Pandan Chicken

Today is my resting day. I was planning to make some dessert. That’s why I bought some fresh pandan leaves from supermarket. Yet, I checked my kitchen, there was 1 ingredient missing. So I decides to make pandan chicken instead.

1, To prepare marinade. 4 cloves of garlic, 3 red shallot, 1 small chunk ginger, 2 tbsp fish sauce, 1 tbsp oyster sauce, 1 tbsp sesame oil, 1 tbsp sugar and 1 tbsp coconut milk. Put all of them into blender and blend into paste.

2, Prepare chicken. I use chicken legs. So I need to remove the bone first. You can just use boneless chicken leg or chicken breast. So the chicken is about 400 g. Cut them into smaller pieces. Similar to size of my half palm or even smaller. Because later they will be fried. If the chicken pieces are too big, it will be easily for them to get burnt while the inside still remains uncooked.

3, Put all the chicken into a big bowl. Add in marinade. Marinate for 2 hours.

4, Wash pandan leaves. Make them a knot and put the chicken inside the knot. Just make sure chicken stays inside the pandan leaves. You can pin it with toothpick if you want.

5, Deep fry them in oil with low medium heat, till the chicken turns beautifully golden brown color. Pandan leaves will also be crispy. And your kitchen will smell incredible. 🙂

Lime Chicken Salad

Ingredients:

chicken leg 3 about 700g

Small lime 10

chopped green chili 4 (you can use red chili too)

chopped garlic 4 cloves

light soy sauce 1/2 1 tbsp

sugar 1 tsp

salt 1/2 tsp

ice cold water

1, Put chicken into a pot, add in enough water. Bring to boil with high heat. Skim the soup and remove all the dirt. Turn to low heat and simmer for 40 mins.

2, Soak cooked chicken leg into ice cold water to let them cool down.

3, Squeeze 5 limes to get the juice and cut the rest 5 into slices.

4, Tear chicken leg with hand, remove the bone and tear chicken meat into small chunks.

5, heat a pan, add in 2 tsp oil. Saute chopped garlic and chili till aromatic.

6, add in light soy sauce, sugar and salt. When sugar is fully dissolved, off the heat and cool down.

7, Add lime juice into the sauce, mix well.

8, In a big bowl, add in chicken meat, sauce mixture and lime slices. Mix well.

Very refreshing for hot weather. My husband loves it.

Cordyceps & Chicken Leg Soup

Ingredients:

1 big whole chicken leg

cordyceps 50g

red dates 3 (seed removed)

logan meat 1 tbsp

goji berries 1tbsp

  1. Put chicken leg into a pot. Add in enough water. Bring to boil with high heat.
  2. Skim the soup and remove all the dirt.
  3. Add in cordyceps, red dates and longan meat. Slow cook with low heat for 40 mins.
  4. Add in goji berries and cook for another 5 mins.
  5. Season with salt.

Super nice soup.

Chicken and Mushroom Stew

This is a typical dish of Northern China cuisine. 2 secret ingredients are dried mushroom and sweet potato glass noodles.

I brought them here from my hometown when last time I went back.

This type of sweet potato glass noodles need to be soaked in water for hours to get softened. Also wash mushroom many times and soak them before cooking.

  1. In a pot, add in chicken cutlet. And pour in enough water. Bring to boil and keep boiling for 5 mins.
  2. Rinse chicken in water and remove all the dirt.
  3. Heat a pan, Add in 2 tsp oil. Fry chicken till slightly golden brown.
  4. Add in ginger slices, green onion slices and dried chili. Stir fry till aromatic.
  5. Add in other spices: star anise, bay leaf, and cinnamon. Stir fry till aromatic.
  6. Drizzle in 1 tbsp light soy sauce, 1/2 tbsp dark soy sauce and also add in 1/2 tbsp sugar.
  7. Add in enough hot water covers all ingredient.
  8. Spread glass noodles over the top. (because my glass noodles really need a long time to be fully cooked). Lid on and simmer with low heat for 15 mins.
  9. Add in mushroom. Simmer for another 20 mins.

Stir occasionally and reduce the sauce with high heat.

Crispy Fried Chicken Wings

  1. Cut chicken wings 2 times on both sides.
  2. Sprinkle salt, black pepper, paprika powder, ground ginger and ground garlic (or garlic paste) over chicken wings. Mix by hands evenly and let them marinate for 2-3 hours.
  3. In a bowl, add in flour and starch, ration should be flour: starch = 5:1. Also add salt, black pepper to taste. To add more flavor to the chicken, I add in mixed herbs. You can just add in the herbs you like.
  4. Prepare a bowl of water.
  5. Roll chicken wing in the flour mixture first. Then dip in water quickly and roll in flour mixture again. Shake off the excessive.
  6. Heat oil. Test the temperate with chopsticks. If there are many bubbles around the chopsticks, the oil’s temperature is ok.
  7. Deep fry chicken wings till the flour shell is very hard. Then turn up the heat a bit. Fry chicken wings for the second time to get gold brown color and also to make them crispier.

Soy Sauce Chicken Wings

This is one of my husband’s favorite dishes.

Ingredients:

chicken wings joint 6-8

cooking wine 1 tsp

light soy sauce  1 tbsp

dark soy sauce 2 tsp

sugar 1/2 tbsp  (you can reduce according to your taste)

ginger slice 2 or 3

water

  1. Mix light soy sauce, dark soy sauce, sugar and cooking wine in a bowl.
  2. Add chicken wings in and marinate for 2 hours.
  3. Heat a pan, add in a little oil. Fry chicken wings till both sides turn golden brown.
  4. Pour in marinade, Stir fry a bit to let them fully mixed.
  5. Pour in enough water just covers all the chicken.
  6. Bring to boil with high heat. Then turn to low heat and simmer for 20-25 mins with lid on.
  7. lid off and turn up the heat to reduce the sauce.

Cooking for Charlie

I tried to cook rice and chicken before for my dog Charlie.

After that, I tried some other ways to make home cooked food for my Charlie.

  1. Canned  food & rice.

It’s pretty simple. You can just mix dog canned food with cooked rice. Dog canned food can be easily bought from supermarket, and there’re so many choices to make. No matter chicken, beef or lamb.

Charlie loved it.

2. Salmon macaroni

I chop salmon (no skin) and carrot into very tiny pieces. Put them in a pot with macaroni and some green peas. Add in macaroni and enough water. Cook them according to the instruction on macaroni’s package, usually 8-10 mins. You can cook longer to make sure everything is fully cooked.

First time for Charlie to try salmon. He was so excited and keep licking his mouth before I served this meal to him.

After he finished his meal, he still kept licking his bowl all around the house. 🙂

Black Pepper Sauced Chicken Leg

  1. Prepare a big chicken leg.
  2. Sprinkle salt and black pepper all over it.
  3. Preheat oven to 170 Degree C.
  4. Into the oven for 40 mins.
  5. In a small bowl, mix 1 tbsp black pepper sauce, 1/2 tbsp honey, 1 tbsp water and 1 tbsp sugar.
  6. Brush sauce onto the chicken.
  7. Turn oven to 200 Degree C. Bake for 5-8 mins.
  8. Then brush the sauce again, and bake for the last 5-8 mins.

Super easy.

Creamy Mushroom Sauce Chicken Breast

  1. Prepare 2 chicken breasts. Sprinkle salt and black pepper over both side.
  2. Heat a pan. Drop in 3 tbsp butter.
  3. When butter melts, add chicken breast in. Fry for about 3 mins or till golden brown color. Then flip over and fry the other side till golden brown.
  4. Turn to low heat. Cover the lid. about 3 mins for each side.
  5. Use a spoon to scoop butter and pour over the chicken for several times.
  6. Set chicken in a plate.

  1. Use the same pan to fry mushroom with the rest butter.
  2. Deglaze with 1/2 cup red wine. Boil for a while to let the alcohol evaporate.
  3. Add in 200g cream, and blend well.
  4. Add the chicken back into the pan. Simmer with low heat to reduce the sauce.
  5. A little mixed herbs will add more flavor.

 

Chicken Masala (Butter Chicken)

It’s a famous dish in Indian cuisine. For the chicken, I used a half chicken. I removed the skin and bones before cutting it. Of course you can choose chicken thighs or chicken breast.

  1. Place chicken pieces in a bowl. Add in 1 tsp salt, 1 tsp paprika powder, 1 tsp garam masala, 1 tsp turmeric powder, 2 tsp garlic paste and 1 tsp chopped ginger. If you want it to be a little spicy, you can also add in spicy chili powder. Marinate for 15 mins.
  2. Saute marinate chicken in pan. Heat a pan. add in 1 tbsp oil. Put the chicken pieces in. Saute till chicken turn golden brown. Take the chicken out.
  3. Same pan. Add in 2 tsp extra oil. Add in 1/2 cup chopped onion. stir fry a bit.
  4. Cut in 1 tbsp butter. Sautee onion till aromatic.
  5. Add in 2 cups chopped tomato. Stir fry evenly with onion.
  6. Pour in 1 cup water. Season with salt, garam masala, paprika powder and sugar.
  7. Simmer with low heat for 15 mins.
  8. Transfer everything in pan into the blender. Blend till it becomes smooth paste.
  9. Pour the paste back into the pan. If the gravy is not thickened enough, turn to low heat and reduce it.
  10. Add the chicken in. Cut in 1 tbsp butter and add in 1 tbsp cream. Stir well. Simmer for another 10 mins.
  11. drizzle cream before serving.

It can be served with rice or prata or naan. Very nice. My husband finished the whole big plate of this chicken masala.
