Sweet Chili Sauce Salmon

This is a very simple dish.

1. Marinate salmon with Thai sweet chili sauce in a container for at least one hour. The longer it takes, the better it will taste.

2. Preheat oven to 180 degree C. Line the salmon fillets on the baking paper.

3. Put into oven for 15 mins.


4. Pour a little sweet chili sauce over them and roast for another 5 mins.


5. Sprinkle freshly chopped spring onion and serve hot.


Yummy!

Fish And Chips

My husband is a crazy fan of fish and chips. When we dine out, I always choose dish from different cuisine, but he just has fish and chips in his tray, almost every time. As the only chef at home. I feel it is my mission to learn how to cook delicious fish and chips.

For the fish fillet, I used tilapia. It’s red when raw, but white when cooked.

Mix 1/4 cup flour and 1/4 cup corn starch in one bowl.
For the batter:

Mix 1 cup flour, 1/4 cup corn starch, a little salt, black pepper and 1 tsp baking soda in another bowl. Then pour into water ( soda water is required in original recipe. But plain water also turns out well in my experiment) to make batter. Stop when the batter feels like pancake batter. I can’t tell how much water I added. I just stopped when I felt it’s ok.
Heat oil in a frying pan. I didn’t measure how high the temperature is. Drop a little batter into it, if the batter can hold together and you can heat the sizzling, I think it’s ready.

Coat fish fillet with dry flour mixture first. Shake off the excess. Then dip in the batter. And fry them till beautifully golden brown.

Serve with potato chips.


I just bought frozen potato chips from supermarket and fried them.

Add some cabbage with mayonnaise.


It immediately became one of my hunsband’s favourite dishes.

Salmon Miso Soup

1. Cut a small salmon fillet into small chunks. Coat them with a little corn starch.
2. Heat a little oil in the pan. Add in a little chopped garlic and ginger, sauté till aromatic.
3. Put in salmon chunks. Fry each side till a little light brown. Pour in enough hot water covers salmon.
4. When water boils, add in Tofu chunks, and a little kelp. Cover the pan with lid. Boil for 5 mins.
5. Add in 1 tsp miso. Stir to dissolve. When soup boils again, sprinkle chopped spring onion and a little salt.

Butter Lemon Cod Fillet

1. Preheat oven to 180 degree C.

2. Melt 20g butter, then mix in fresh juice of half small lemon. Also add in 1/2 tsp garlic powder.

3. In a bowl, add in 1/4 cup flour, some salt, black pepper and a little mixed herbs.

4. Dip cod fillet in butter mixture first then in flour mixture.

5. Place cod fillet in a baking pan. Bake for 25-30 mins.

I also put several baby carrots and French beans in the baking pan and let them be baked with cod.

Tuna Zucchini Spaghetti 

It’s a healthy and quick dish to make.

1. Prepare a canned tuna. Take the fish meat out and Drain it.

2. Use a cutter to make half Zucchini into strips.

3. Heat a skillet. Add in a little olive oil.

4. Add in chopped onion and garlic. Sauté a bit.

5. Add in tuna. Stir fry for 2-3 mins.

6. Add in Zucchini strips. Stir fry for another 3 mins.

7. Put in cooked spaghetti. Stir fry evenly. Sprinkle salt and black pepper. Then ready to serve.

Lemon Sauced Salmon

1. Wipe salmon with kitchen towel and make them dry.

2. Sprinkle some salt.

3. Heat some oil in a skillet on stove till smoke hot.

4. Put salmon fillet in skillet. 3 mins for each side.

5. Add in chopped garlic. Sauté a bit.

6. Pour in lemon sauce ( fresh lemon juice: sugar = 1:7, and 1 tsp black pepper powder).

7. Heat till sauce becomes a bit condensed. Sprinkle chopped spring onion.

Serve hot.


Perfect match for rice.

Baked Half Salmon Fish Head 

This dish may look a bit scary, but it’s very delicious and easy.

First, sprinkle salt and black pepper over both sides of fish head ( I just used half of fish head). Then let it rest for around 30 mins.

Preheat oven to 160 degree C.

Bake for 15 mins. After that, turn to 200 degree C and bake for another 10 mins. If you want the fish skin to be more crunchy, you can prolong the baking time.


Serve with several lemon slices.

The best part is fish skin. It’s very crunchy. You can hear its cracking in your mouth. And the meat is very tender. My husband was deeply amazed.

Caramelized Salmon

Original recipe:

Caramelized Salmon

Preheat oven to 230 degree C.

In a small bowl, combine 1/4 cup sugar, 1 1/2 tsp salt, 2 tsp black pepper granulate.

Heat some olive oil in skillet. Dip salmon in sugar mixture. Fry in the skillet. Around 3-4 mins for each side till golden brown.

Sprinkle some sugar mixture on salmon fillet.

Put skillet into oven and bake for around 5-7 mins.



It tastes very good. My husband loves it very much.

Tenggiri in Dark Sauce


1. Heat a little oil in the pan. Fry tenggiri filet till a bit golden brown.

2. Add in 1 tsp light soy sauce, 1/2 tsp dark soy sauce, 1 tsp sugar. Stir fry evenly and let filet coat with sauce.

3. Pour in enough hot water covers filet. Add in star anise and ginger slice. Cover the pan with lid.

4. When the water reduces to 1/3, turn to high heat. And flip the fillet over till sauce condensed.

5. Place filet in the plate. Pour dark sauce over it and sprinkle some spring onion shreds.

Pan-fried Cod With Asparagus 


1. Heat butter in a pan. Fry cod fillet about 2-3 mins for each side. Then dish out.

2. Fry asparagus till done. Sprinkle a little salt. Then dish out.

3. Heat 1 tsp butter in the pan. Add 1/2 tsp flour and 3 tsp milk. Cook with low heat till sauce becomes condensed. Add in some salt and black pepper. Stir evenly.

4. Pour sauce onto the cod in the plate.
