Lemon Sauced Salmon

1. Wipe salmon with kitchen towel and make them dry.

2. Sprinkle some salt.

3. Heat some oil in a skillet on stove till smoke hot.

4. Put salmon fillet in skillet. 3 mins for each side.

5. Add in chopped garlic. Sauté a bit.

6. Pour in lemon sauce ( fresh lemon juice: sugar = 1:7, and 1 tsp black pepper powder).

7. Heat till sauce becomes a bit condensed. Sprinkle chopped spring onion.

Serve hot.


Perfect match for rice.

Baked Half Salmon Fish Head 

This dish may look a bit scary, but it’s very delicious and easy.

First, sprinkle salt and black pepper over both sides of fish head ( I just used half of fish head). Then let it rest for around 30 mins.

Preheat oven to 160 degree C.

Bake for 15 mins. After that, turn to 200 degree C and bake for another 10 mins. If you want the fish skin to be more crunchy, you can prolong the baking time.


Serve with several lemon slices.

The best part is fish skin. It’s very crunchy. You can hear its cracking in your mouth. And the meat is very tender. My husband was deeply amazed.

Tenggiri in Dark Sauce


1. Heat a little oil in the pan. Fry tenggiri filet till a bit golden brown.

2. Add in 1 tsp light soy sauce, 1/2 tsp dark soy sauce, 1 tsp sugar. Stir fry evenly and let filet coat with sauce.

3. Pour in enough hot water covers filet. Add in star anise and ginger slice. Cover the pan with lid.

4. When the water reduces to 1/3, turn to high heat. And flip the fillet over till sauce condensed.

5. Place filet in the plate. Pour dark sauce over it and sprinkle some spring onion shreds.

Fish & Potato Chips


My husband is a big fan of fish and chips. So I tried to cook this dish at home.
I cooked two kinds of fried fish fillet.
First, cut fish fillet into smaller size. And marinated with a little salt and black pepper.


1st. In a bowl, mix a small bowl of flour, 1/2 tsp salt, 1/2 tsp baking soda, 1 tsp vinegar and a small bowl of water. Stir well into batter.
Dip fish in batter. Then fry till golden brown.


2nd. Coat fish with a thin layer of flour, than egg and bread crumb at last.
Fry in oil till golden brown.
After tasting this two kinds of fried fish, I like the bread crumb one more. Because I think it tastes more crispy. But my husband loved them both.


Potato chips fried in oil for around 5-7 minutes, till they get golden brown.

A Simple Japanese Cuisine Dinner: Soba & Fried Shishamo & Fried Dumplings


My husband loves soba, especially cold soba.

It’s very easy and quick to make cold soba.

1. Put soba in boiling water for 3 minutes.

2. Take soba out and soak in cold water. Then drain them.

3. Put several ice cubes on sushi mat. And put drained soba on ice.

4. Sprinkle some seaweed.

5. Eat with soba sacuce.


Fry Shishamo in pan till both sides turn golden brown.


There is a lot of eggs in shishamo’s belly, very tasty.



Soba, Shishamo and some fried dumplings make a simple and delicious Japanese dinner.

Cook One Fish In Two Ways

Compared to fried fish in western countries, Chinese people always choose to cook fish in different ways, like fish soup, braised fish in brown sauce, or steamed fish.
I bought this sea bass from supermarket. Yet, I found it too big and we didn’t have a pan big enough to cook it. So I decided to divided it into two parts. Fish head for the soup. Fish body and tail for the braised one.


Fish head soup is very popular in China, since many people think this dish is very good for health. Nutritious elements in fish will be contained in the soup.

It is not difficult to make fish soup.

1. Heat the oil in the pan, and fry two sides of the fish head. When the color turns a little brown, pour in the hot water. 

2. Add two or three ginger slices, salt and green onion.

3. Cook the soup with low heat. The longer you cook it, the whiter will the soup color become.

4. When the soup color turns milky white, add some tofu ( better be silken tofu) slices into it.

5. Cook for another 20 minutes or so. 


I really think silken tofu is a perfect match to fish soup.

Braised fish in brown sauce
This dish can be done while fish soup on the stove.
1. Similar to the soup above. Heat the oil in the pan, and fry two sides of the fish body. When the color turns a little brown, add in a little light soy sauce, dark soy sauce (light soy sauce contains salt, dark soy sauce is for dark color) and sugar.

2. Make the fish coated with sugar soy sauce. And pour in hot water.

3. Put in some ginger slices. Cover the pan with lid.

4. When the sauce in the pan become less than 1/4. Take the fish out.

5. Keep hearing the sauce in the pan until it becomes very condensed. And pour it onto the fish.


Dip the fish with sauce before put it into mouth. It really tastes great.

Crispy Fish Fillet (Non-fry)

I don’t like cooking dishes that need deep fried, because it means greasy kitchen, wasting too much oil, and getting hurt by hot oil easily. 

My husband like fish & chips very much, and both the dishes need deep frying. I looked up on the Internet and found ways to cook them without frying. 


This was the fish fillet I used. A dory fish fillet. Season it with salt and black pepper granules.


Bread crumbs need to be stir fry with a little oil for a while, which will make them look bright golden and taste better.


I also added some mixed herbs and minced garlic. When the color turns golden, turn off the oven.


Fish fillet first covered with a thin layer of flour, then egg, and bread crumbs at last.

Preheat oven to 200 degree C. In the oven for 20 minutes.



Dresses with some vegetable salad.


Fish fillet inside is very tender.
