Pig Ear & Cucumber Salad

Pig ear taste very crunchy because it’s full of soft bone. In China, Many people like to make pig ear salad.

  1. Put pig ear into a pot, Add in several ginger slices, 1 tbsp cooking wine and 1 tbsp light soy sauce. Bring to boil with high heat. Then simmer with low heat for about 30 mins. Or until chopsticks can easily poke it through.
  2. Soak in cold water and drain. Let it cool down and cut into slices.
  3. Use the knife to hit the cucumber to pat it a bit flat. And cut into small chunks. Add into pig ear slices.
  4. Chop 4 cloves of garlic and a little ginger. If you want it to be spicy, you can also add in chopped chili.
  5. Heat a pan, add in 1 tbsp oil. Saute garlic and ginger till aromatic. Add in 1 tbsp light soy sauce, 1/2 tbsp oyster sauce, 1 tsp salt and 1 tsp sugar. Mix well.
  6. Pour sauce into the pig ear & cucumber. Give it a good stir.

Beef Tripe & Black Fungus Salad

1, Boil a pot of water. Put in beef tripe for 1 min. Take them out and soak in cold water and drain.

2, Soak black fungus in water for about 3 mins. Remove the stem and tear into small pieces. Blanch black fungus in hot water for 3 mins. Soak in cold water and drain.

3, Put beef tribe and black fungus in a big bowl.

4, In a small bowl, add in 1 tbsp light soy sauce, 2 tsp oyster sauce, 1 tsp sugar and 1 pinch salt. Mix well.

5, Pour sauce into beef tribe and black fungus.

6, Sprinkle chopped garlic and spring onion over them. You can also add chili if you want it to be spicy.

7, Heat 2 tbsp oil in the pan till smoke hot.

8, Pour hot oil over garlic and spring onion.

Lime Chicken Salad

Ingredients:

chicken leg 3 about 700g

Small lime 10

chopped green chili 4 (you can use red chili too)

chopped garlic 4 cloves

light soy sauce 1/2 1 tbsp

sugar 1 tsp

salt 1/2 tsp

ice cold water

1, Put chicken into a pot, add in enough water. Bring to boil with high heat. Skim the soup and remove all the dirt. Turn to low heat and simmer for 40 mins.

2, Soak cooked chicken leg into ice cold water to let them cool down.

3, Squeeze 5 limes to get the juice and cut the rest 5 into slices.

4, Tear chicken leg with hand, remove the bone and tear chicken meat into small chunks.

5, heat a pan, add in 2 tsp oil. Saute chopped garlic and chili till aromatic.

6, add in light soy sauce, sugar and salt. When sugar is fully dissolved, off the heat and cool down.

7, Add lime juice into the sauce, mix well.

8, In a big bowl, add in chicken meat, sauce mixture and lime slices. Mix well.

Very refreshing for hot weather. My husband loves it.

Lady Finger (Okra) & Tofu Salad

This is a very simple appetizer.

Ingredients:

Okra 2 stalk

silk tofu 1 small pack 100g

sweet cooking wine 1 tsp

light soy sauce 1 tsp

salt

water

oil

  1. Boil some water. Drizzle in 2 drops oil and 1/2 tsp salt. Boil okra for 4 mins.
  2. Cut okra into slices.
  3. Place silk tofu in a plate. Okra over tofu.
  4. Mix light soy sauce, sweet cooking wine and 1/4 tsp salt in a small bowl.
  5. Pour sauce over okra and tofu.

Very easy to make and refreshing for hot weather.

Spinach & Vermicelli Salad

1. Wash spinach. Remove the root and cut into halves.

2. Boil a pot of water. Add in 1 tsp water. Boil spinach for 1 min. Then dish them out. Set aside. Drain and cool down.

3. Boil another pot of water. Boil vermicelli according to the instruction or till cooked. Drain them.

4. Squeeze spinach to let all the water out. Put them in a big bowl along with drained vermicelli.

5. Season with sugar and salt.

6. Heat a sauce pan. Add in 2 tablespoon oil. Sauté a little chopped garlic and dried chili. When the oil is smoke hot, pour hot oil onto spinach. (Or you can place chopped garlic and chilli on the top of spinach. Pour the hot oil over them.)

7. Mix well and serve.

Spinach Salad

1. Clean spinach and cut into halves.

2. Boil enough water in a pot. Also add in 1/2 tsp salt.

3. Boil spinach for 1 min. Then take them out. Rinse in the cold water and drain.

4. Squeeze spinach by hand to squeeze the water out.

5. Place spinach in the big bowl. Add in 1/2 salt, 1/2 tsp light soy sauce, 1/2 vinegar. Mix well with spinach.

6. Put a little minced garlic, minced ginger and white sesame over the top. If you want it to be spicy, you can also add a little dried chili on it.


7. Heat a pan on stove. Add in 2 tsp oil. Heat it till very hot.

8. Pour hot oil over garlic, ginger & sesame mixture. Then mix them with spinach by chopsticks.


Very simple & yummy Chinese style salad.

A Quick Dish – Penne Salad

1. Get penne cooked first.

2. Chop a cucumber into thin slices.

3. Half boiled egg: Put egg and cold water in a pot. Don’t put the lid on. Heat the pot until many big bubbles appear at the bottom. Then turn off the stove and remove the pot. Cover the pot with lid for two minutes. Then take the egg out and put it into cold water.

4. Mix the penne with cucumber slices, half boiled egg, and salad cream.

The penne salad is done.
