Cereal Prawns (麦片虾)

Both my husband and I love this dish very much.

Ingredients:

large prawns 8

1/2 beaten egg

1 tbsp flour

1 tbsp corn starch

1/2 tsp salt

curry leaves 20-30

red chili 3 (cut into rings)

cereal 1 cup

milk powder 1 tbsp

sugar 1 tbsp

salt 1 tsp

butter 1 tbsp

oil 1 tbsp

1, Clean prawns. Put them in a big bowl. Add in half beaten egg, flour, 1/2 tsp salt, corn starch. Mix well.

2, Deep fry prawns till golden color and crispy.

3, In a small bowl, mix cereal, milk powder, sugar and salt.

4, Heat a pan. Add in butter and oil. When butter melts, add in curry leaves and red chili. Stir fry till sromatic.

5, Add in cereal mixture. Stir fry till slightly golden color.

6, Add in fried prawn. Stir fry evenly.

Hokkien Prawn Noodle (福建虾面)

I didn’t add thin bee hoon, as I didn’t have any at home.

  1. Separate prawn sell, head and meat. Heat a pan, add in 1 tsp oil. Stir fry 3 chopped cloves of garlic and 1 chopped shallot. Add in prawn head and shell. Stir fry till red. Pour in 1 L water and add in pork ribs. Also add in 2 tsp white pepper, 1 tbsp light soy sauce, 1 tbsp fish sauce and 10g rock sugar. I used pressure cooker to cook them for 20mins. Drain the soup, then the broth is ready.
  2. Add 200g pork into a pot, add in enough water, add in 2 ginger slices and boil for 15 mins. Cool down and cut into slices.
  3. Poach squid and prawn meat in the broth. Cut fish cakes, chives into strips.
  4. Heat a pan, Add in 2 tsp oil. Beat in 2 eggs. Stir fry till solidify.
  5. Add in 300g yellow noodles, 150g thick bee hoon. Stir fry evenly.
  6. Add in 1 cup broth. and season with 2 tsp light soy sauce, 1 tsp dark soy sauce, keep stirring.
  7. Add in prawn, squid, pork, fish cake. Stir fry a bit. Then add in another 1 cup broth.
  8. Sprinkle bean sprout and cover with lid, simmer for 4 mins.
  9. Sprinkle chives. Stir fry evenly for 1 or 2 mins.
  10. Serve with lime and chili sauce.

Prawn Pizza

The prawns I used are very big, so I remove the head and shell, then cut prawn into halves.

  1. Heat a pan, add in 1 tbsp oil. Fry prawn head and shell. Gently squeeze prawn head with spatula. Then take all the shell and head out.
  2. Fry prawns with the same pan. Just fry each side for 1 minute or 2. Set aside for later use.
  3. Still the same pan, saute 3 chopped cloves of garlic. Then add in pizza sauce. Stir fry till prawn oil and sauce are completely combined.
  4. Brush fried sauce onto pizza dough. Sprinkle cheese. Spread prawns over it. And top with cheese again.
  5. Into 200 degree oven and bake for 10 mins.

Butter Prawn

1. Prepare Prawns first. Remove the intestines and wash clean.

2. Put all Prawns in a big bowl. Add in 1 egg white, a little salt and pepper and 2 tablespoon corn starch. Mix well.

3. Deep fry Prawns in oil till golden brown. Drain them.

4. Heat 1 tsp oil in a sauce pan. Add in 20g butter. When butter melts, pour in 2 egg yolks. Stir while pouring. Egg yolk will become shredded.

5. Add in red chili rings and chopped garlic. Stir fry a bit.

6. Add all the fried prawns back to sauce pan. Mix well.

Prawn & Glass-noodle Stir-fry

  1. Soak glass noodles in water till softened and drain them. Prepare sauce: 1tbsp light soy sauce, 1/2 tbsp dark soy sauce, 1/2 tbsp oyster sauce, 1/2 tbsp black pepper, 1/2 tsp salt and 1/2 tbsp sugar. Mix them well in a bowl.
  2. Clean and trim prawns. Marinate them with cooking wine, salt and pepper.
  3. Heat a pan, Add in a little oil. Fry prawns till red on both sides.
  4. Take the prawns out and heat the same pan (no need to wash).
  5. Saute chopped garlic and ginger till aromatic. Add in chopped shiitake mushroom (optional) and stir fry for 2 mins.
  6. Add in glass noodles. Also pour in sauce. Use chopsticks to stir glass noodles to let them be coated with sauce.
  7. Pour in 1/4 cup stock. Turn to low heat and lid on. Simmer for 5 mins. Add more stock if it gets dry.
  8. Add the prawns and red chili shreds in. Mix well. Maybe a little more stock and lid on for another 3 mins.
  9. Lid off. Stir with chopsticks evenly.

Fried Small Prawns

This kind of small prawn is not very often seen in the supermarket. But it’s very commonly seen in my hometown. I remember that my mom always cook it for us just by simply deep frying them.

  1. Wash prawns clean in water. Dry them a bit with kitchen towel. No need to make them completely dry.
  2. Season with a little cooking wine, salt and black pepper. Marinate for 20 mins.
  3. Sprinkle flour over them to get them coated with thin flour layer.
  4. Deep fry them till golden brown.

Very crispy and delicious!

Sweet & Sour Prawn

  1. Clean prawns by removing all the intestines and rinsing under water. Place all the prawns in a big bowl. Marinate with salt, pepper and cooking wine for a little while.
  2. Coat prawns with a thin layer of potato starch.
  3. Deep fry prawns till golden and crispy.
  4. In a small bowl, add in 2 tsp light soy sauce, 2 tsp tomato sauce, 1 tsp vinegar, 2 tsp honey. Mix them well.
  5. Heat a pan. Pour the sauce in and reduce a bit.
  6. Add prawns into the sauce. Stir fry evenly to let the prawns be coated with sauce.

Garnish with spring onion.

Butter Garlic Giant Prawn

The other day, my husband and I found this giant prawn in the supermarket. So we bought some.

Butter and garlic are actually good choice to cook giant prawn.

  1. Cut the prawn open at the belly. Scissors can do a better job to cut open the belly shell. Then use a knife to cut the prawn meat open.

2. In a small bowl, cut in 2 tablespoon butter. Sprinkle a little salt, pepper and 3-4 cloves of chopped garlic. Mix a bit.

3. Preheat oven to 200 Degree C.

4. Spread butter over prawn.

5. Into the oven and bake for 15 – 20 mins.

Hubby loves them very much.

Steamed Prawn & Vermicelli

You can replace prawn with shrimps.

  1. Prepare prawns. Wash them clean. Cut on the back with scissors or a knife. Remove the intestines.
  2. Soak vermicelli in hot water for 10 seconds. Cut shorter. Save a little and chop into small pieces.
  3. Chop 3 or 4 cloves of garlic. Heat a pan. Add in 2 tsp oil. Saute garlic till aromatic. Add in 1 tsp light soy sauce, 1 tsp oyster sauce and 1/2 tsp sugar. bring to boil.
  4. Place vermicelli in a plate. Arrange prawns over the vermicelli. Stuff prawn with chopped vermicelli. Then use a spoon to pour garlic sauce onto chopped vermicelli. Pour the rest garlic sauce over the vermicelli under the prawn.
  5. Steam for 15 mins.  My prawns are big, that’s why it takes around 15 mins to be cooked. If you use shrimps, you can shorten the time to 8-10 mins.

Vermicelli is very tasty. My husband even loves it more than prawns.

Laksa

Finally, I got the chance to cook Laksa at home. It all due to my husband. When we were shopping for groceries, he suddenly told me that he wanted to have laksa. He chose a pack of laksa paste and laksa noodles. We also bought bean sprouts and puff tofu yesterday. He was quite excited about the laksa I was going to cook.

The most important part of Laksa is the paste, which is made from all kinds of spices. I really don’t want to buy many kinds of spices and store in the fridge. Cos I’m pretty sure that I will forget about them and they just stay there and rot. So the most convenient way is what my husband did to buy Laksa paste from supermarket.

This is the one my husband chose.

Another ingredient may be time-consuming is prawn stock. Although the instruction on the package says you can just add in water. I still think prawn stock will be a better choice.

I used about 500 g prawns. Remove all the heads and shells (except the tail shell). Heat  a pan. Add in 1 tbsp oil. Put all the prawn heads and shells in. Stir fry till they all turn red. Pour in 4 cups water. Lid on. Simmer with low heat for 1 hour. When stock was on stove, my husband came to kitchen and said “it smells so so good”.

Blanch laksa noodles, bean sprout and fish cake in water for 2-3 mins. Then arrange them in a bowl.

When prawn stock is down, sieve the stock and get rid of all the shells.

Heat a pan. Put laksa paste in. Because there is too much oil in the paste, I poured some out. Stir fry the paste for a little while, till you can smell the aroma. Pour all the prawn stock in. I also added in 1 cup water, because prawn stock reduced during simmering. Bring the soup to boil. Add in prawns, clams and puff tofu. Boil for 2 mins. Pour in 200 ml coconut milk. Gently stir and simmer for another 3 mins.

Arrange prawns, clams and puff tofu over the noodles. Pour the soup over them.
