Cocoa Chocolate Cake

Last night, I saw a picture of chocolate cake online. And I really really wanted to have a piece of it. So I decided to make my own chocolate cake by myself. Remember my husband bought a pack of Starbucks cocoa before? There’s still some left. So I’m gonna use it to make my cocoa chocolate cake.

The first time I saw this recipe, I was wondering is it true that boiling water is required in it? I was not so sure about it. But after I tried it, I realized how great this recipe is.

Ingredients:

1 cup sugar ( cocoa powder I used from Starbucks already contained sugar. So I cut off the sugar in original recipe)

1 3/4 cup flour

3/4 cup cocoa powder

1 1/2 tsp baking soda

1 tsp salt

2 eggs

1 cup milk

1/2 cup canola oil (original recipe said vegetable oil)

2 tsp vanilla

1 cup boiling water

1. Preheat oven to 175 degree C.

2. In a big bowl, mix sugar, flour and other 4 dry ingredients.

4. Add in eggs, milk, oil & vanilla.

4. Add in boiling water. Stir well till smooth.

5. Pour batter into greased baking pan. Bake for 30-35 mins.

You can add frosting you like. I like this cake very much. Soft and moist.

Carrot Cake ( with Pineapple & Walnut)

I baked carrot cake before. It was good.

Carrot Cake

I tried this new recipe and I loved this one. Very moist and taste better. Pineapple also improves the texture. My husband also likes it very much.

Ingredients:

1 cup flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 cup sugar ( I cut the sugar, because I don’t want it to be very sweet and also the canned pineapple I used were sweet).

1/2 cup vegetable oil ( I used canola oil)

2 small eggs

1/2 tsp vanilla

1 cup shredded carrot ( I also chopped them to make them shorter)

1/2 cup chopped walnut

1/2 cup chopped pineapple

1. Preheat oven to 175 degree C.

2. In a bowl, mix flour, baking soda, baking powder, salt and sugar.

3. Add in oil, egg & vanilla. Mix till smooth.

4. Fold in carrot, walnut and pineapple.

5. Pour batter into greased baking pan.

6. Bake for 45-50 mins.

You can also do the frosting. But I’m too lazy to do that. And plain cake is good enough for me. :p

Cheesecake

Cream cheese: 250g

Digestive cookie 100g

Sugar 80g

Eggs 2

Corn starch 15g

Lemon juice 10g

Milk 80g

Vanilla 1/4 tsp

Butter 50g

Preheat oven to 160 degree C.

1. Mash digestive cookies. Melt butter. Then pour butter into mashed cookies.

2. Press cookie into the baking pan. Then put into fridge.

3. Cream cheese with sugar till light and fluffy.

4. Add in egg one by one. Mix well.

5. Add in lemon juice, corn starch, milk and vanilla alternatively. Mix well before adding new ingredient.

6. Pour the batter into baking pan.

7. Wrap the bottom of baking pan with aluminum foil. Then put it into a bigger pan. Pour hot water into bigger one till 1/2 heat of the batter.

Bake for 60-80mins.

Cool down and put into fridge for several hours.

Japanese Potato Cake

When my husband and I were in Hokkaido, we went to Hokkaido Historical Village. We had a great time exploring that place and we had a taste of potato cake in the canteen there.


Both of us loved it. Soft, seeet and smells so so good.

After we came back, I searched recipe online. And found this:

1. I chose 4 medium potatoes. Clean and peel them. Then cut into medium chunks. Boil to soft. Mash them.

2. Add 10 tablespoons corn starch into mashed potato. Mix very well without any lumps.

3. Heat 20 g butter in the pan. When melted, put potato cake into it and fry till both side golden brown. ( I rinse my hand first, and put one spoonful potato dough in my palm. It won’t be sticky since my hands are wet. Make the dough into round and flatter one, then put into pan.)


4. Make the sauce: heat a saucepan. Add in 60 ml water, 2 tbsp brown sugar and 2 tbsp light soy sauce. Turn to high heat and reduce to thick and condensed sauce. Pour over potato cakes.


Taste really like the ones we had in Hokkaido. My husband loves them very much.

Easy Chocolate Cake

Ingredients:

3/4 cup cocoa powder

3/4 cup boiling water

1 cup buttermilk

1 cup canola oil

4 large eggs

1 tsp vanilla

2 cup sugar

2 cups flour

1/2 tsp salt

2 tsp baking soda
1. Mix cocoa powder with boiling water.

2. Mix buttermilk, oil, eggs and vanilla.

3. Mix sugar, flour, salt and baking soda.

4. Add dry ingredients into buttermilk mixture.

5. Add cocoa mixture into batter.

6. Pour into baking pan.

7. Preheat oven to 180 degree C and bake for 30 mins.
It’s really an easy cake to bake. Yet, it’s very moist and delicious.


Banana Walnut Cake


I baked it according to this recipe:

But I changed a bit.
Ingredients:

2 cups flour

1 tsp baking soda

1/4 tsp salt

1 egg

1 cup sugar

1/2 cup olive oil ( original recipe said vegetable oil)

1/2 tsp vanilla

3 mashed banana

1/2 cup walnut

1/3 cup walnut

1. Preheat oven to  170 degree C.

2. Mix flour, baking soda and salt in a bowl.

3. Blend egg, sugar and olive oil in another bowl.

4. Combine flour mixture with egg mixture. Blend well.

5. Add in vanilla and mashed banana.

6. Fold in 1/2 cup walnut. ( I just put walnut in a plastic bag and roll it with a rolling pin).

7. Place batter in baking pan.

8. Sprinkle 1/3 cup walnut on the top.

9. Bake for around 50 mins, till toothpick comes out clean.



It tastes really great.

Coffee Cake

Ingredients:

For topping

1 cup flour

1 cup brown sugar

1/2 cup butter

1 tsp cinnamon
Mix all the ingredients in a bowl and make into crumbs.
For cake:

1 cup butter

3/4 cup brown sugar

1/2 cup sugar

2 large eggs

1 1/2 tsp vanilla

2 cup flour

1 tsp baking powder

1/4 tsp salt

1/3 cup milk

Cream butter with sugar & brown sugar till light and creamy.

Beat in egg and vanilla.

In another bowl combine flour, baking powder and salt.

Add flour mixture and milk alternatively into butter mixture. Mix them well.

Pour the batter into baking pan.

Sprinkle the topping crumbs.
Preheat oven to 170 degree C. Bake for around 30 mins.


Strawberry Cheesecake Pie

Filling:

250 g cream cheese softened

100g evaporated milk

2 small eggs

100g sugar

2 tsp flour

1/2 vanilla

1. Cream cheese with sugar till smooth.

2. Add in milk and eggs one at a time. Mix well.

3. Add in vanilla, flour and mix well.

4. Pour filling into crust. Preheat oven to 180 degree C and bake for 35-40 mins.


For the strawberry topping:

In a saucepan, put in chopped strawberry and sugar. When strawberry turns soft, add in a little cornstarch. Stir evenly for another minute or 2 till sauce boils again. And pour it over the cheesecake pie.

Blueberry Coffee Cake

For the cake:

Butter 50g

Sugar 70g

Egg 1

Milk 60g

Flour 140g

Baking powder 1 tsp

Salt 1/4 tsp

Blueberry 1 small box ( because I only had 1 small box, which is around 120g. You can add more if you like rich blueberry flavor)

1. Mix flour, baking soda, and salt in a large bowl.

2. In another bowl, cream butter and sugar till creamy.

3. Beat in egg and vanilla.

4. Add in flour mixture and milk alternately till flour mixs in. Stir in blueberries.

Pour the batter into pan.

For the top:

Brown sugar 50g

Flour 3 tsp

Cinnamon powder 1 tsp

Butter 2 tsp

Combine all the topping ingredients in a small bowl (except butter). Cut in butter. And make them into crumb. Sprinkle over batter.
Preheat oven to 180 degree C. Bake for around 45 mins. Or when it can pass the toothpick test.

Banana Cake


Ingredients:

Butter 80g

Sugar 140g

Egg 1

Flour 140g

Milk 2 tsp

Baking Soda 1 tsp dissolved in milk

Baking powder 1 tsp

Bananas 2

Vanilla 1 tsp

Salt 1 pinch

Cinnamon powder 1 tsp

1. Cream butter and sugar till light and fluffy.

2. Add in egg, vanilla and baking soda that’s dissolved in milk. Stir well.

3. Add in bananas. Stir well.

4. Add in flour, salt and cinnamon. Mix them well and pour into baking pan.

5. Preheat oven to 180 degree C and bake for 30-40 mins.


The cake is very moist and full of fresh banana flavor. My husband is a big fan of it.
