Kimchi Zucchini Pancake

Ingredients:

Chopped Kimchi 150g 

Half Zucchini (chopped into bits)

1 small onion ( chopped into bits)

Flour 100g

Salt 1 tsp

Black pepper 1 tsp

Water 

1 egg
1. In a large bowl mix kimchi, Zucchini and onion. Sprinkle 1 tsp salt.

2. Add in flour and water. Mix evenly. Beat in 1 egg.

3. Add in black pepper. Stir evenly.

4. Heat some oil in the pan. Beat a spoonful batter in the pan. Fry both sides till golden brown.

Cheesey Farfalle Pasta

Ingredients:

Small onion 1 (chopped into small bits)

Bacon bits

Tomato 2 (peeled and chopped into small bits)

Frozen green peas ( in boiling water for 1 min)

Farfalle pasta (cooked)

Salt

Black pepper

Cheese

Tomato sauce

1. Heat a little oil in the pan. Add in bacon bits. Stir fry till bacon gets a bit burnt.

2. Add in onion bits. Stir fry a bit.

3. Put in all the tomato pieces. Sprinkle some salt. Add in 2 tsp tomato sauce. Braise for a while till tomatoes become tomato sauce.

4. Add in green peas. Simmer for 1 min. Turn off the stove.

5. Add in cooked farfalle pasta. Sprinkle some black pepper. And stir evenly.


Spread cheese on farfalle. Put in the microwave for around 2 mins till cheese melts.


Very yummy.

Pan-fried Zucchini 

Ingredients:

Half zucchini (cut into thin slices)

Flour 4 tsp

Salt 1/2 tsp

Egg 1 (beat slightly in a bowl)

1. In a small plastic bag, put in flour and salt. Mix them well.

2. Put zucchini slice in the bag. Shake several times to let zucchini be coated with a thin layer of flour.

3. Dip zucchini in the egg to let both side covered by egg.

4. Heat a little oil in the pan. Fry zucchini till one side turn golden brown. Then flip over. Fry both sides till golden brown.


Serve with the sauce you like.

Easy Thin Pizza


Pizza dough:

Bread flour   100g

Salt   1/4 tsp

Yeast   1/4 tsp

Olive oil   1/4 tsp

Water    60 ml

Mix all the ingredients together in a large bowl till they cling together into a dough.

Cover the bowl with a lid or a plastic wrap till the dough becomes 2 times big.

Knead it to let the air out. And use a rolling pin to stretch it into a big thin pizza dough.

Use a fork to poke several times on the dough. Brush the dough with tomato sauce. Sprinkle cheese as much as you like. And last spread several sausage slices or ham. If you like, you can also sprinkle some mixed herbs on it like I did.

Preheat oven to 240 degree C. Bake for 10 mins.


It’s a easy pizza to make and also yummy. 

Chicken Wings By Rice Cooker

Ingredients:

Chicken wings 4

Ginger slices

Chopped spring onion

Light soy sauce

Cooking wine

Salt

Oil

1. Sprinkle salt on chicken wings. And rub the skin with hand gently.

2. Put chicken wings in a bowl. Pour in some cooking wine. Spread several ginger slices and chopped spring onion. Brush light soy sauce onto wings. Marinate for around 1 hr.

3. Brush oil at the bottom of rice cooker. Spread several ginger slices and chopped spring onion. 

4. Put the chicken wings in. Close the lid. Press cooking button.

5. When the oil is dry, and wings’ downside is a bit burnt. Sprinkle in 1 tsp oil and 1 tsp light soy sauce.

6. When it’s dry again, add in 3 tsp water.

7. When the button jumps to keeping warm, flip the wings. And press cooking button again. Till the wings are done.

Cinnamon French Toast

Ingredients:

4 pieces of toast

2 eggs

80g milk

25g flour 

30g sugar

1/4 tsp vanilla

1 pinch salt

1 pinch cinnamon 
Except toasts, put all the ingredients in a large bowl and mix well.

Dip toast in the batter to let both sides be coated with batter.

Heat 1 tsp butter in the pan. Fry toasts till both sides turn golden brown.



Served with syrup. My husband loves it.

Easy Bread

Ingredients:

Bread flour 300g

Warm water 100g (original recipe said 37 – 40 degree C.)

Yeast 2 tsp (original recipe said yeast powder)

Sugar 10 g

Egg 1

Melted butter 25g

Salt 1/2 tsp

1. Add yeast into warm water till foam shows up. ( I followed it, but I didn’t see any foam. Maybe the temperature of my warm water was not high enough. But I still moved on).

2. Add melted butter and egg mixture into yeast water and stir well.

3. In a large bowl, mix flour, sugar and salt.

4. Add yeast water into flour. Fold flour into a big dough. (Original recipe said kneading for 10-15 mins) I kneaded it for around 15 mins.

5. Put dough in a large bowl, cover it with lid or plastic wrap till it becomes 2 times big.

6. Divide it into several small pieces and make it into shapes you like. (Original recipe said let them relax for 10 mins. But I forgot, so I skipped it).

7. Put them in the oven with a large bowl of hot water under the baking pan till they become 2 times big.

8. Preheat oven to 180 degree C. Bake for 20-25 mins.

They are perfect match for soup.

Peanut Butter Cookies

Ingredient:

Butter 120g

Peanut butter 120g

Sugar 100g

Brown sugar 100g

Egg 1

Vanilla 1/2 tsp

Flour 180g

Baking soda 3/4 tsp

Salt 1/4 tsp

1. Cream butter, peanut butter with sugar & brown sugar.

2. Beat in egg and vanilla. Mix well.

3. In a bowl mix flour, baking soda and salt. Then add flour mixture into butter mixture. Mix well.

4. Preheat oven to 190 degree C. Scoop dough and press into baking pan. Bake for 12 mins. 



Crunch outside but very soft inside. Even my husband doesn’t like peanut butter, he loves this cookie.
