Beef Pasta

1, cut beef into small cubes, or you can just use beef cubes.

2, heat a pan, drizzle in oil. Fry beef till slightly golden brown.

3, add in chopped garlic and stir fry till aromatic.

4, add in 1 1/2 tbsp light soy sauce, 1/2 tbsp dark soy sauce, 2 tbsp sugar, 1 tbsp tomato sauce, bayleaves, salt, black pepper and pour into stock covers all ingredients.

5, into high pressure cooker for 15 mins. (cook the pasta at the same time).

6, heat the pan. Cut in 2 tbsp butter. When butter melts, add in 1 1/2 tbsp flour. Quickly mix them.

7, Pour the beef stock into the pan, stir gently. Bring to boil.

8, Add in beef cubes and reduce the sauce.

9, Add in pasta. Season with salt and herbs. Mix everything together and let pasta fully absorb the flavour of beef stock.

Scrambled Egg with Beef (滑蛋牛肉)

1, prepare ingredients: beef slices 200g, eggs 4, light soy sauce 2 tsp, oyster sauce 1/2 1 tsp, sugar 2 tsp, water 1 tbsp, corn starch 2 tsp, 1 spring onion (chopped).

2, put beef slices in a bowl, add in light soy sauce, sugar, oyster sauce, water. Keep stirring or mixing them by hand. And let beef marinate for 5 mins.

3, add in starch, mix well and let beef rest for another 10 mins.

4, heat a pan. Add in 1-2 tbsp oil.

5, when oil is hot, add in beef slices. Quickly separate beef slices by specula. Stir fry evenly till no more pink color showed in beef.

6, beat eggs in a bowl. Season with 1/2 tap salt. Stir well.

7, pour egg into the pan.

8, push egg and beef gently to the center of the pan till egg turns almost solidified.

9, garnish with chopped spring onion and ready to serve.

Beef Hor Fun

1,cut beef (200g) into slices. marinate with 1/4 tsp baking soda, 1 tsp oil, 1 tsp light soy sauce, 1 tbsp oyster sauce, 1/2 tsp black pepper powder, 1 tbsp corn flour and 3 tbsp water.

2, prepare vegetables: 2 stalk spring onion into about 5 cm piece, Cai Sim 100g (separate the leaf and stem), a small onion into slices, wash bean sprout about 150g and drain.

3, heat a pan, add in 2 tbsp oil. Add in beef. Stir fry with medium high heat and stir fry till no pinkish. Set aside for later use.

4, use the same pan to stir fry hor fun. Add in 2 tbsp light soy sauce, 1 tbsp vinegar, and 2 tsp dark soy sauce. Stir fry evenly and hor fun will become dark in color.

5, heat the pan again, add in a little bit more oil. Stir fry ginger slices and 3 chopped garlic till aromatic.

6, add in onion, and cai sim stems. Stir fry for 1 min.

7, Sprinkle 1/2 tsp salt. Add in cai sim leaves. Stir fry evenly for another minute.

8, add in beef. stir fry evenly.

9, Add in 1 tsp dark soy sauce, and bean sprouts. Stir fry for 2 mins.

10, add in hor fun. Stir fry evenly for 2-3 mins. Sprinkle spring onion and stir fry a bit.

Beef Tripe & Black Fungus Salad

1, Boil a pot of water. Put in beef tripe for 1 min. Take them out and soak in cold water and drain.

2, Soak black fungus in water for about 3 mins. Remove the stem and tear into small pieces. Blanch black fungus in hot water for 3 mins. Soak in cold water and drain.

3, Put beef tribe and black fungus in a big bowl.

4, In a small bowl, add in 1 tbsp light soy sauce, 2 tsp oyster sauce, 1 tsp sugar and 1 pinch salt. Mix well.

5, Pour sauce into beef tribe and black fungus.

6, Sprinkle chopped garlic and spring onion over them. You can also add chili if you want it to be spicy.

7, Heat 2 tbsp oil in the pan till smoke hot.

8, Pour hot oil over garlic and spring onion.

Double Beef Burger

I made burgers before, but this time I tried burger bun with my white bread recipe:

This one batch can make 4 buns.

For the beef patties,I used 300g ground beef. Actually I suggest you double the batch. Because I found this 300g ground beef can only make 4 patties. Since we are making double beef burger, so the beef needs to upsize.

1, To add flavor to the beef patties,  I chopped 4 cloves of garlic and added in. Actually the best way to mix beef and garlic is to chop them together. That’s what I learned from making dumpling fillings.

2, And also don’t forget to season beef with salt and pepper.

3, Divide ground beef into 4 portions. Make them into beef ball.

4, Heat a skillet, add in 1 tbsp oil. When oil is hot, Add beef ball in.

5, Use spatula to press beef balls into flat disc. Let it fry till the down side turns beautifully golden brown. And flip over to fry the other side.

6, After flipping, Place 1 piece cheese on each patty. Fry till cheese melts and bubbling.

7, Cut bun into halves, Brush it with sauce you like, Place beef patty on it. And top with another one.

8, I also saute some chopped onion with butter and salt. Place them over the beef.

9, And just put on the other half bun.

Beef & Celery Stir-fry

This local celery is the very thin type. So I also cut beef into shreds.

1, marinate beef with a little light soy sauce and corn starch.

2, Heat a pan, add in 2 tsp oil. Turn to medium high heat.

3, Drop in the beef shreds and quickly stir fry till no more pinkish.

4, Take beef out and set aside for later use.

5, Add in a little extra oil, sautee 2 cloves chopped garlic till aromatic.

6, Add in chopped celery. Stir fry for 2 mins.

7, Put beef back into the pan. Drizzle in 1/2 tsp light soy sauce.

8, Stir fry evenly.

9, Season with salt and pepper.

Cooking for Charlie

I tried to cook rice and chicken before for my dog Charlie.

After that, I tried some other ways to make home cooked food for my Charlie.

  1. Canned  food & rice.

It’s pretty simple. You can just mix dog canned food with cooked rice. Dog canned food can be easily bought from supermarket, and there’re so many choices to make. No matter chicken, beef or lamb.

Charlie loved it.

2. Salmon macaroni

I chop salmon (no skin) and carrot into very tiny pieces. Put them in a pot with macaroni and some green peas. Add in macaroni and enough water. Cook them according to the instruction on macaroni’s package, usually 8-10 mins. You can cook longer to make sure everything is fully cooked.

First time for Charlie to try salmon. He was so excited and keep licking his mouth before I served this meal to him.

After he finished his meal, he still kept licking his bowl all around the house. 🙂

Beef Bourguignon

I finally tried this recipe. I still remember there is a scene in the movie Julie & Julia. Julie went to buy beef for this dish. She said ” Beef Bourguignon. Julia Child’s beef bourguignon.”

  1. Cut beef into chunks and set aside.
  2. Cut 3 strips bacon. Boil them and drain. Saute in the pan with 1 tbsp oil till a bit brownish. Set bacon aside.
  3. Same pan. Use the bacon fat to saute beef. Wipe beef with kitchen towel and make sure they are very dry before putting into the pan. Saute each side nicely golden brown. Then set beef aside.

  1. Prepare 1 white onion, and 2 carrots. Saute in the same pan till brownish on the edge.
  2. Preheat oven to 220 Degree C. If you have casserole, place beef in it. Season fried beef with salt and black pepper. Sprinkle in 1 tbsp flour. Give it a good mix.
  3. Beef into the oven for 5 mins. Then toss a bit and into the oven for another 5 mins.
  4. Heat the pan used to fry beef. Pour in 2 cups red wine. Stir a bit and bring to boil.
  5. Transfer everything into the casserole, including beef, bacon, sauteed vegetables, and 2 cups beef stock. Also add in 1 tbsp tomato paste, 2 bayleaves, 1 tbs thyme, 2 clove garlic paste.
  6. If you have a casserole, just put everything in it. And into the 160 Degree C oven for 2.5-3 hrs. But I don’t have one. I use my pressure cooker and slow cook in low temperate.
  7. Prepare sauteed mushroom. Cut mushroom into quarters. Heat a pan. Cut in 2 tbsp butter. When butter in hot, add mushroom in. Toss and stir fry for 3 mins. Season with salt and pepper. Also sprinkle a little thyme. Juice will come out. Simmer in low heat for 5 mins. Julia Child used pearl white onion too, which I could’t find in the supermarket. So I neglected that step.
  8. When beef is done, sieve it to separate the sauce and rest ingredients. Simmer sauce in sauce pan to thicken it.
  9. Serve the beef with hot mashed potato. Don’t forget to add in sauteed mushroom and drizzle the sauce.

Beef Rendang (Spicy Dry Beef Curry)

My husband bought a pressure cooker as an early birthday gift for me. I couldn’t wait to try it and cook something.

The first dish came to my mind is beef rendang. It is like a type of dry curry and very popular in Southeastern Asia. My husband was very excited and couldn’t wait to try my beef rendang. Actually I have never tried this dish before. So I did a little research online and figured out the recipe and ingredients I need for the dish. This morning, I grab a bite and went to supermarket. I already listed out the ingredients I need. I searched for them according to the list.

These are almost all the ingredients, salt, oil and sugar are not shown in the picture.

  1. Put shallot, red chili, ginger, blue ginger (galangal), and garlic into a blender. Blend them into paste. This is the most complicated part during cooking. After paste is ready, the rest will be much easier.
  2. Heat a pan. Add in 1 tbsp oil. Drop all the paste in. Also add in 1/2 tsp turmeric powder, 1/2 tsp clove powder and 1 tsp salt. Stir fry till the paste turns brownish.
  3. Add in all the beef pieces. I cut it into one-bite size. stir fry till beef turns golden brown.
  4. Pour in 1 cup coconut milk, and 1 cup water. Stir a bit.
  5. Add in star anise, cinnamon  stick, cardamom pods, lemon grass, a little tamarind paste and 1 tbsp sugar. Stir well.
  6. Transfer everything into pressure cooker. I pressed the meat button and it just cooked 15 mins. Beef turns very soft.
  7. Because I added water in, so after pressure cooker, I used normal pot to reduce the sauce on low heat. Stir occasionally.
  8. Add in some lime leaves to add more flavor. And reduce the sauce to very dry.

My husband said it tastes like the one served in restaurant. 🙂

And he finished the whole plate of it. 🙂

Perfect to go with rice.

Ox Tail & White Radish Soup

It’s a dish that I have wanted to try for a long time. It’s a time-consuming soup, which requires 5 hours. But I guarantee you its cooking method is simple and the soup is very nice.

  1. Prepare the ox tail. Wash them in water to rinse off the blood.
  2. Put all the ox tail into a deep pot. Add in enough water covers the tail.
  3. Turn to high heat. Bring it to boil. Take all the oxtail out. Wash in water again. To remove all the dirt.
  4. Place all the oxtail into the pot again. This time, add in much more water, cos we need to cook it for hours.
  5. High heat first, skim the soup to remove all the dirt. Turn to low heat and simmer for 2 hours.
  6. After 2 hours, skim the soup again to remove the fat.
  7. Lid on and simmer for another 1 hour.
  8. Prepare white radish and cut into chunks. Put all the radish into the soup. Simmer for another 1 hour. Radish will absorb the flavor.
  9. Season with salt and black pepper.

After 4 hours cooking, the meat can easily fall off the bone. Very soft and juicy.

Sprinkle some green onion to garnish.
