Easy Version of Red Braised Pork Belly

This is the recipe I have tried so many times and never failed.

1, Put pork belly (around 500g) in a pot, add in enough cold water covers pork.

2, Also add in 1 tbsp cooking wine, 3 or 4 ginger slices. Bring to boil with high heat. Then turn to low heat and boil for 15 mins.

3, Rinse pork belly in water and wipe it with kitchen towl.

4, Cut into small pieces, like thumb size or a little bit bigger.

5, Heat a pan, Spray oil.

6, Fry pork belly pieces with low or medium heat till golden brown.

7, Put pork belly into pressure cooker, along with ginger slices, 1 bay leaf, 2 star anise, 2 tbsp light soy sauce, 1 tbsp dark soy sauce, and 1/2 1 tbsp sugar. Add in hot water to cover all the ingredients. (Light soy sauce, dark soy sauce and sugar are essential. You can just leave the rest ingredients if you don’t have.)

8, Cook in pressure cooker for 20 mins.

9, Transfer everything into a pan. Reduce the sauce with high heat.

This red braised pork belly is literally rice killer, cos it’s a perfect match with rice.

Black Vinegar Pork Trotter 猪脚醋

1, Prepare pork trotter (cut into smaller pieces), around 200g ginger, black sweet vinegar 750 ml, gula malaka (or white sugar) 200g, cooking wine 2 tbsp, Sesame oil 1 1/2 tbsp, boiled eggs.

2, Put pork trotter into a pot, add in enough water that can cover all the pork trotter. Also add in ginger slices (around 20g) and cooking wine.

3, Bring to boil with high heat and keep boiling for 15 mins.

4, Rinse pork trotter with water and drain.

5, Heat a pan, add in sesame oil. Put in the some ginger slices and stir fry till aromatic.

6, Add in pork trotter pieces. Stir fry till slightly golden brown.

7, Put all the pork totter and the rest ginger into pressure cooker. Pour in black vinegar and add in gula malaka/ sugar.

8, Set cooking time 40 mins.

9, Transfer everything into pot, add in hard-boil eggs (shell-removed). Boil for another 10-15 mins.

10, You can add in more sugar to make it less sour according to your preference.

Will taste better if keep them in the fridge overnight.

Pizza with Homemade Pizza Sauce

1, In a big bowl, add in flour, yeast, and a bit olive oil. Water in, stir and knead to make a dough. Cover it with a towel and let it rise.

2, Prepare 2 big rotten tomatoes. Cut a cross at the bottom. Put them in a bowl and add in hot water. Let them soak for 2 mins and it will be more easily to peel them.

3, Cut tomatoes into small dices.

4, Heat a pan, add in olive oil.

5, Fry chopped garlic and onion till aromatic.

6, Add tomato dices in, sprinkle salt, black pepper and mixed herbs. Stir fry a bit.

7, Also add in 1 tbs tomato sauce.

8, Turn to low heat and let it simmer till tomatoes are fully cooked.

9, Press the tomato with spatula gently.

10, Keep heating with low heat and let the sauce to reduce till thickened.

11, Preheat oven with 220 degree C.

12, Press the dough into a big flat disc. Brush it with sauce evenly. Sprinkle cheese all over it.

13, Dough into the oven for 10-13 mins.

Braised Saba Fish

1, Cut saba fish into smaller pieces, which will be easier to cook.

2, Heat a pan on stove, brush a little oil. Non-stick pan will be easier to handle and keep the fish unbroken.

3, Put fish pieces into the pan, fry each side till a bit golden brown. Please be gentle when flip the fish.

4, Add in 2 tsp light soy sauce, 1 tsp dark soy sauce, 2 tsp sugar and warm water can just cover the fishes.

5, Bring to boil, then turn to low heat. Cover with lid and let it simmer for 10 mins.

6, Off the lid, and turn up the heat to reduce the sauce.

Serve with hot rice. Easy and yummy.

Black Pepper Sauced Chicken

1, Cut chicken at the chest middle bone. My chicken is about 800g.

2, Spread salt over both sides of the chicken.

3, Put chicken on the baking pan with skin side up. Put into the oven and turn to 170 degree C. Roast for 50mins.

4, Prepare sauce: 2 tbsp black pepper sauce, 1 tbsp tomato sauce, 1 tbsp sugar, 1 tbsp honey and 1 tbsp water.

5, Brush the chicken skin with sauce. Turn to 200 degree C. Roast for 10 mins.

6, Brush sauce again and roast for another 10 mins.

Very simple and yummy.

Sliced Pork Belly with Garlic Sauce (蒜泥白肉)

This dish is very simple.

1, Prepare pork belly with skin on, about 400g.

2, Boil some water, make sure it can cover the whole pork belly.

3, Put pork belly in, add in several ginger slices and 1 tsp cooking wine. Simmer with low heat for 20 mins.

4, Take pork belly out, put in a plate and let it cool down. And cut into slices.

5, Prepare sauce:

4 cloves of chopped garlic. (I stir fry it a bit in a pan with some oil, just to make it less pungent)

1/2 1 tbsp light soy sauce

1 tbsp sugar

1 chopped spring onion

1 tbsp water

1/2 tsp sesame oil

Mix all of them in a bowl.

You can pour the sauce over the pork belly slices or use it as dipping sauce and serve with pork slices.

I chose the first way.

Sweet & Sour Pork

This dish is based on fried pork (xiao su rou).

Ingredients:

lean pork 250g

starch 80g

eggs 2

salt 1/2 tsp

five spice powder  1/2 tsp

tomato sauce 4 tbsp

sugar 3 tbsp

vinegar 2 tbsp

water 2 tbsp

starch 1 tsp

 

  1. Cut pork into slices or strips. About 3-5 mm.
  2. In a bowl, add in starch (sweet potato starch would be the best choice, but I tried with corn starch and turned out not bad.) and beat in eggs. whisk till fully combined.
  3. Add in salt and spice powder. Stir well.
  4. Add pork slices into the batter. Stir to let them be fully covered with batter.
  5. Deep fry in oil till golden brown.
  6. To make them crispier, heat the oil and fry again. This step is optional.
  7. To make sauce: Heat a pan. Add in 1 tbsp oil. Then add in 4 tbsp tomato sauce. Stir fry to make tomato sauce fully mixed with oil. and color will be brighter. Add in 3 tbsp sugar, 2 tbsp vinegar and 2 tbsp water. Simmer with low heat. Dissolve 1 tsp starch in a little water and add into the sauce.
  8. Add fried pork into the sauce. Quickly mix well.

Black Pepper Sauced Chicken Leg

  1. Prepare a big chicken leg.
  2. Sprinkle salt and black pepper all over it.
  3. Preheat oven to 170 Degree C.
  4. Into the oven for 40 mins.
  5. In a small bowl, mix 1 tbsp black pepper sauce, 1/2 tbsp honey, 1 tbsp water and 1 tbsp sugar.
  6. Brush sauce onto the chicken.
  7. Turn oven to 200 Degree C. Bake for 5-8 mins.
  8. Then brush the sauce again, and bake for the last 5-8 mins.

Super easy.

Oyster Sauced Egg Tofu

  1. Cut egg tofu into slices about 1 cm thick.
  2. Roll tofu in potato starch.
  3. Heat a pan, add in oil. Fry tofu till the out layer becomes crispy and golden color. Then set them aside for later use.
  4. Heat the pan again. Add in 1/2 tsp oil. Saute 2 cloves of chopped garlic.
  5. Add in 1 tsp light soy sauce, 1/4 tsp dark soy sauce, 1 tsp oyster sauce and 1 tsp sugar. Stir evenly.
  6. Dissolve 1 tsp starch in 1 tbsp water and add into the sauce.
  7. Add tofu into the sauce. Reduce the sauce.
  8. Garnish with chopped spring onion.

Lemon Chili Sauce Chicken

1. Wash chicken clean. You can use chicken legs or chicken wings. I used chicken wings.

2. Enough water in a pot. Add in ginger slices, garlic cloves, bay leaf, lemon grass and a pinch of salt.

3. Put chicken into the pot. Bring to boil with high heat. Then turn to low heat and simmer for 15-20 mins or till chicken is fully cooked.

4. Soak chicken into cold water. Dry them and cut into smaller pieces.

5. In a small bowl, mix 1 tablespoon Thai chili sauce, 1 tsp lemon juice, 1 tsp honey and 1 tsp sugar.

Spread sauce over chicken.
