Recipe: Chocolate Pound Cake

I always ask my husband about which pic to choose as featured image of blog. He gives me his opinion usually from a very different perspective.

He chose this picture for this blog. And his reason is that this picture look like it’s snowing.

I was like: WHAT???

Anyway, I still followed his advice.

If you always do baking at home and search baking recipes on YouTube. I bet you know Stephanie Jaworski from Joy Of Baking. She gives so many great recipes and demonstrations, which are very easy and hardly to fail. I really like her videos. And I tried some of her recipes, they turned out really great.

I followed her instructions about this Chocolate pound cake, except I reduced sugar and I didn’t do the glaze at the end.

If you don’t have time for video, I can show you the steps:

Preheat oven to 180 degree C.

1. Dissolve 25g cocoa powder in 60 ml very hot boiling water. Set aside to cool down.

2. Prepare dry ingredients: 180g flour, 1 tsp baking powder, 1/2 tsp salt. Mix them well.

3. Cream 225g butter with 200g white sugar (in video, she says 250g. I reduced sugar to keep it less sweet) till light. Add in 1 tsp vanilla extract. And 4 eggs one by one.

4. Add in cocoa water mixture. Stir well.

5. Add in 1/2 dry ingredients and 2 tablespoon milk. Mix well. Then add the rest dry ingredients.

6. Patter in baking pan. Bake for about 60 mins.

When it’s 50mins, I checked with toothpick, it didn’t come out very clean, so I baked for another 10 mins. I didn’t make the glaze and just dust icing sugar instead. Yeah, that’s why my husband related it to snowing.

See? Stephanie’s instruction is always simple and clear to catch up with.

Chocolate Banana Cupcake

I got this recipe from

Ingredients:

1 cup flour

3/4 cup sugar

1/3 cup cocoa powder

3/4 tsp baking soda

3/4 tsp baking powder

1/4 tsp salt

2 small mashed bananas

1 egg

1/2 cup water

1/4 cup canola oil

1/4 cup milk

3/4 tsp vanilla

1. Preheat oven to 180 degree C.

2. Mix all the dry ingredients (flour, sugar, cocoa powder, baking soda, baking powder, salt) in a big bowl.

3. In another bowl, mash 2 small bananas with a fork. It’s ok if there’s still lumps. Beat in 1 egg. Stir well.

4. Pour in water, canola oil, milk and vanilla. Mix well.

5. Pour wet ingredients mixture into dry ingredients. Mix well.

6. Pour batter into muffin pan. Bake for 20 mins. Test with a toothpick. If toothpick comes out clean, then they are done.

Super moist and soft. Banana lumps turn to be creamy in the middle.

Cocoa Chocolate Cake

Last night, I saw a picture of chocolate cake online. And I really really wanted to have a piece of it. So I decided to make my own chocolate cake by myself. Remember my husband bought a pack of Starbucks cocoa before? There’s still some left. So I’m gonna use it to make my cocoa chocolate cake.

The first time I saw this recipe, I was wondering is it true that boiling water is required in it? I was not so sure about it. But after I tried it, I realized how great this recipe is.

Ingredients:

1 cup sugar ( cocoa powder I used from Starbucks already contained sugar. So I cut off the sugar in original recipe)

1 3/4 cup flour

3/4 cup cocoa powder

1 1/2 tsp baking soda

1 tsp salt

2 eggs

1 cup milk

1/2 cup canola oil (original recipe said vegetable oil)

2 tsp vanilla

1 cup boiling water

1. Preheat oven to 175 degree C.

2. In a big bowl, mix sugar, flour and other 4 dry ingredients.

4. Add in eggs, milk, oil & vanilla.

4. Add in boiling water. Stir well till smooth.

5. Pour batter into greased baking pan. Bake for 30-35 mins.

You can add frosting you like. I like this cake very much. Soft and moist.

Banana Brownie

Banana Brownies

I followed the recipe. But there was no unsalted butter in my fridge, so I used salted butter and deleted the salt from ingredients.

1/4 cup salted butter

4 oz white chocolate 

2 medium banana ( mashed)

1/2 cup white sugar

1 egg

1 tsp vanilla

1 cup flour

Preheat oven to 180 degree C.

1. Put butter and white chocolate in a bowl. Then set the bowl in hot water. Melt them and mix them.

2. Add in sugar, banana, egg, egg, vanilla in order. Mix well before adding new ingredient.

3. At last add in flour. Mix till just combined.

Pour into baking pan. Bake for 15-20 mins. Check with toothpick before taking it out. Let it cool down completely and cut into squares.


My husband loved it very very much.

Easy Chocolate Cake

Ingredients:

3/4 cup cocoa powder

3/4 cup boiling water

1 cup buttermilk

1 cup canola oil

4 large eggs

1 tsp vanilla

2 cup sugar

2 cups flour

1/2 tsp salt

2 tsp baking soda
1. Mix cocoa powder with boiling water.

2. Mix buttermilk, oil, eggs and vanilla.

3. Mix sugar, flour, salt and baking soda.

4. Add dry ingredients into buttermilk mixture.

5. Add cocoa mixture into batter.

6. Pour into baking pan.

7. Preheat oven to 180 degree C and bake for 30 mins.
It’s really an easy cake to bake. Yet, it’s very moist and delicious.


Homemade Donuts

Ingredients:

Bread flour  130g

Warm Milk 35g 

Yeast 3/4 tsp

Sugar 25g

Egg 1

Butter 10g

Salt 1/4 tsp

1. Add 1 tsp sugar and yeast into warm milk and stir evenly.

2. Mix the rest sugar, salt and flour in a big bowl.

3. Add milk yeast mixture and egg into dry ingredients mixture. And knead them into a dough.

4. Cut in butter. Knead till the dough absorbs butter.

5. Wrap dough with plastic wrap and let it rise twice as big as before, which needs around 2 hours.

6. Roll the dough into a big one with thickness around 1 cm. Cut into shape of doughnuts.

7. Put donuts dough in the oven with a big bowl of hot water underneath. And let them rise for about half an hour.

8. Fry them till golden brown. Actually, I didn’t deep-fry them. I just added a thin layer of oil in the pan. Fry their one side and then flip over.



They are really delicious. My husband loves them.

Chocolate Oat Square

I changed it a bit.

Ingredients:

Butter 80g

Brown sugar 120g

Egg 1

Vanilla 1/4 tsp

Oats 1 cup

Flour 100 g

Salt 1/4 tsp

Baking soda 1/4 tsp

Filling:

1/3 can sweetened condensed milk, around 100g

Chocolate chips 1 cup

Butter 1 tsp

Salt 1/4 tsp

Chopped walnuts 1/3 cup

Vanilla 1/4 tsp
1. Cream brown butter and  brown sugar till light and fluffy.

2. Beat in egg and vanilla.

3. Combine oats, flour, salt, and baking soda. Stir into butter mixture.

4. Press 2/3 batter into pan as base.

Filling part:

1. In a saucepan, melt butter, chocolate, with sweetened milk and salt. Stir evenly.

2. Turn off the stove. Stir in walnuts and vanilla.

3. Spread filling over the Oat base in the baking pan.

4. Sprinkle the rest 1/3 Oat batter over the filling.

5. Preheat oven to 180 degree C and bake for 25mins.

Easy Chocolate Lava

   
Part A:

Butter around 25g

Chocolate 40g

Heat butter and chocolate in a bowl which is in hot water.

Keep stirring till they melt.

Remove them from hot water to get cool.
   

Part B

Whip an egg with around 15g sugar till the color becomes light.   
1. Pour Part B into Part A. Do make sure the chocolate is cool already.

2. Put around 15g flour into the mixture. Stir evenly. Then put the bowl into fridge for 30 minutes.

3. Preheat oven with 200 degree. Brush butter onto the inner wall of baking bowl.

4. Pour the chocolate mixture into baking bowl.

Put into oven for ten minutes.

When there are some small cracks on the surface of cake, the cake can be removed from the oven.


   

If you like, you can spread some icing sugar.

Try to scoop it with a small spoon.


And you will be surprised!
   

Cheese Swirl Brownie

Chocolate batter:

Chocolate 50g

Butter 50g

Sugar 50 g

Egg 1

Vanilla 1/2 tsp

Flour 50 g 

Cocoa powder 10 g

Salt 1 pinch

1. Melt butter with chocolate. Stir well and add in sugar. Stir.

2. When chocolate mixture cooled, add in egg and vanilla. Mix well.

3. Mix flour, cocoa powder and salt well. Then add into chocolate butter mixture. Mix them well.

4. Take out 1/4 chocolate batter. Pour the rest 3/4 in baking pan.

Cheese part:

Cream cheese 125g

Egg  half

Sugar 30g

Vanilla 1/2 tsp

1. In a large bowl, stir cream cheese till smooth. 

2. Beat in egg, sugar and vanilla.

3. Pour cheese part onto chocolate batter in the baking pan.

4. Use a spoon to scoop the reserved 1/4 chocolate batter onto the cheese part.

5. Draw pattern with a toothpick.

6. Preheat oven to 180 degree C. Bake for around 30 mins.

Oatmeal Chocolate Chip Cookies


The first time one of my students gave me one piece of this cookie, I fell in love with it immediately. The second time she gave me another one, I couldn’t help it and asked her for the recipe. Then her auntie, a very nice lady, gave me the recipe. I still remember how excited I was that day.

I changed a bit according to the original recipe.

Ingredients:

Butter 120 g

Brown sugar 100 g

White sugar 100 g

1 egg

1/2 tsp vanilla

140g flour

1/2 tsp baking soda

1/4 tsp salt

1.5 cup oats

1/4 cup chocolate chips
1. In a large bowl, cream butter with brown sugar and white sugar. Stir smooth.

2. Beat in egg and vanilla.

3. Add in flour, baking soda, salt. Stir into creamed mixture.

4. Add in oats and chocolate chips.


5. Preheat oven to 175 degree C, bake for 10 minutes.
