Laksa

Finally, I got the chance to cook Laksa at home. It all due to my husband. When we were shopping for groceries, he suddenly told me that he wanted to have laksa. He chose a pack of laksa paste and laksa noodles. We also bought bean sprouts and puff tofu yesterday. He was quite excited about the laksa I was going to cook.

The most important part of Laksa is the paste, which is made from all kinds of spices. I really don’t want to buy many kinds of spices and store in the fridge. Cos I’m pretty sure that I will forget about them and they just stay there and rot. So the most convenient way is what my husband did to buy Laksa paste from supermarket.

This is the one my husband chose.

Another ingredient may be time-consuming is prawn stock. Although the instruction on the package says you can just add in water. I still think prawn stock will be a better choice.

I used about 500 g prawns. Remove all the heads and shells (except the tail shell). Heat  a pan. Add in 1 tbsp oil. Put all the prawn heads and shells in. Stir fry till they all turn red. Pour in 4 cups water. Lid on. Simmer with low heat for 1 hour. When stock was on stove, my husband came to kitchen and said “it smells so so good”.

Blanch laksa noodles, bean sprout and fish cake in water for 2-3 mins. Then arrange them in a bowl.

When prawn stock is down, sieve the stock and get rid of all the shells.

Heat a pan. Put laksa paste in. Because there is too much oil in the paste, I poured some out. Stir fry the paste for a little while, till you can smell the aroma. Pour all the prawn stock in. I also added in 1 cup water, because prawn stock reduced during simmering. Bring the soup to boil. Add in prawns, clams and puff tofu. Boil for 2 mins. Pour in 200 ml coconut milk. Gently stir and simmer for another 3 mins.

Arrange prawns, clams and puff tofu over the noodles. Pour the soup over them.

My husband loves it very very much.

I also served it with a half-boiled egg.

Braised Prawns

  1. Clean prawns. Remove all the whiskers and intestine. Also make a cut at the back.
  2. Heat a pan. Add in oil. Fry prawns with low medium heat. Flip over to fry the other side till red oil comes out. Do the same to the other side. Then set prawns aside.
  3. Heat the pan again. Add in a little extra oil if needed. Saute chopped ginger, garlic and spring onion till aromatic.
  4. Add fried prawns into the pan. drizzle in a little cooking wine to remove the fishy smell.
  5. Put in 1 tbsp light soy sauce, 1 tbsp cooking wine, 1 tsp black pepper powder, 1 tbsp sugar. (you can mix all the sauce ingredients in a bowl before cook) .
  6. Turn to low heat and simmer for 3 mins.
  7. Reduce sauce with high heat. and ready to serve.

Prawn & Tomato Pasta

I really like this pasta. It’s creamy, easy and only needs one pot.

  1. Heat a little oil in the pan. Fry prawns or shrimps (remove head and shell first) till cooked. Put them in a plate and set aside for later use.
  2. Use the same pan. Saute 1 or 2 chopped garlic. Add in cherries tomatoes (cut into halves). Stir fry for maybe 2 mins.
  3. Pour in 2 cups water or stock or half stock and half water. Bring to boil.
  4. Pasta in. Cook according to the instruction. Mine needs 10 mins. Stir occasionally.
  5. Sprinkle in chopped parsley and cheese. Blend evenly.
  6. Add prawns in. Mix well.
  7. Season with salt and pepper.

Ginger & Garlic Prawn Stir-Fry

1. Clean Prawns. Remove head and shell. Wash them clean. Wipe them with kitchen towel to make sure they are very very dry.

2. Add 1-2 tablespoon corn starch into Prawns. Let the Prawns be coated with a thin layer of starch.

3. Heat some oil in the pan. Fry Prawns till the outside starch layer turns a bit golden brown. Take them out and set aside.

4. Use the same pan. Add in a little more oil if needed. Sauté chopped ginger, garlic and spring onion till aromatic. Add in 2 tsp light soy sauce, and 2 tsp oyster sauce.

5. Prawns in. Mix well with sauce. And it’s done.

Don’t throw away the prawn shells and heads. They can be used to cook prawn stock. Just heat a little oil in a pot. Add in all the shells and prawn heads. Stir fry till pink. Add in hot water. Cover the lid. Simmer with low heat for 2-3 hrs. Ideal stock to cook noodles or soup.

Bread Crumbs Prawn 避风塘炒虾

This is a very popular dish in China, especially in southern part. And I think it’s originated from Hongkong.

1. Prepare prawn. Remove the intestines with the help of toothpick.

2. Put Prawns in a bowl. Add in 1/2 tsp salt, 1 tsp white pepper powder and 1 tablespoon cooking wine. Marinate for 15 mins.

3. While the Prawns are marinated, you can prepare other ingredients: 3 cloves of chopped garlic, a little chopped ginger, 2 chopped red chili, 2 chopped spring onion and 1/2 cup bread crumbs.

4. Wipe the Prawns with kitchen towel. Mix them with 2-3 tablespoon corn starch. And let them be coated with starch.

5. Deep fry them till golden brown. Set aside.

6. Heat 2 tsp oil in the pan. Sauté ginger, garlic red chili and spring onion till aromatic.

7. Add in 1 tsp sesame oil, 1 tsp soy sauce, 1/2 tsp salt, 1 tsp black pepper, 2 tsp sugar and 1 tablespoon cooking wine. Stir to let the sauce reduce.

8. Add in bread crumbs. Stir fry to bring bread crumbs brownish.

9. Add all the fried prawns into the pan. Stir fry to mix them evenly.

Ready to serve.

My husband loves it very very much.

Butter Prawns

1. Prepare Prawns first. Remove the intestines and wash clean.

2. Put all Prawns in a big bowl. Add in 1 egg white and 2 tablespoon corn starch. Mix well.

3. Deep fry Prawns in oil till golden brown. Drain them.

4. Heat 1 tsp oil in a sauce pan. Add in 20g butter. When butter melts, pour in 2 egg yolks. Stir while pouring. Egg yolk will become shredded.

5. Add in red chili rings and curry leaves. Stir fry a bit.

6. Our all the fried prawns back to sauce pan. Mix well.

Serve hot.

Prawn & Bacon Pizza

For the pizza dough:

Simple Pizza

Preheat oven to 200 degree C.

1. Press pizza dough into a baking pan or a skillet.

2. Poke it with a fork for several times.

3. Brush it with tomato sauce.

4. Sprinkle mozzarella cheese.

5. Place several chopped bacon pieces over the pizza dough. Then spread shell-removes Prawns. I also added some pepper flakes.

6. Season with a little black pepper and mixed herbs.

7. Top with cheese.

8. Into the oven and bake for 15-18 mins.

Cheesy Butter Giant Prawn

1. Clean the scampi and cut in the middle of the belly.

2. Sprinkle salt and black pepper and let them stay for a while.

3. Heat a pan on stove. Add in 1 tablespoon oil. When it’s smoke hot. Put the scampi in.

4. Fry scampi till the shell turn pink.

5. Cut in 20 g butter and 3 minced garlic cloves. Sauté till aromatic.

6. Pour in 1/2 cup hot water. Cover the pan with lid and let the scampi simmer for 5 mins.

7. Take the scampi out in a plate. Add 1 pieces of cheese ( yes, I used the type for sandwiches and hamburgers). Turn to low heat. Keep stirring and reduce sauce to condensed.

8. Pour sauce over scampi. Garnish with parsley.

I have to say the sauce is perfect for bread.

Oven-roasted Scampi with Butter & Garlic

When my husband and I were in Bangkok, we had a very giant Prawn in a restaurant. And several days ago, we found such a giant Prawn in supermarket. So we bought two.

Preheat oven to 200 degree C.

1. Clean Prawns and cut them into halves. I didn’t cut them through just left a big cut on their belly.

2. Sprinkle salt and black pepper over Prawns.

3. In a small bowl, add in 10 g butter. Then use a garlic press to press 4 cloves garlic. Add in 1/2 tsp black pepper. Mix well.

4. Press butter garlic mixture into the cut on belly. Brush shell with a little honey.

5. Into the oven and roast for 15-20 mins.

Tom Yam Gong Soup

My husband and I had very good Tom Yam Gong Soup when we were in Bangkok. I really love it. Can’t wait to try after we come back.

I bought Tom Yam Gong paste from supermarket.

It’s a really quick soup.

1. Add 400 ml water in the pot. Add in chopped blue ginger and lemongrass. Bring to boil.

2. Add in whole pack of Tom Yam paste. Also with a little coconut milk to reduce its spiciness.

3. Stir with low heat. When boil again. Add in Prawns and straw mushroom. Simmer for several mins till Prawns are cooked.

4. Add in chopped onion, red chili, coriander and squeeze in a little lime juice. Boil for another 1-2 mins.

Serve hot.

Nice soup.

If there is any soup left, don’t throw away. Pour it over cooked noodles. Very delicious!
