Roasted Pig Knuckle

Use knife to make one or two slices on the thick skin. Then prepare celery leaves, onion, and garlic. Chop them into small granules or pieces. Sprinkle some salt on knuckle. Then cover the knuckle with chopped vegetable mixture and wrap them tightly with a plastic outside. Put in the fridge overnight.

1. Take off the plastic wrap and wash off the vegetable mixture on the surface.

2. Steam knuckle for 50 mins.

3. Preheat oven to 220 degree C. Put steamed knuckle in oven and bake for 40 mins. You can move the knuckle to make the color evenly brown while baking.

After baking, the skin of knuckle becomes very crispy. The inside is very tender and juicy.

Homemade Tomato Sauce

Apart from searching for recipes, one of my hobbies is watching movies about food.

I watched the Japanese Movie Little Forest the other day. It tells a story of a little girl living in the countryside. She plants vegetables and fruits and makes dishes with them. One scen is about her making tomato sauce with the tomatoes she plants. So I imitated her way of doing that.

1. First, wash some cherry tomatoes. Actually, you can use small tomatoes or big ones, depending on how big your jar is. And cut a cross at the bottom of each one.

2. Then put them in hot water for several seconds. If your tomatoes are bigger, let them stay longer in hot water.

3. Put them into icy water. And the tomato skin can be easily removed.

4. Put peeled tomatoes back into hot water. Boil them with a little salt. Don’t put too much.

5. Then put the tomatoes along with some salty hot water into sterilized jar. Please don’t make the jar too full.

6. Put the jar into hot water. And boil it for several minutes. Make sure the lid is not cover too tight.

7. After boiling, cool the jar for a while and tighten the lid.

The movies says, put the jar in the fridge. When you feel hot in summer, you can take a bite, and it makes you feel very cool.

I took them out and heat in a pan with some sugar.

Then poured them on cooked spaghetti. It tasted really great.

Scrambled Egg With Tomatoes

If one dish should be chosen to represent China, I think it probably be this dish. It’s also the very first dish for most Chinese to learn how  to cook. And it also shows up very often on Chinese’s table. It’s a quick, easy and delicious dish as well.

Ingredients:

3 medium tomatoes ( peeled off, cut into even sized pieces. One tomato can be cut into 8 small pieces)

3 eggs

Oil, salt, sugar, chopped spring onion, starch, water.

1. Make omelet. Take omelet out once it solidify.

2. Heat a little oil in the pan. Put the tomato pieces in. Stir fry a little.

3. Add in salt and sugar. Keep stir frying. Juice will come out from tomato.

4. Put the omelet in and mix well with tomatoes. Omelet will be coated with tomato sauce.

5. Add in a little starchy water. Quick stir fry a little.

6. Sprinkle chopped spring onion before taking out into the plate.

In many Chinese small restaurant, they have rice topped by scrambled egg with tomatoes or noodles topped by scrambled egg with tomatoes in their menu. And it’s true that the sauce of this dish is a very good match for rice.
