Korean Style Fried Chicken

My husband is a big fried chicken lover. He loves all kinds of fried chicken, American style, Japanese style, or Korean style. Or maybe he just loves chicken. As I mentioned before, every time when I ask him what he want for lunch, his answer is always Teriyaki Chicken. I don’t know if there is a special setting in his brain. He just pushed that “my wife asks my opinion on the meal again” button, and his mouth just opened and spited the word “Teriyaki Chicken” out. Actually, most time I just ask him, but whether adopting his opinion or not is another thing. ๐Ÿ™‚

Back to the fried chicken. ๐Ÿ™‚ I found a pack of chicken drumsticksย  in the fridge. To me, chicken drumsticks are ideal to cook fried chicken. Since they are not so skinny as chicken wings or not so hard-to-cook as chicken legs.

  1. Wash chicken drumsticks (my pack contains 8 ) clean and drain them.
  2. Put all the drumsticks in a big bowl. Sprinkle 1/2 tsp salt and 1/2 black pepper. Also chop a small piece of ginger and add in. Mix them well.
  3. Roll drumsticks in potato starch. Let each one be coated with a thin starch layer and shake off the excess.
  4. Prepare frying oil. I didn’t measure the temperature of the oil. I just grab the bone end of one drumstick and slightly dip it into the oil. If a lot of bubbles show up around it and you can hear the sizzling, the temperature is OK. Gently slide the drumstick into the oil. For the whole frying process, I keep the low-medium heat. To make sure chicken is cooked thoroughly,ย  frying may take 10-13 mins.
  5. Heat up the oil and fry again to get crispy out layer and golden brown color.

After frying twice, the outside shell is very hard.

Next step is to make sauce:

Heat a pan. Add in 1/2 tablespoon oil. Saute 2 or 3 chopped garlic cloves. If you want your chicken to be spicy, add in a little chopped dried chili. Then add in 1/4 cup soy sauce, 1 1/2 tablespoon honey and 1 tablespoon vinegar. Turn to low heat and reduce the sauce a bit.

Add all fried chicken into the sauce. Stir to mix them well.

Chicken will be coated with sticky and shiny tasty sauce.

My husband cannot stop licking his finger.

I was thinking maybe someday if I don’t want to do what I am doing now, I can open a fried chicken restaurant to make money instead. :p

Janpanese Style Fried Chicken Recipe

1. Prepare a boneless chicken leg. Cut it into medium pieces.

2. Place chicken in a bowl. Add in 1 tablespoon light soy sauce, 1 tablespoon sweet cooking wine, 1 tsp salt, 2 tsp minced garlic and 1 tsp minced ginger. Mix well and marinate for about 30 mins.

3. Pour the marinade out. Beat 1 egg into the chicken. Mix by hand to let chicken be coated with egg.

4. Add in 2 tablespoon starch and 1 tablespoon flour. Mix well.

5. Deep fry flour-coated chicken till golden brown.

6. Turn up the heat and fry again to make them crispier.

Serve with lemon.

Roasted Chicken That I Have No Idea How Many Times I have Tried

I have tried roasted chicken in many different ways so many times that I cannot even count.

But I guess as long as my husband loves roasted chicken, I will never stop my way of exploring. Since he will never be fed up with roasted chicken, so I guess I will just keep on trying.

1. Prepare herbs, I chose rosemary and thyme. You can also use fresh herbs.

2. Stuff a pieces of butter under the skin on chicken’s breast with chopped herbs.

3. Sprinkle salt and olive oil all over the chicken and inside too.

4. Preheat oven to 200 degree C.

5. Place chopped onion in the baking tray.

6. Place a lemon inside the chicken. Tie the chicken with kitchen twine.

7. Roast chicken for 50-60 mins.

Chicken will be beautifully brownish colored. Remove the kitchen twine. Cut chicken into pieces. Squeeze lemon to let lemon juice with juice in the tray. Heat a bit to reduce sauce. Drizzle sauce all over the chicken.

Cabbage Chicken Roll

1. Prepare fillings:

Minced chicken 100g (u can also use minced pork or beef)

1/2 diced onion

2-3 chopped Shiitake mushroom (optional)

Salt and pepper

Mix all the ingredients well in a bowl.

2. Prepare 6 -8 cabbage leaves.

3. Soak cabbage leaves in hot water till softened.

4. One roll needs 2 cabbage leaves. Place 1 cabbage leaf on the table. Put a spoonful filling at one end. Then roll to the other end. Put the roll on one end of another cabbage and roll again. I made 3 big rolls with 6 cabbage leaves. You can also make it into 4 small ones.

5. For the sauce, I made from fresh tomato. You can also use canned tomato chunks.

Cut a cross at the bottom of tomato (2 medium ones). Soak in hot water for a little while. Peel them off. Chop into small chunks.

6. Heat a pan or a pot. Add in a little oil. Sautรฉ 2 chopped garlic. Add the tomato in. Sprinkle a little salt. Stir fry till softened and juice comes out. Add in 1 tablespoon tomato sauce and 1/2 tablespoon sugar to balance the sour taste. Also add in a little dried oregano or herbs you like.

7. Pour in 1/4 cup water. Stir well.

8. Place cabbage rolls in. Turn to low heat. Cover the lid. Simmer for 10 mins.

9. Flip the rolls over. And simmer for another 5-8 mins.

10. Season with salt and pepper.

I think it will go well with pasta.

Roti John

It’s like a egg meat sandwich.

Ingredients:

Minced chicken 100g (season with salt and pepper)

Bun (I chose hotdog buns, you can choose baguette or any other bread you like)

Eggs 2

Chili sauce 1/2 tablespoon

Butter

Salt

Black pepper

Slices of 1/2 onion

1. Cut 2 hotdog buns into halves, don’t cut through.

2. Heat a pan. Add in a little butter. When melted, place buns in with cut side down to fry a bit.

3. Heat pan again. Add in a little extra butter. When melted, sautรฉ onion till transparent. Add in minced chicken. Stir fry till chicken gets white.

4. Beat 2 eggs in a bowl, add in 1/2 tablespoon chili sauce and a little salt to taste.

5. Pour egg into the pan to mix with chicken and onion.

6. Place 1 bun with cut side down onto the egg. Turn to low heat. Tuck the egg under the bread. When egg is cooked, take the bun out with the help of spatula.

7. Put 2 slices of cheese onto the egg & meat filling. Then place the other bread on the top also with the cut side down.

8. Heat the pan. Melt a little better. Put the bread sandwich in. Fry each side till crispy or golden brown.

Cut into small pieces and serve hot.

Tomato Sauced Chicken Chop

When I am in a rush or just feel lazy, I always make chicken chop or pork chop for lunch. They are very easy and not time-consuming and perfect to go with rice or pasta. Simple and quick! My husband is not picky about food. As long as there is meat or egg, he will be very happy. ๐Ÿ™‚

1. Cut one whole chicken breast into halves. Use a knife to cut several times horizontally and then vertically. Don’t cut them through. Just make several light cuts, so chicken won’t shrink during frying.

2. Sprinkle salt and black pepper over both sides.

3. Prepare 1/2 cup flour, mix with one pinch salt and one dash black pepper. And one beaten egg in another bowl.

4. Roll chicken in flour then dip in egg then flour again. Deep fry till golden brown.

5. Heat a pan, cut in 1 tablespoon butter. When butter melts, add in 1 tablespoon flour. Stir them well and add in 1 tablespoon tomato sauce. Mix them well. Pour in 1/4 cup water or stock. Also add in 2 tsp sugar to balance the sour taste of tomato sauce. Reduce sauce to condensed. Pour over chicken chop.

Actually, sauce also makes pasta tasty and yummy.

Honey Garlic Chicken

My husband calls all meat with dark sauce “Teriyaki”. I found it because 2/3 of times when I asked him what he wanted for lunch, his answer would be ” teriyaki chicken or teriyaki pork”. He doesn’t pay much attention to how I cook the meal or sometimes I doubt he even doesn’t know what I feed him. :p

This dish is not difficult to cook.

1. Prepare chicken. I used cutter half chicken. You can use chicken drumstick, wings or thighs. Sprinkle salt and pepper over both sides.

2. Heat a pan. Add in 1 tablespoon oil. Fry chicken till golden brown skin.

3. Add in 3 tablespoon chopped garlic. Stir fry till aroma. Then add 1/4 cup honey. Stir well.

4. Add 1/4 cup chicken stock, 2 tablespoon vinegar, 1 tablespoon light soy sauce and 1/2 tablespoon dark soy sauce. Mix well. Cove the lid and simmer for 15-20 mins.

5. Turn up the heat and reduce the sauce. Sprinkle a little white sesame.

Garnish with chopped spring onion before serving. Perfect to go with rice.

Teriyaki Chicken Pizza Recipe

2. Prepare a whole boneless chicken leg. Cut it into small chunks.

3. Heat a pan. Add in a little oil. Sear the chicken till brownish.

4. Add in 1 tablespoon light soy sauce, 1/2 tablespoon mirin (Japanese sweet cooking wine), 1/2 tablespoon dark soy sauce, 1 tsp sugar, 1 tablespoon honey. Mix chicken well with sauce.

5. Pour in 1 cup hot water. Simmer chicken for 10 mins.

6. Set chicken aside. Turn to high heat. Reduce the sauce till very thick. You can add in a little starch water to help. The. The teriyaki sauce is done.

7. Brush pizza dough with teriyaki sauce. Sprinkle cheese. Then chicken and vegetable. At last another layer of cheese.

8. Into 200 degree C oven for 10 mins or till cheese melts.

My First Try On Nasi Lemak

Nasi Lemak is a Malay dish. When I first came to Singapore, I tried it. But didn’t have any deep impressions on it. The specialty of it lies in rice, which is cooked with coconut milk. But when I had it before, rice was cold, so I couldn’t taste the fragrance of coconut milk.

The other day, I tried cooking rice with coconut milk, the rice turned out very nice. So I bought pandan leaves, lemon grass, sambal chili sauce and decided to cook my first nasi lemak.

Rice part:

1 cup rice ( I used the ones with some brown rice mixed in)

70 ml coconut milk

1 1/2 cup water

1 stalk pandan leave (make into a knot)

1 stalk lemon grass (pat lightly with knife)

1/2 tsp salt

Put all the ingredients above into rice cooker and press the cooking bottom. Trust me your kitchen will smell so so good.

For side dish, I chose to fry yellow strip fish (kuning) and chicken wings. Also served with peanuts, anchovies, egg and cucumber.

Place Yellow strip fish in a bowl, sprinkle salt and white pepper.

Put chicken wings in a big bowl, add in 1/2 tsp salt, 1/2 tsp whit pepper, 1/2 tsp chili powder, 1/2 tsp ground ginger, 1 tablespoon corn starch, 1 tablespoon rice flour and 50 ml coconut milk. Mix well and marinate for a little while.

1. Heat a lot oil in the frying pan or pot. Add in dried anchovies, fry till golden brown. Dish them out. Fry peanuts till aromatic and brownish.

2. Fry yellow strip fish with low heat. Dry the fish before frying. Be careful of the hot oil. Frying fish till bone is also crispy. (My husband loves crispy fried yellow strip fish).

3. Last fry chicken wings. Also use low heat. Fry chicken till golden brown.

Spread a banana leaf over the plate. Place rice in the middle.

Around rice, place fried fish,

Serve hot. That’s also very important.

Here is the first nasi lemak I cooked. My husband was astonished when I brought the plate in front of him. He loves it very very much. He said it’s the best nasi lemak he ever had. ๐Ÿ™‚

I also love it. Now I finally realize why nasi lemak is a popular dish here in Singapore. Rice is very rich, full of coconut fragrance. I just can’t stop having it. I also very like sambal chili sauce. It’s very different from Chinese mala chili sauce. It tastes a bit sweet and its spicy is perfect. I also ate all the sambal chili sauce on the plate. ๐Ÿ™‚

Meat Ball With Running Egg

When I made wantons in the morning, some filling was left. And I didn’t have any plan to make more wantons, so I used those left minced chicken filling to cook this dish. I know there is a Scotch Egg. But I kind of cook it in a different way, especially the meat part. So I just called it “Meat Ball With Running Egg”. ๐Ÿ™‚

Original wanton filling is : 200g minced chicken, 5 chopped Shiitake mushroom, 4 chopped water chestnuts, 1 tablespoon light soy sauce, 2 tsp oyster sauce, 1 tsp salt, 1 tsp black pepper, 1/2 tsp minced ginger.

There was about 1/4 left. To add more flavor to the meat part, I also add in 2 tablespoon shredded mozzarella cheese, and 1 tablespoon chopped spring onion.

For the running egg. Boil some water ( doesn’t need to cover eggs, because eggs can be steamed too). When water boils, add in eggs. Cover the lid for 5 mins. Mine are cooked for 5 mins. If you want egg yolk to be more solid, you can cook 1-2 mins longer. Soak them into icing cold water immediately. Later remove the shell.

Divide meat into two balls. Place one meat ball on a plastic wrap, cover it with plastic. Use a rolling pin or palm to flatten it into a disc. Place egg in the center. Gently wrap egg with meat. Twist plastic wrap to make it into ball shape.

Roll meat ball in bread crumbs. Deep fry for about 5 mins or till golden brown.

Cheese is actually not a good choice to add in. Because when cheese melts, it leaks out easily. And the meat ball will stick to the bottom of frying pot. I have to be very very careful to separate meat ball from the pot. But, this dish is still very nice.

Look at these round and fat meat balls. Here comes the best part. Just take a knife and cut it into halves. Wow, running egg yolk burst out. YUM!

My husband loves it very very very very much. He said this dish combined egg and meat, it’s literally combined his two favorite ingredients.
