Bosch Oven Power Trip

Apparently, it is quite common in Singapore (and other tropical countries like Malaysia, Indonesia) that the electric oven cause a power trip (or short circuit) due to the high humidity. Basically, the heating element tends to attract moisture, and if the moisture accumulates too much it will cause a power trip. Since the humidity in the tropics is very high, the chances of this happening is also quite high.

There are two kinds of oven power trips:

  1. Oven power trips after a certain time (e.g. 5 minutes) from turning it on
  2. Oven causes power trip immediately upon switching on power

Clearly, Case 2 is more serious than Case 1. There is a simple solution for Case 1 Oven Power Trips that you may try: first switch on the oven to low temperature (50 degrees Celsius) to dry out the moisture. Only after reaching that temperature, then…

Stuffed Lotus Root with Sticky Rice

This is one of the dishes that I want to try for a long time. With a pressure cooker, it will be a lot easier.

  1. Prepare a lotus root. Mine is about 700g. Peel it. Cut two ends at about 3-5 cm. Don’t throw them away.
  2. Wash sticky rice and drain them. I used about 1/2 cup.
  3. Fill the lotus root hole with sticky rice. This step needs patience and time. You can use chopsticks to help you with it.
  4. After that, put the two cut-off ends back and fix them with toothpicks firmly.
  5. Put lotus root into pressure cooker. Add in enough water covers it or at least 3/4 of it.
  6. Cook under higher pressure for 30 mins.
  7. Cut 6 big red dates into slices and remove the seed. Also prepare 30g rock sugar cubes.
  8. After 30 mins. Add red dates and sugar into the pressure cook and cook under high pressure for another 20 mins.
  9. Take the lotus root out. Remove all the toothpicks. Let it cool down and cut into slices.
  10. The red date water is delicious. You can also use some to get thickened sauce. And glaze the dish.

Lotus root is very soft and so is sticky rice.

White Fungus, Red Dates, Lotus Seeds & Longan Soup

It’s a sweet soup, more like dessert.

Ingredients are simple:

White fungus soak in water till soft and tear them apart. Lotus seed washed in water. Split in halves and remove the green sprout if there is. Remove the seed of red dates and cut or tear into smaller pieces. Other ingredients are longan meat, goji berries and rock sugar.

Put everything into pressure cooker. (I really love my pressure cooker. It makes cooking a lot easier.) Add in 6 cups water. Cook under high pressure for 50 mins.

White fungus becomes as soft as jelly. Soup is thick.

A good desert for women especially.

Sambal Chili Sauce Eggplant

  1. Prepare a big eggplant. Cut into pieces. Put them in a big bowl. Sprinkle salt over them and leave it there for about 15 mins. Water will come out. Squeeze eggplants to get all the water out. This step will make eggplant absorb  less oil.
  2. Add oil, a bit more than usual into the pan. Fry eggplants till the edges turn golden brown. Take them out and set aside for later use.
  3. Heat the pan again. Add in 2 cloves chopped garlic. Stir fry till aromatic.
  4. Add in chicken bites, you can also choose minced pork or beef.
  5. Stir fry till chicken turns slightly golden brown.
  6. Add in 2 tbsp sambal chili sauce. Stir fry evenly.
  7. Add fried eggplants. Season with 1 tsp fish sauce and 1/2 tsp white pepper.
  8. Simmer for 3 mins.
  9. Garnish with chopped spring onion.

Crispy Fried Squid

  1. Wash and clean squid.
  2. Cut squid into rings or smaller pieces.
  3. In a bowl, add in 1 cup flour, 1/2 tsp baking powder. Season with salt and black pepper. And to add more flavor, I also added in 1 tsp dried mixed herbs. Mix them well.
  4. Heat oil in the pan.
  5. Dip squid in flour mixture and shake off the excessive.
  6. Deep fry till golden brown.
  7. I also cut lemon slices and parsley. Also roll them in flour mixture and fry.

My husband loved it very much.

Pear Paste (秋梨膏)

  1. Prepare 6 very big pears. Peel them, remove the seeds and cut into small chunks.
  2. Put all the pear chunks into blender and blend into paste.

https://flic.kr/p/2hCFDWC

Prepare ginger, red dates, 2 luo han guo (crushed) and 50g rock sugar cubes.

Put everything including the pear paste into a pot. Bring to boil with high heat. Then turn to low heat and simmer for 30 mins.

Sieve everything and only keep the liquid. To save more liquid, you can place all the residue into a cotton cloth. wrap it and squeeze all the juice out.

Pour the juice into the pot again. Bring to boil with high heat and simmer with low heat for about 1hr 30 mins. Or until it becomes as thick as honey.

Keep in a jar and store in refrigerator.

1 tbsp of pear paste and a glass of water.
