Cheesy & Milky Potato

Ingredients:

Potato slices (grated in scallop shape) 3 cups

cheese 1/2 cup

milk 3/4 cup

salt 1/2 tsp

butter 2 Tbsp

black pepper 1 dash

minced garlic 1 clove

  1. Preheat oven to 220 Degree C.
  2. Boil milk while arrange potato in baking pan.
  3. Butter the baking pan first.
  4. Spread half of the potato slices in baking pan. Cut in half the butter and season with salt and garlic. Also sprinkle half the cheese.
  5. Top with the rest potato slices. Then season with the other half salt and black pepper. Cheese on the top at last.
  6. Into the oven and bake for 20-30 mins. Or till potato fully cooked and soft.

Banana Milkshake

My husband is 2 years older than me. But most time, I feel like I am the big sister when we stay together. It’s not difficult to guess what he likes and likes not. Just imagining will a kid like this or not, I will get the correct answer. I thought he would definitely like banana milkshake. Yet he told me it’s not like that. Because he had very terrible banana milkshake once and it was a nightmare.

Maybe I can make good banana milkshake that can change his opinion.

Ingredients:

1 big ripe banana

1 cup milk

1 tbsp vanilla ice cream

1 tbsp honey

1/4 tsp cinnamon powder

2 ice cubes

Put all the ingredients above into blender. And blend till very smooth.

My husband loves it. He asks if there is anymore after he finishes 1 cup.

Ginger Milk Curd

Ginger milk curd (姜撞奶 jiang zhuang nai)is a popular dessert in Guangdong area.

Ingredients:

Milk 120g

Fresh ginger juice 20g (if you don’t want it to be very strong, you can cut down a bit.)

Sugar 15g

1. Pour milk into a pot. Turn to low heat.

2. When small bubbles show up around the pot, add in sugar. Slowly stir to let sugar dissolve.

3. Turn off the heat. Set aside to cool down a bit till around 70 degree C.

4. Put ginger juice in a bowl. Quickly pour milk into ginger juice. Cover the bowl with a lid for 2 mins.

The milk ginger curd is done. The surface is already solidifried, and looks like bean curd. Very soft.

If you are a girl and you are suffering painful menstruation, you can try this dish. It will make you feel warm, especially your tummy. 🙂

Prepare a Christmas Feast with a King Crab

Yesterday when my husband and I were buying groceries in a supermarket, we noticed there was sale of king crab. Turkey is too big for us to have for Christmas, so a king crab sounds a good idea.

Today when I got up, the first thing I needed to do is to defreeze the king crab we bought. Then I disassembled it into several parts.

For the central body, I took the Shell off. Then picked the meat out. Heat a pan, melt a small piece of butter. Put the meat in. Sauté a bit. Add in 1 tablespoon flour. Quickly stir. Then add in 3-4 tablespoon milk. Stir slowly and evenly to let it reduce to white sauce. Put the crab meat white sauce into the shell. Sprinkle cheese. Put into oven ( 200 degree C, 8-10 mins) or till cheese melts.

Crab legs can be divided into three parts: thigh (fat end), middle parts and thin end parts.

For the fat thigh, I used them to cook spaghetti:

Heat a piece of butter in the pan. When melted, add in crab leg. Stir fry a bit. Then add in chopped garlic. Stir till aromatic. Pour in a little white wine. Simmer a little. Season with salt and black pepper. Add in chopped parsley and cooked spaghetti. Quickly stir evenly.

For the middle crab leg parts, I roast them with garlic butter. Put a small chunk of butter in a bowl. Add in chopped garlic, a little salt and pepper. Blend well. Cut half the shell off ( or even less). Then spread garlic butter onto meat. Put into oven. 180 degree C and 20 mins.

For the thin ends, I cut them into smaller pieces. Marinate with a little cooking wine and corn starch. Heat a little olive oil in the pan. Put the crab leg pieces in. Stir fry for 2-3 mins. Add in chopped ginger and spring onion. Quickly stir fry. Add in a little cooking wine, light soy sauce and oyster sauce. Quickly blend evenly and serve hot.

For the claws, I used them to cook light soup. Put crab claws, corn pieces, Chinese yam, mushroom, ginger shreds and spring onion pieces into a pot. Pour in 1 1/2 bowls of water. Turn to high heat. When water boils, put in salmon slices. Turn to middle heat and cook for 3 mins. Add in 1 tsp sweet cooking wine and salt. Cook for another minute.

And that’s it. Our Christmas feast made by a king crab.

Mango Sago

My husband has been asking me to make mango sago for him. Today, we just bought some fresh and sweet mangoes. So I decided to make it today.

1. Boil some water in a deep pot. Then put sago in water. Heat with high heat for around 6-7 mins till sago becomes completely transparent.

2. Soak sago in cold water, which will make them more elastic and taste better. Then drain them.

3. Cut mango into small chunks. Place them in a bowl.

4. Place sago over mango.

5. Add in 2 tsp honey. And pour in enough milk or coconut milk.

Ready to serve.


My husband loves it.

Butter Crab

1. Clean crabs and tear them into smaller pieces. I used two medium mud crabs. I also crack the claws.

2. Dust crab pieces with salt and cornstarch.

3. Heat some oil in the pan. Shallow fry the crab till about half-cooked.

4. Dish crab out. Leave a little oil in the pan. Heat again. Sauce chopped garlic, chili and curry leaves ( I didn’t have curry leaves, so I just added some chopped spring onion).

5. Put in a piece of butter into pan. After melted, put crabs back in. Stir fry for a minute or two.

6. Pour in 1/2 cup milk. Turn to high heat. When it boils, turn to medium heat. 

7. Cover the pan with lid. And simmer for 5 mins.

8. Remove lid. Stir fry for another 2 or 3 mins. Milk will reduce again.

9. Pour in one beaten egg. Quickly stir it. And milk will be dry. Stir fry a bit to let egg sauce sticky to crab.

Ready to serve.

Super Easy Basic Waffles

We bought a waffle maker yesterday. I couldn’t wait to cook some delicious waffles with it. My husband wanted Belgian waffles. So I found some recipes online and tried them. Yet, it was a big failure. Waffles I made tasted like strong baking soda flavor stuff. It’s not easy for me to quit, especially on cooking. I thought I should start with basic ones. And I found a wonder recipe online. Lucky me!

It’s super easy. No need to beat the egg white with electric mixer.

I just halved the batch.

Ingredients:

Egg 1

Milk 200g

Olive oil  1/6 cup

Flour 1 cup

Baking powder 1/2 tsp

Salt 1/4 tsp

Sugar 1 tsp

Vanilla 1/2 tsp
Preheat waffle maker first. And then prepare the batter.
1. Mix flour, baking powder, salt and sugar in a big bowl.

2. Mix egg with milk, oil and vanilla in another bowl.

3. Combine dry ingredients with wet ingredients. Don’t overmix. Stop when they just combine. It’s ok if there’s still flour bumps.

4. Pour batter over preheated waffle maker.

5. Serve with syrup and fruits you like. You can also add nuts or butter.


Cranberry Scones

ingredients:

2 cups flour

1/3 cups sugar

2 1/2 tsp baking powder

1/2 tsp salt

1/2 cup butter

2/3 cup cranberry (I used dried cranberry)

2/3 cups milk

1 tsp vanilla
1. Mix flour, sugar , baking powder and salt in a large bowl.

2. Cut in butter. And use hands to make crumbs.

3. Add in cranberries.

4. Mix vanilla and milk together. Then pour mixture into the flour crumbs till it clings together.

5. Pat dough into a round one and cut into triangle shape.


6. Preheat oven to 200 degree C. Brush scone with milk.

7. Bake for 17 mins.


They taste really good. Crunchy outside but soft inside.

Blueberry Pancake By Oven

It’s a special way to make pancake, because oven is used instead of pan.

I made some change according to the original recipe above:  

Since I don’t have any weighing machine, I am not sure the accurate weight of all the ingredients I used.

Part A: 

Flour around 80g

Sugar around 30g

Baking soda 1 tsp

Salt 1/8 tsp

Mix all of them well.

  
Part B:

Egg 1

Milk around 150g

Yogurt around 25g

Oil ( I used canola oil) around 25g

Vanilla esscence 1 tsp

Mix them well.
 

1. Pour Part B into Part A. Stir till no flour can be seen.

2.Add some blueberries. Stir again.  

3.Preheat oven with 190 degree C. Before put into the oven, spread some blueberries on the surface of batter. Bake for 45 minutes.

Blueberries will burst and the house is full of fragrance. 
 

  

You can spread some icing sugar if you want.

  


Maple syrup will make it taste better.

Pumpkin Soup


This is an easy and quick dish made of vegetables.

1. Chop pumpkin, garlic, celery, and carrot into small pieces.

2. Heat the oil in the pan. Put garlic in first.

3. Then the carrot and celery. Stir fry a little.

4. Pumpkin at last. Stir fry for around 2 minutes.

5. Then add in enough water that covers all the vegetables. Cover the pan with lid.

6. When the vegetables soften, use blender to smash them.

7. Put the smashed mixture of vegetables back into the pan. Heat it again. Because the smashed mixture is very condensed, you can add in some water.

8. Then add a little milk and salt. Keep stirring. It will be done once boiled again. After milk added in, the color will become a little lighter.

You can add a little herbs or spices you like.
And you can also make a little decoration for it. Just spread several milk drops onto the surface, and use a toothpick draw on it. Yeah, I’m not good at it. The white part I drew is not that beautiful.
The soup tastes great. The pumpkin I used is kind of sweet. Carrot and celery make it healthier.
