Sambal Chili Sauce Eggplant

  1. Prepare a big eggplant. Cut into pieces. Put them in a big bowl. Sprinkle salt over them and leave it there for about 15 mins. Water will come out. Squeeze eggplants to get all the water out. This step will make eggplant absorb  less oil.
  2. Add oil, a bit more than usual into the pan. Fry eggplants till the edges turn golden brown. Take them out and set aside for later use.
  3. Heat the pan again. Add in 2 cloves chopped garlic. Stir fry till aromatic.
  4. Add in chicken bites, you can also choose minced pork or beef.
  5. Stir fry till chicken turns slightly golden brown.
  6. Add in 2 tbsp sambal chili sauce. Stir fry evenly.
  7. Add fried eggplants. Season with 1 tsp fish sauce and 1/2 tsp white pepper.
  8. Simmer for 3 mins.
  9. Garnish with chopped spring onion.

Avocado Egg (Deviled Eggs)

I used 4 eggs and 1 small ripe avocado in this recipe. You can adjust it according to your preference, use more eggs, less avocado or less eggs and more avocado.

  1. Boil eggs till they are hard boiled.
  2. Cut each eggs into halves. Gently scoop out the egg yolk.
  3. Put egg yolk and avocado in a bowl, mash them with a fork. Ripe avocado will make it a lot easier. I just mash them coarsely, so there is still avocado chunks in it.
  4. Season with salt and black pepper.
  5. Squeeze in 1/2 lime juice, 1/2 tbsp mayonnaise.
  6. Mix well till fully combined.
  7. Scoop egg yolk & avocado mixture with a spoon and put into the egg white.
  8. You can sprinkle some more black pepper or smoke paprika  powder.

Prawn & Glass-noodle Stir-fry

  1. Soak glass noodles in water till softened and drain them. Prepare sauce: 1tbsp light soy sauce, 1/2 tbsp dark soy sauce, 1/2 tbsp oyster sauce, 1/2 tbsp black pepper, 1/2 tsp salt and 1/2 tbsp sugar. Mix them well in a bowl.
  2. Clean and trim prawns. Marinate them with cooking wine, salt and pepper.
  3. Heat a pan, Add in a little oil. Fry prawns till red on both sides.
  4. Take the prawns out and heat the same pan (no need to wash).
  5. Saute chopped garlic and ginger till aromatic. Add in chopped shiitake mushroom (optional) and stir fry for 2 mins.
  6. Add in glass noodles. Also pour in sauce. Use chopsticks to stir glass noodles to let them be coated with sauce.
  7. Pour in 1/4 cup stock. Turn to low heat and lid on. Simmer for 5 mins. Add more stock if it gets dry.
  8. Add the prawns and red chili shreds in. Mix well. Maybe a little more stock and lid on for another 3 mins.
  9. Lid off. Stir with chopsticks evenly.

Garnish with green onion.

Celery & Bacon Stir-fry

I seldom buy local celery, which is the thin type. But I think this stir-fry is a good way to cook local celery.

  1. Cut celery and bacon into small bits.
  2. Heat a little oil in the pan. Sear bacon bits first.
  3. When bacon turns a little brownish, add in celery. Stir fry for 1 minute.
  4. Drizzle in 1/2 tsp light soy sauce and also add in 1/2 tsp sugar to taste.
  5. If you want it to be a little spicy, you can add in chopped chili.
  6. Quickly stir fry for another 2 minutes.
  7. Season with salt.

Long Bean Stir-fry

I love green and crunchy long beans. And it’s a very simple dish to cook.

  1. Wash long beans clean. Cut into medium strips.
  2. Boil a pot of hot water. Add in 1 pinch salt and several drops of oil. Add long beans in and boil for 4 mins to make sure they are completely cooked. Then soak them in cold water and drain them.
  3. Heat a pan. Add in 1 tsp oil. When oil is hot, saute chopped 2 or 3 cloves of garlic and 1 red chili till aromatic.
  4. Add long beans in. Stir fry for 1 min.
  5. Add in 1/2 tsp light soy sauce and 1/2 tsp oyster sauce. Quickly stir fry evenly.
  6. Season with salt.

You can choose not to add chili if you don’t want it to be spicy at all.

This cooking method can also be used to stir fry lady fingers.

Seaweed Fried Rice

 

I never know dried seaweed can be used to cook fried rice until last summer My husband and I went to visit my friends in XiaMen. My friends invited us to a special dinner in a private place. And a special dish was served, which is seaweed fried rice. It’s the first time my husband and I tried that dish. We loved it.

This dish is not difficult to cook.

Ingredients:

leftover rice

dried seaweed (cut into small chips with scissors)

chopped spring onion

chopped 2 cloves of garlic

dice of 1/2 chopped carrot

oil

salt

  1. Drizzle a little oil into the rice to separate the rice grains.
  2. Heat a little oil in the pan. Fry dried seaweed with low heat for 1 min. Then dish them out and leave the oil.
  3. Saute garlic till aromatic with the same pan. Add in the carrot dices. stir fry for 2 mins.
  4. Add in rice. Toss all ingredients evenly.
  5. Add in fried seaweed. Stir fry evenly for another 1 minute.
  6. Season with salt.

Both my husband and I love it.

Easy Gong Gong (Dog Conch Sea Snail) Recipe

Dog Conch has a very cute name Gong Gong here in Singapore. My husband told me he never tried gong gong before. We were planning to give it a try when we went to Bintan. Yet, we changed our mind to try local Indonesian food instead.

Today, we saw live gong gong at supermarket. We were very curious about them. it was also the first time for my husband to see live gong gong. And we decided to buy some and cook at home.

We bought 10 gong gong, around 500 g @ S$1.5, very cheap.

I put them in a basin. and soaked them in salty water. After 30 mins, they spitted much dirt. I rinsed them again and again till water is clear.

  1. Boil some water in a pot. Add in several ginger slices and salt.
  2. When water boils, add gong gong in. And boil for 20 mins.
  3. Rinse them under water and wash them clean.
  4. Place gong gong in a plate. Spread some chopped spring onion, ginger and garlic.
  5. Heat a pan. Add in 2 tablespoon oil. Pour oil over the spring onion and garlic.
  6. Serve with chili sauce.

My husband loved them. He even washed and kept all the shells.

Portobello Mushroom Pizza

1. Prepare Portobello mushroom as pizza crust: wash them gently under water. Remove the stem.

2. Mix 1 tsp finely chopped garlic with 1 tablespoon melted butter in a small bowl.

3. Brush mushroom with butter & garlic mixture. Sprinkle very little salt over mushroom.

4. Cut cherry tomatoes into halves. Mozzarella cheese ball into small chunks.

5. Place tomato and cheese alternatively on the mushroom.

6. Drizzle a little olive oil and garnish with chopped spring onion or basil.

Into 220 degree C oven for 13-15 mins.

Easy Avocado Milkshake

Since last time, we had very nice avocado milkshake in a hawker center, my husband cannot forget about it. And we decided to buy some avocados and make it by ourselves.

It’s very easy to make.

Ingredients:

1 ripe avocado (remove peel and core)

250 ml milk (if your avocado is big, you can add a little more milk)

sugar cubes 2 (If you want sweeter taste, you can add more sugar)

Just put all ingredients into a blender. Blend till smooth. Serve with ice if you want it to be cooler.

You can also replace sugar with honey. I tried it, but my husband still preferred sugar.

It’s so easy and even my husband (who almost never cooks) can make it.
