Hokkien Prawn Noodle (福建虾面)

I didn’t add thin bee hoon, as I didn’t have any at home.

  1. Separate prawn sell, head and meat. Heat a pan, add in 1 tsp oil. Stir fry 3 chopped cloves of garlic and 1 chopped shallot. Add in prawn head and shell. Stir fry till red. Pour in 1 L water and add in pork ribs. Also add in 2 tsp white pepper, 1 tbsp light soy sauce, 1 tbsp fish sauce and 10g rock sugar. I used pressure cooker to cook them for 20mins. Drain the soup, then the broth is ready.
  2. Add 200g pork into a pot, add in enough water, add in 2 ginger slices and boil for 15 mins. Cool down and cut into slices.
  3. Poach squid and prawn meat in the broth. Cut fish cakes, chives into strips.
  4. Heat a pan, Add in 2 tsp oil. Beat in 2 eggs. Stir fry till solidify.
  5. Add in 300g yellow noodles, 150g thick bee hoon. Stir fry evenly.
  6. Add in 1 cup broth. and season with 2 tsp light soy sauce, 1 tsp dark soy sauce, keep stirring.
  7. Add in prawn, squid, pork, fish cake. Stir fry a bit. Then add in another 1 cup broth.
  8. Sprinkle bean sprout and cover with lid, simmer for 4 mins.
  9. Sprinkle chives. Stir fry evenly for 1 or 2 mins.
  10. Serve with lime and chili sauce.

One-pot French Beans & Noodles

Ingredients:

French Beans / Long beans 200g  (trimmed and cut into shorter pieces)

pork belly 200g (cut into slices)

fresh noodles 300g

garlic 3 cloves (chopped)

light soy sauce 1 tbsp

dark soy sauce 2 tsp

oyster sauce 1 tsp

sugar 1 tsp

water 1 cup

 

1, Heat a pan, Add in 2 tsp oil. Fry pork with low medium heat to sear out the fat till the edge turns slightly golden brown color. Set pork aside for later use.

2, Use the same pan (with the remaining oil), stir fry garlic till aromatic.

3, Add in French beans, stir fry for about 2 mins.

4, Add all the pork back into the pan. Stir fry for another min.

5, Add in light soy sauce, dark soy sauce, oyster sauce and sugar. Stir fry evenly.

6, Pour in water.

7. Bring to boil with high heat. Pour out 1/3 of the stock.

8, Lid on and simmer with low heat for 3 mins.

9, Spread noodles over pork and beans. Cover with lid and simmer for 3 mins.

10, Noodles will absorb the stock, so add in half of the stock kept in step 7 evenly over the noodles. simmer for 3 mins.

11, Mix noodles with pork and beans. Add in the rest stock. Simmer for 3 mins.

12, Stir noodles and reduce the sauce. Check whether noodles are done. If no, simmer a bit longer, add in a bit more water if needed. If yes, ready to serve.

Jajangmyeon (Korean noodles in black bean sauce)

 

  1. Prepare pork and vegetables. Cut 100g pork (you can also use chicken, if you want.) into dice. 1/8 head cabbage, 1/2 onion, 1/1 stalk of green onion all chop into small dices.
  2. Heat a pan. Add in 3 tbsp oil and 2 tbsp chunjang (black bean paste). Stir fry for about 3 mins. Discard the oil and set the paste aside for later use.
  3. Heat the pan again, add in 1 tbsp oil. Drop in pork dices. stir fry for a while till pork turns a big golden brown. Sprinkle black pepper.
  4. Add in cabbage, onion and green onion. I also added in a little chopped eggplant.
  5. Stir fry till all the vegetables turns softened.
  6. Add in 1 tsp light soy sauce, 1 tsp oyster sauce, 1 tsp sugar. Stir well.
  7. Add all the black bean paste in. Mix all ingredients well.
  8. Pour in 1/2 1 cup stock (or water). Simmer for a little while, till everything is fully cooked. And also the sauce reduced.
  9. Mix 1 tbsp starch in 2 tbsp water. drizzle it into the pan.
  10. Stir to thicken the sauce.
  11. Serve noodle with sauce and cucumber shreds.

And give it a good mix.

Creamy Mushroom Sauced Linguine with Salmon

A perfect simple and quick meal for rushing hours.

1. Cook linguine according to the instruction and set aside.

2. Season salmon with salt and pepper. Heat a pan. Add in a little oil. Sear salmon with skin side down for 2-3 mins. Then flip over and fry for another 2-3 mins. And fry each side for another 1 min. Set salmon aside.

3. No need to wash pan. Use the same pan. Add in a little extra oil. Fry mushroom slices.

4. Add in a little chopped garlic. Sauté a bit.

5. Pour in 1/2 cup stock or water. Simmer mushroom for a little while, like 3 mins.

6. Add in 2-3 tablespoon cream. Stir well. Put cooked linguine in. Blend well.

7. Season with salt, pepper and mixed herbs.

Serve with salmon.

Simple Seafood Linguine

1. Prepare 3 medium tomatoes. Cut a cross at the bottom. Soak them in hot water for a little while, then they can be peeled easily.

2. Chop tomatoes into small cubes. Heat a sauce pan. Add in 1 tablespoon oil, fry 1 chopped onion till transparent. Add in tomato cubes 2 tablespoon tomato sauce, 1 tablespoon sugar to balance the sourness, 1 tsp salt, 1 tsp mixed herbs and 1/4 cup water. Simmer a bit to let tomatoes into paste. And reduce the sauce. Set aside for later use.

3. Heat a pan. Add in 1 tablespoon oil. When heated, add in squid rings, clam meat and shrimps. Stir fry for 2 min, add in 1 tsp chopped garlic. Pour in 1 tablespoon cooking wine. Simmer for 1 min or 2.

4. Add tomato sauce in and blend evenly. Mix with cooked linguine.

5. Season with salt, pepper and mixed herbs.

Garnish with spring onion or parsley.

Prawn & Tomato Pasta

I really like this pasta. It’s creamy, easy and only needs one pot.

  1. Heat a little oil in the pan. Fry prawns or shrimps (remove head and shell first) till cooked. Put them in a plate and set aside for later use.
  2. Use the same pan. Saute 1 or 2 chopped garlic. Add in cherries tomatoes (cut into halves). Stir fry for maybe 2 mins.
  3. Pour in 2 cups water or stock or half stock and half water. Bring to boil.
  4. Pasta in. Cook according to the instruction. Mine needs 10 mins. Stir occasionally.
  5. Sprinkle in chopped parsley and cheese. Blend evenly.
  6. Add prawns in. Mix well.
  7. Season with salt and pepper.

Shrimp & Broccoli Linguine

I guess this is a very healthy dish. 🙂 Oh, I forgot, I also add some sausage in this dish. Let’s just pretend sausage is not there. 🙂

1. Cut broccoli into small pieces. Blanch in boiling water for 2 mins. Then drain them and set aside.

2. Cook linguine till almost cooked. Let’s say 1-2 mins less than required.

3. Heat a little oil in the pan. Fry shrimps till pinkish. Add in a little chopped garlic. Fry till aromatic.

4. Add in drained broccoli and 2 tablespoon stock. If you want your linguine taste creamy, you can also add in cream or cheese or both at this step. Stir evenly. Sprinkle mixed spices.

5. Add linguine in and simmer for 1-2 mins.

6. Season with salt and black pepper.

One-pot Long Beans, Pork & Noodles

This is a very popular way to cook noodles in China.

1. Heat a pan, add in a little oil. Sear pork belly slices. Pork better has some fat, so pork belly is a good choice.

2. Add in chopped long beans. Stir fry till surface has some wrinkles on it.

3. Add in 1 tsp cooking wine, 1 tsp light soy sauce, 1/2 tsp dark soy sauce, 1 tsp oyster sauce, 1/2 tsp salt, 1/2 tsp white pepper, 1/2 tsp five spice powder and 1 tsp sugar. Stir fry evenly.

4. Place noodles on the top. Fresh soft noodles are the best choice. But if you use regular dry noodles, please boil them in advance till almost half cooked.

5. Pour in one small bowl of water along the pan. Cover the lid. Simmer till it dries up. Then add in another bowl of water. And simmer again. So this step is to steam the noodles.

6. When sauce reduces, turn to high heat. Remove the lid. Mix noodles well with sauce.

Serve hot.

Beef & Spinach Pasta

1. Cook pasta. Drain and set aside for later use.

2. Heat a little oil in the pan. Fry beef slices first till no more pinkish.

3. Add in a little chopped garlic. Stir fry till aromatic.

4. Add in 1 1/2 tsp oyster sauce. Pour in 1/4 cup hot water. Simmer a bit to reduce the sauce.

5. Add in spinach. Stir fry for 2 mins. Sprinkle a little white sesame.

6. Add pasta back into pan. Season with salt and black pepper. Mix well.

Korean Army Stew

It’s really like spicy one-pot dish.

1. Prepare ingredients. Vegetables you like. I chose onion, mushroom, Chinese cabbage, tofu and sausage. Cut them into smaller pieces and place them in the pot.

2. Prepare sauce:

2 tablespoon Korean chili paste, 1 tablespoon light soy sauce, 1 tablespoon sugar, 1 tablespoon chili powder, 1 tablespoon water. Mix them well.

3. Pour sauce into the pot. Pour in stock which can reach half height of the ingredients.

4. Turn on the heat. When all ingredients are almost cooked. Add in instant noodles and 1 piece of cheese along with some kimchi.

Wait till noodles are cooked, ready to serve.
