Black Pepper Sauced Chicken

1, Cut chicken at the chest middle bone. My chicken is about 800g.

2, Spread salt over both sides of the chicken.

3, Put chicken on the baking pan with skin side up. Put into the oven and turn to 170 degree C. Roast for 50mins.

4, Prepare sauce: 2 tbsp black pepper sauce, 1 tbsp tomato sauce, 1 tbsp sugar, 1 tbsp honey and 1 tbsp water.

5, Brush the chicken skin with sauce. Turn to 200 degree C. Roast for 10 mins.

6, Brush sauce again and roast for another 10 mins.

Very simple and yummy.

Oven Roasted Cauliflower

This is the first time for me to try to roast cauliflower by oven. Surprisingly it tastes very nice. And it’s very easy to cook too.

  1. Cut cauliflower (about 1/4 head of a big one) into small chunks. Or you can just tear it by hand like I do.
  2. Put cauliflower pieces into a big bowl.
  3. Drizzle in 1/2 1 tbsp olive oil. For the seasonings, I added 1/2 tsp salt, 1/2 tsp black pepper, 1/2 tsp paprika powder, 1/2 tsp turmeric powder, and 1/4 tsp ginger powder. If you want cauliflower to taste spicy, you can also add in chili powder.
  4. Toss and mix well.
  5. Spread cauliflower on baking tray. Preheat oven to 200 Degree C. Into the oven for 30-40 mins. Or till the edge turns a bit brown. Flip them a bit in the middle while baking.

Very simple and also yum.

I tear it into very small pieces. If yours is bigger, you can adjust the temperature higher maybe to 220 degree C, or roast a bit longer in the oven,

Oven Roasted Brussel Sprouts

This is the first time for me to cook brussel sprouts. They do look like baby cabbage. But the taste is different.

And this recipe is super easy and simple. I assume it’s healthy too.

  1. Wash brussel sprouts under water. And drain them.
  2. Trim off the bottom and cut into halves.
  3. Put them all in a bowl. Sprinkle olive oil, salt and black pepper. Toss a bit.
  4. Place them on baking pan with the cut side down.
  5. Into the oven. 180 Degree C, 30 mins.

Outside layer is super crunchy like seaweed with a bit bitter taste.

Inside part tastes a bit sweet.

Oven Roasted Fish

1. Cut fish 2 or 3 times on both sides.

2. Put fish into a big bowl, add in 2 tablespoon cooking wine and several ginger slices. Marinate for half an hour.

3. Wipe fish dry with kitchen towel.

4. Sprinkle salt and white pepper over fish.

5. Heat 2-3 tablespoon oil in the pan. Add in 3 tablespoon chopped garlic, 1/2 tablespoon chopped ginger, and 1 tablespoon chopped dried chili. Fry with low heat till aromatic.

6. Add in 1 tablespoon Pixian soy bean sauce. Stir fry till aromatic.

7. Add in 1/2 tablespoon sugar. Stir evenly.

8. Place vegetables you like in the baking pan. I chose enoki mushroom, celery and onion.

9. Place fish over vegetables. Pour the sauce over fish and vegetables.

Into the preheated oven (180 degree C) and bake for 15 mins. Flip the fish over and bake for another 15 mins.

Not-so-spicy Spicy Chicken Thighs

I was trying to make some spicy roasted chicken. But they turned out not so spicy. So I came up with that funny name. 🙂

1. Place chicken thighs in a big bowl. I only used two since it’s only for me and my husband.

2. Then I added 2 tablespoon chili powder, 1 tablespoon five spice powder, 1 tsp salt, 1 tsp black pepper, 1 tablespoon paprika powder, and 1 tsp ginger powder. I thought chicken would be spicy enough. And I marinated them for like 3 hours.

3. Preheat oven to 200 degree C. In the oven for 25 mins. Chicken skin will become very tightened and dry.

4. I was worried chicken would be too spicy for my husband. So I mix 1 tablespoon honey and 1 tablespoon tomato sauce ( my plan was chili sauce) and brush it onto the chicken. Roast for another 5 mins.

Should’ve be spicy but turned out not.

Still my husband loved them. Flavor really goes in and very tasty.

Honey Roasted Chicken Leg

蜜汁烤鸡腿

1. Put chicken leg or chicken drumsticks in a big bowl. Add in 1 tsp salt, 1 tsp black pepper, 1 tsp minced garlic, 1 tsp minced ginger and 1 tablespoon sweet cooking wine. Give Chicken a good massage. Let them be marinated for about 1 hour.

2. Preheat oven to 200 degree C.

3. Chicken in the oven for 20-25 mins till golden brown.

4. Prepare brushing sauce:

1 tablespoon tomato sauce, 1 tablespoon honey, 1 tsp sugar, 1 tablespoon sweet cooking wine, and 1 tsp minced garlic. Mix them well.

5. Brush sauce on and under chicken. Into the oven for 5 mins. Then brush again and roast again.

And the chicken is done. Very delicious. My husband loves it very very much.

Prepare a Christmas Feast with a King Crab

Yesterday when my husband and I were buying groceries in a supermarket, we noticed there was sale of king crab. Turkey is too big for us to have for Christmas, so a king crab sounds a good idea.

Today when I got up, the first thing I needed to do is to defreeze the king crab we bought. Then I disassembled it into several parts.

For the central body, I took the Shell off. Then picked the meat out. Heat a pan, melt a small piece of butter. Put the meat in. Sauté a bit. Add in 1 tablespoon flour. Quickly stir. Then add in 3-4 tablespoon milk. Stir slowly and evenly to let it reduce to white sauce. Put the crab meat white sauce into the shell. Sprinkle cheese. Put into oven ( 200 degree C, 8-10 mins) or till cheese melts.

Crab legs can be divided into three parts: thigh (fat end), middle parts and thin end parts.

For the fat thigh, I used them to cook spaghetti:

Heat a piece of butter in the pan. When melted, add in crab leg. Stir fry a bit. Then add in chopped garlic. Stir till aromatic. Pour in a little white wine. Simmer a little. Season with salt and black pepper. Add in chopped parsley and cooked spaghetti. Quickly stir evenly.

For the middle crab leg parts, I roast them with garlic butter. Put a small chunk of butter in a bowl. Add in chopped garlic, a little salt and pepper. Blend well. Cut half the shell off ( or even less). Then spread garlic butter onto meat. Put into oven. 180 degree C and 20 mins.

For the thin ends, I cut them into smaller pieces. Marinate with a little cooking wine and corn starch. Heat a little olive oil in the pan. Put the crab leg pieces in. Stir fry for 2-3 mins. Add in chopped ginger and spring onion. Quickly stir fry. Add in a little cooking wine, light soy sauce and oyster sauce. Quickly blend evenly and serve hot.

For the claws, I used them to cook light soup. Put crab claws, corn pieces, Chinese yam, mushroom, ginger shreds and spring onion pieces into a pot. Pour in 1 1/2 bowls of water. Turn to high heat. When water boils, put in salmon slices. Turn to middle heat and cook for 3 mins. Add in 1 tsp sweet cooking wine and salt. Cook for another minute.

And that’s it. Our Christmas feast made by a king crab.

No-failure Oven Roasted Chicken

I tried it several days ago and my husband loved it.

First, prepare marinade. In a sauce pan, add in several ginger and garlic slices. Pour in 50 ml cooking wine and 100 ml light soy sauce. Add in 3 tablespoon sugar and bay leaves. Turn on the stove and heat it till sugar melted. Then turn off the stove and set it aside.

For the chicken, here I used a half chicken. Use a toothpick to poke it several times so that marinade can work better.

Put chicken in a zip bag or a container. Pour the marinade in. Give it a good massage. Then put the lid on and put into fridge for overnight or even longer like one day or two days.

When it’s ready to cook, preheat oven to 190 degree C. Bake for 40 mins.

You can wrap the chicken wing with aluminum foil to prevent it getting burnt. ( I should’ve done that earlier).

Roasted Duck Leg

1. Clean duck leg. Then pour hot boiling water all over it. Let the duck leg be air dried.

2. In a small bowl, add in 1 tsp honey, 1 tsp vinegar and 1 tsp water. Mix well.

3. When the duck leg’s skin completely dried, brush sauce over it. Wait till dried and brush again. Repeat brushing 2 times.

4. Preheat oven to 200 degree C. When the duck leg was put into the oven. Turn to 170 degree C. Roast for 40 mins.


Let the roasted duck leg cool. Then cut into slices, which I’m not good at.


Serve with the sauce you like. I chose sweet Thai chili sauce.

Oven-Roasted Tomatoes

Preheat oven to 170 degree C.

1. Clean cherry tomatoes and cut them into halve.

2. Sprinkle salt, black pepper, olive oil, minced garlic and rosemary over tomatoes. And mix them well.

3. Place tomatoes in baking pan and then put into oven. Bake for around 30 mins.

If you want them to be drier, you can prolong the baking time.

Roasted tomatoes can be used in spaghetti or other dishes.
