.5 or 2 times big.
  12. You can also sprinkle chopped green onion and mayonnaise on the bread.
  13. 190 degree C, about 20-25 mins.

Super Easy Homemade Soft White Bread

I found this incredible homemade white bread recipe on YouTube. It doesn’t require a bread machine, nor much kneading. Every step is super easy. But the bread came out is amazing. I cannot believe the procedure is so simple, and bread is as good and soft as the ones bought from bakery shop.

I followed the recipe and the steps.

Ingredients:

This is how my bread looks when I took it out the oven.

Let it cool down and cut into slices.

I didn’t expect it came out that good and soft.

I will definitely make it again. And will probably only use this recipe when I want to make white bread at home.

Small Honey Buns

When I was in high school, this honey bun was very popular. I remember that we needed to start our morning lesson at about 6:30 AM. We studied for about 1 hr by ourselves. Then at 7 AM, we had 1 hour to rest and have breakfast. Actually 1 hour isn’t enough for most of the students to finish their breakfast before 8 AM, since there were so many lining in the school canteen. So to save more time, some students chose to buy bread in the store instead, which is very convenient. My friends and I usually bought this honey buns. The best part is the crispy honey and sesame bottom layer.

Ingredients:

bread flour 200g

sugar 25g

egg 1

honey 10g

vegetable oil 10g

yeast 2 g

milk 70g

salt 1 pinch

  1. Add yeast into warm milk. Stir a bit and let it rest for 2 mins.
  2. Beat egg into a big bowl. Add in sugar, honey, oil and salt. Mix well.
  3. Add flour into the egg honey mixture.
  4. Add in milk while stirring the flour.
  5. Knead everything into a dough. Keep kneading for about 20 mins.
  6. Put dough in a warm place. Let it rise 2 times big.
  7. Knead the dough and press the sir out. Cut it into 8 smaller dough balls.
  8. Cover the dough balls with plastic and let them rest for 5 mins.
  9. Flatten dough into oval shape. Roll from one end to another.
  10. Cut in the middle.
  11. In a small bowl, mix 1/2 tbsp flour, 1/2 tbsp sugar and 1/2 tbsp white sesame. Prepare a little water in another bowl.
  12. Dip the roll into the water first. then the white sesame with the cut side down.
  13. Brush baking pan with oil. Arrange them into the baking pan.
  14. Let them rise again till about 1.5 times big.
  15. preheat oven to 180 Degree C.
  16. bake for 15 mins.
  17. In a bowl, add in 1 tbsp water and 1 tsp honey.
  18. Brush honey water onto them. and bake for another 5 mins.

Look at my ugly buns.  🙂

The crispy white sesame bottom is exactly what I want.

Walnut Banana Bread

Banana is one of my husband’s favorite fruit. But sometimes, He forgot to eat them, and banana got ripe very quickly. So I would use them to make smoothie or cake or bread.

This summer when we went back to my hometown, we brought so many walnut back. My mom just cracked them and store the shell-removed walnut in 2 large containers. My husband likes walnut, so he adds some in his yogurt. Yet, we still have a lot. So I tried to bake something with walnut and banana.

Ingredients:

Bananas 2

butter 1/2 cup

white sugar 1 cup

eggs 2

vanilla 1/2 tsp

flour 1 cup

baking soda 1 tsp

salt 1/2 tsp

cinnamon powder 1/2 tsp

chopped & toasted walnut 1 cup

 

  1. Preheat oven to 170 Degree C.
  2. Cream butter and sugar together till light and fluffy.
  3. Add in 2 beaten eggs and vanilla. Stir well.
  4. Add in mashed bananas. Mix them together.
  5. Sieve in all the dry ingredients: flour, baking soda, salt and cinnamon powder. Mix till combined.
  6. Butter spray the loaf pan. Dust it with flour.
  7. Pour all the batter into the pan.
  8. Into the oven for 50-60 mins. Check with a toothpick. If it comes out clean then it’s done.

Let it cool down for a little while.

Cut it and you will find it’s very moistened and firm.

Full of walnut and banana flavor. Very nice!

Flat Garlic Bread

1. Dissolve 1 tsp yeast and 1 tsp sugar in 1/4 cup warm water. Let it ready for 5 mins.

2. Mix 1 cup flour, 1 pinch salt, 1/2 tsp dried oregano, 1 tsp butter and 3 cloves chopped garlic in a bowl.

3. Add yeast water into flour mixture. Mix all ingredients and knead into a dough. Brush a little oil onto the dough.

4. Let the dough rise till 2 times big.

5. In a small bowl, mix 1/4 cup melted butter, 3 cloves garlic, 2 tablespoon chopped coriander.

6. Divide dough into 2 or even more smaller dough balls and flatten them into thin disc.

7. Brush butter garlic mixture onto the dough very generously.

8. Into 180 degree C oven and bake for 10-15 mins.

Roti John

It’s like a egg meat sandwich.

Ingredients:

Minced chicken 100g (season with salt and pepper)

Bun (I chose hotdog buns, you can choose baguette or any other bread you like)

Eggs 2

Chili sauce 1/2 tablespoon

Butter

Salt

Black pepper

Slices of 1/2 onion

1. Cut 2 hotdog buns into halves, don’t cut through.

2. Heat a pan. Add in a little butter. When melted, place buns in with cut side down to fry a bit.

3. Heat pan again. Add in a little extra butter. When melted, sauté onion till transparent. Add in minced chicken. Stir fry till chicken gets white.

4. Beat 2 eggs in a bowl, add in 1/2 tablespoon chili sauce and a little salt to taste.

5. Pour egg into the pan to mix with chicken and onion.

6. Place 1 bun with cut side down onto the egg. Turn to low heat. Tuck the egg under the bread. When egg is cooked, take the bun out with the help of spatula.

7. Put 2 slices of cheese onto the egg & meat filling. Then place the other bread on the top also with the cut side down.

8. Heat the pan. Melt a little better. Put the bread sandwich in. Fry each side till crispy or golden brown.

Cut into small pieces and serve hot.

Pork Floss & Spring Onion Bun

I made pork floss the other day, and the idea of making pork floss & spring onion bun came to me. I don’t have much experience of making bread. So I search on YouTube and found this video:

Ingredients for bread

salt 2g

sugar 10g

yeast 4g

egg 1

butter 20g

bread flour 230g

water 100g

  1. dissolve yeast in warm water and rest for 10 mins.
  2. Mix all dry ingredients.
  3. Combine all ingredients above except butter till it become a dough.
  4.  Cut butter into the dough. Two options: bread machine or by your hands. I knead the dough by my hands. I was kneading it and watching a TV drama at the same time. The whole kneading process last for 1 and a half episode.
  5. Place the dough in a bowl, cover with plastic warp and let it rise till 2 times big.
  6. Flatter it into a disc. Put it into a 27×27 baking pan.
  7. Place the baking pan into oven, with a big bowl of hot water underneath. Let the dough rise again till 2 times big.
  8. Preheat oven to 180 degree c.
  9. Brush dough with egg. Sprinkle white sesame and spring onion (green part).
  10. Into the oven and bake for 12 mins.
  11. Cut bread into squares or whatever shape you like.
  12. Take two pieces of them. Brush the back with mayonnaise. Sprinkle a little pork floss. Stick them together. Then brush the edges with mayonnaise, dip in pork floss.

I was very generous with pork floss and used all the pork floss I made before. I have to admit that my bread is not so soft as the ones sold in bakery shop. My husband still like them though.

Prepare a Christmas Feast with a King Crab

Yesterday when my husband and I were buying groceries in a supermarket, we noticed there was sale of king crab. Turkey is too big for us to have for Christmas, so a king crab sounds a good idea.

Today when I got up, the first thing I needed to do is to defreeze the king crab we bought. Then I disassembled it into several parts.

For the central body, I took the Shell off. Then picked the meat out. Heat a pan, melt a small piece of butter. Put the meat in. Sauté a bit. Add in 1 tablespoon flour. Quickly stir. Then add in 3-4 tablespoon milk. Stir slowly and evenly to let it reduce to white sauce. Put the crab meat white sauce into the shell. Sprinkle cheese. Put into oven ( 200 degree C, 8-10 mins) or till cheese melts.

Crab legs can be divided into three parts: thigh (fat end), middle parts and thin end parts.

For the fat thigh, I used them to cook spaghetti:

Heat a piece of butter in the pan. When melted, add in crab leg. Stir fry a bit. Then add in chopped garlic. Stir till aromatic. Pour in a little white wine. Simmer a little. Season with salt and black pepper. Add in chopped parsley and cooked spaghetti. Quickly stir evenly.

For the middle crab leg parts, I roast them with garlic butter. Put a small chunk of butter in a bowl. Add in chopped garlic, a little salt and pepper. Blend well. Cut half the shell off ( or even less). Then spread garlic butter onto meat. Put into oven. 180 degree C and 20 mins.

For the thin ends, I cut them into smaller pieces. Marinate with a little cooking wine and corn starch. Heat a little olive oil in the pan. Put the crab leg pieces in. Stir fry for 2-3 mins. Add in chopped ginger and spring onion. Quickly stir fry. Add in a little cooking wine, light soy sauce and oyster sauce. Quickly blend evenly and serve hot.

For the claws, I used them to cook light soup. Put crab claws, corn pieces, Chinese yam, mushroom, ginger shreds and spring onion pieces into a pot. Pour in 1 1/2 bowls of water. Turn to high heat. When water boils, put in salmon slices. Turn to middle heat and cook for 3 mins. Add in 1 tsp sweet cooking wine and salt. Cook for another minute.

And that’s it. Our Christmas feast made by a king crab.
