Garlic & Butter Prawns

Preheat oven to 200 degree C.

1. Cleans prawns and make a cut at their belly. And place them in the baking pan with belly side up. You can brush some oil in the ban or just place a sheet of baking paper like I did.


2. For the sauce:

Minced garlic (7 or 8 cloves)

Melted butter (3 tsp)

Lemon juice (half)

Olive oil ( 3 tsp)

Salt

Black pepper

Mix them in a bowl.

3. Pour sauce over prawns.

4. Add boiled corn and pan-fried sausage if you like in the baking pan.

5. Put baking pan into the oven. Bake for around 10 mins. 

Sprinkle parsley and serve.

Cheesey Croquette 


1. 2 medium potatoes peeled and cut into small pieces.

2. Boil or steam till done.

3. Put frozen carrot dices, corns and sweet peas in boiling water for several seconds. Then take out and drain.

4. Mash potato pieces in a bowl. Add in carrot, corn and sweet peas. Stir well.

5. Sprinkle salt and black pepper. Stir evenly.

6. Put a spoonful of mashed potato in hand. Add in some cheese. Then wrap it up and make into round shape.

7. Coat rounds with a thin layer of flour, then egg mixture and bread crumbs at last.

8. Fry in the pan till golden brown. I just shallow fried them.



Served with sauce you like.

Mushroom, Corn & Bell Pepper Pizza

Ingredients:

Mushroom (put in boiling water for 2 mins. Take out. Drain and squeeze the water out)

Frozen corn kernel ( put in the boiling water for 1 min. Take out. Drain and squeeze the water out)

Bell pepper ( chopped into small pieces)

1. Poke the pizza dough with a fork for several times.

2. Brush pizza dough with creamy pizza sauce.

3. Sprinkle corn kernels and mushroom. Then spread bell pepper on them.

4. Sprinkle some black pepper. 

5. Spread cheese on the top.

6. Preheat oven to 230 degree C. Bake for 10 mins.

Creamy Corn Soup

Ingredients:

Butter 20g

Flour 3 tsp

Frozen corn kernels (as much as you like)

Water

Cream 3 tsp

Onion bits

Salt 

Black pepper
1. Heat butter in the pan. When it’s melted, add in flour. Quick cream flour with butter.

2. Add in onion and corn kernels. Stir fry a bit. Pour in water covers all ingredients. Simmer for around 10 mins. (I also add in several shrimps.)

3. Add in cream and stir well. Season with salt and black pepper.


It’s a ideal bread dip.

3 Different Kinds of Rib Soup

Ribs can be stir fried, braised, steamed and also used to make soup.

 Ribs, carrot and corn soup.


This is my husband’s favorite.

1. Ribs in the pot with cold water. Turn to medium heat. When the water boiled, remove the foam on the surface.

2. Put in corn. Cook for 30 minutes with low heat. 

3. Add in carrot, and cook till carrot gets softened.

4. At last add some salt.

Carrot and corn will make the soup a little sweet. It’s really a healthy soup.
Ribs and water cress soup.


First step is same as above.

After water gets boiled and foam removed, turn to low heat. Put in some wolf berries and cook for at least 20 minutes.


Then put in water cress. I used half a pack. 

When water cress is done, the soup is done.

Wolf berries are good for eyes. Recently, there is haze in Singapore, this soup is a good choice in such situation.
Ribs and lotus root soup.


First step also as same as above.

After foam removed, put in chopped clean lotus root pieces. Cover the pot with lid. Turn to low heat. Cook till lotus root is done. Last, sprinkle some chopped spring onion. 

Lotus root will help to clean waste in human bodies, so it’s also a good choice in haze days.
