Easy Small Pizza

It’s very easy to make these small pizzas. And it tastes really good.

Heat some butter in the pan. Put in chopped garlic granules. Stir fry a bit. Then add in mushroom slices. Stir fry till they are done. Spread some salt, black pepper and mixed herbs. 

Put stir fried mushrooms on bread slices. And sprinkle cheese on it. Heat in microwave oven till cheese melts.

Vanilla Cupcake

Original recipe:

In a large bowl mix flour (90g), baking soda (1 tsp), salt (1/8tsp, but if you use salted butter, you can delete salt).

Cream 60g butter till creamy and smooth. Add 70g sugar, mix them till light and fluffy. Then add in 2 small eggs (one at a time) and 1/2 tsp vanilla.

Add flour mixture into butter mixture. First, 1/3 flour mixture, 15g milk. Then 1/3 flour mixture, another 15 g milk. And last add in all the rest flour mixture.

Beat till flour all mix in.

Preheat oven to 180 degree C and bake for 17-20 mins.


These cupcakes are very moist.


I also made buttery frosting according to the video. Very creamy.

Oatmeal Chocolate Chip Cookies


The first time one of my students gave me one piece of this cookie, I fell in love with it immediately. The second time she gave me another one, I couldn’t help it and asked her for the recipe. Then her auntie, a very nice lady, gave me the recipe. I still remember how excited I was that day.

I changed a bit according to the original recipe.

Ingredients:

Butter 120 g

Brown sugar 100 g

White sugar 100 g

1 egg

1/2 tsp vanilla

140g flour

1/2 tsp baking soda

1/4 tsp salt

1.5 cup oats

1/4 cup chocolate chips
1. In a large bowl, cream butter with brown sugar and white sugar. Stir smooth.

2. Beat in egg and vanilla.

3. Add in flour, baking soda, salt. Stir into creamed mixture.

4. Add in oats and chocolate chips.


5. Preheat oven to 175 degree C, bake for 10 minutes.


My husband loves them!

Quick Meal With Baguette

When I get home from work tried and hungry, I really don’t feel like cooking. Yet I don’t like eating outside so I have to figure out some quick and easy ways to solve the problem about food.

One of my hobbies is searching recipes that I think worth trying. Of course, I also keep an eye on those that can help me handle a meal within several minutes.
The other day I tried the following recipes with baguette. They turned out not bad and my husband loved them.

Mix melted butter with minced garlic and mixed herbs. Spread the mixture on the surface of baguette slices. Bake for 5 mins with 220 degree C. Easy and simple.


Baguette can also be used for sandwich. Cut a medium slice open in the middle. Add in the meat and vegetables you like. Then it’s done. You can also put in salad, or whatever you like.

This is my husband’s favorite. Put the scrambled egg on the surface of sliced baguette, and top with cheese slice. Put into the microwave oven for 1 or 2 minutes till the cheese is melted.

Fudgy Fudge Pie

I made a little change according to it:

Butter 120g

Flour 35g

Cocoa powder 30g

Sugar 150g ( I already reduced sugar based on original recipe but still found it is very sweet.)

Eggs 2
Procedure is almost same as original recipe:

1. Melt butter, add flour, cocoa powder and sugar.

2. Add in eggs. Stir well.

3. Pour into pie plate.

4. Preheat oven to 190 degree C, bake for around 30 mins. (After 30 mins, the edge is a little burnt, so I think maybe 25 mins is also fine.)

In the plate topped with some cream and fruits. It is very soft inside actually. Outside is a bit crunchy.
