Japanese Chashu Pork

Pressure cooker makes this dish a lot easier to make.

  1. Prepare a pork belly with skin on, about 500 g.
  2. Roll it up from one side to the other. Tie it with kitchen twine very tight.
  3. Put pork in a deep pot, add in enough water. Bring to boil and cook for 10 mins.
  4. Rinse pork in water to wash off all the dirt.
  5. Put pork into pressure cooker. Add in 1/2 cup light soy sauce, 1 cup water, 1/2 cup mirin, 1/4 cup cooking wine, 1/4 cup dark soy sauce, 5 ginger slices, 1 stalk of chopped green onion.
  6. Cook in high pressure for 20 mins.
  7. Rotate the pork and cook for another 20 mins. Then rotate again and cook for last 20 mins.
  8. Take the pork out into a container. Pour the sauce in. Soak pork in the sauce. You can also add in boiled egg.

Put into fridge for hours or overnight.

Cut into slices and serve with chopped spring onion.

Pork Intestine Stir-fry (溜肥肠 Liu Fei Chang)

I know many people don’t eat pork intestines. But I like them.

Cleaning pork intestines may be a bit time consuming. Yet when you taste the dish after cooking, all the work is totally worth it.

  1. Remove the fat inside pork intestines. Just to make this dish a bit healthier.
  2. Put intestines in a big bowl, wash several times in water.
  3. Sprinkle salt and add in 2 tbsp vinegar. Wash and rub it for about 10 mins to remove all the dirt and the not-so-good smell.
  4. Wash clean in water again.
  5. Cut into rings.
  6. Add in light soy sauce to marinate them.
  7. Dust with starch.
  8. Deep fry till golden brown color with low-medium heat.
  9. Heat some oil, Add in chopped onion, garlic, and green chili. Stir fry till aromatic.
  10. Add in fried intestines and stir fry evenly.
  11. Add in 2 tsp light soy sauce, 1 tsp oyster sauce, 1/2 tsp dark soy sauce, and 1/2 tsp sugar. Mix well.
  12. Reduce sauce with medium heat.

Kimbap (dried seaweed rice roll)

I made the very simple type with several regular fillings: egg, green vegetable, sausage, and carrot.

1, Beat 2 eggs in a bowl, add in 1 pinch salt, Stir well. Brush pan with oil. Heat it. Add in egg mixture and stir the pan to make a thin plat disk. Flip over when the down side solidifies. and fry for a little while. Cut the egg disk into strips.

2, Boil sausage in water till cooked. And cut into strips.

3, Blanch green veggies in water.

4, Stir fry carrot strips till a bit soft.

5, Put cooked rice in a big bowl, season with a little salt and sesame oil.

6, Put bamboo sheet at the bottom layer. Then dried seaweed over it. Rice on the bottom, and arrange egg, carrot, green vegetables and carrot, sausage over rice. Remember to leave 1/4 space of seaweed blank with no rice.

7, Roll it and squeeze hard at the same time till roll to the end.

8, Cut the roll into slices.

Serve with sauce you like.

Lime Chicken Salad

Ingredients:

chicken leg 3 about 700g

Small lime 10

chopped green chili 4 (you can use red chili too)

chopped garlic 4 cloves

light soy sauce 1/2 1 tbsp

sugar 1 tsp

salt 1/2 tsp

ice cold water

1, Put chicken into a pot, add in enough water. Bring to boil with high heat. Skim the soup and remove all the dirt. Turn to low heat and simmer for 40 mins.

2, Soak cooked chicken leg into ice cold water to let them cool down.

3, Squeeze 5 limes to get the juice and cut the rest 5 into slices.

4, Tear chicken leg with hand, remove the bone and tear chicken meat into small chunks.

5, heat a pan, add in 2 tsp oil. Saute chopped garlic and chili till aromatic.

6, add in light soy sauce, sugar and salt. When sugar is fully dissolved, off the heat and cool down.

7, Add lime juice into the sauce, mix well.

8, In a big bowl, add in chicken meat, sauce mixture and lime slices. Mix well.

Very refreshing for hot weather. My husband loves it.

Mango Sticky Rice

Finally I made one of my favorite dessert: mango sticky rice.

Ingredients:

Sticky rice 1 cup

coconut milk 2/3 cup

sugar 1/3 cup

salt 1/2 tsp

1, Wash sticky rice in water till water is completely clear. Soak them overnight.

2, Drain them and steam over hot water for about 30 mins.

3, When the sticky rice is about to be done, start to make the sauce.

4, Add coconut milk, sugar and salt into a pot. Turn to low heat, keep stirring till sugar is dissolved.

5, Put sticky rice into a big bowl, pour the sauce in. Stir slightly to mix them. Then cover the bowl and let it rest for about 20 mins. Rice will absorb the coconut sauce and flavor.

Fot topping:

1/2 cup coconut milk

1/4 tsp salt

1 tsp rice flour

1 tbsp water.

Heat a pot, Add in coconut milk and salt. Stir a bit. Dissolve rice flour in water and pour into the pot. Stir to reduce till the thickness you like.

In a plate, arrange mango slices, sticky rice. And topping on the rice.

Cooking for Charlie

I have several more recipes for homemade dog food.

  1. boiled sweet potato with dog food.

My dog Charlie actually doesn’t like his dog food very much. My husband and I tried several different types of dog food: chicken flavor, lamb flavor, salmon flavor. All end the same, he might like it at the first, then he loses interest. When I put dog food in his bowl, he just watches everything and sits still. If I ask him to come over, he will come and sniff. Then he just walks away. So I try to add flavor with boiled sweet potato or  pumpkin. He loves it and finishes them all.

Bad thing is he may poo poo a lot.

2, Lamb macaroni

I put lamb bone in a big pot. Add in enough water. Bring to boil with high heat. Skim soup and remove the dirt and fat. Slow cook for 40 mins. There is also some lamb meat on the bone. So I use the soup to cook macaroni. He loves it.

3. Boiled egg with dog food.

Charlie loved boiled egg. I guess he loves all the food except dog food. 🙂

I don’t want to give him too much egg, so i usually boil 1 egg and eat half. Mash the rest half and mix with his dog food. And i only give very little egg white to Charlie.

4, Bland rice and chicken.

Charlie got diarrhea several days ago. I stop giving him dog food and his treat. Instead I cooked rice and chicken for him. It’s super simple. I bough minced chicken. Put minced chicken with rice in rice cooker and cook them together. Or I used boiled chicken breast, Tear it into small pieces and mix with rice. Charlie soon recovers from diarrhea.

Cordyceps & Chicken Leg Soup

Ingredients:

1 big whole chicken leg

cordyceps 50g

red dates 3 (seed removed)

logan meat 1 tbsp

goji berries 1tbsp

  1. Put chicken leg into a pot. Add in enough water. Bring to boil with high heat.
  2. Skim the soup and remove all the dirt.
  3. Add in cordyceps, red dates and longan meat. Slow cook with low heat for 40 mins.
  4. Add in goji berries and cook for another 5 mins.
  5. Season with salt.

Super nice soup.

Oven Roasted Pig Feet

1, Wash pig feet clean. I bought the pig feet from supermarket and they were chopped already.

2, Put pig feet in a pot, add in enough water covers them all.

3, Bring to boil and boil for 8-10 mins.

4, Take out the pig feet, Wash off all the dirt.

5, Put pig feet into pressure cooker, Add in 1 tbsp rock sugar, 1 tbsp light soy sauce, 1/2 tbsp dark soy sauce, bay leaves, ginger slices, star anise and cinnamon.

6, Cook under high pressure for 40 mins. Pig feet will become very soft and juicy.

7. Preheat oven to 200 degree C.

8, Place pig feet in the baking tray with skin side up. Poke the skin with a fork and sprinkle chili powder, five spice powder and white sesame. and roast for 10-15 mins.

Pan Fried Mini King Oyster Mushroom

Because My mini king oyster mushrooms are not in unified size, so I cut the bigger ones into halves. You can also use normal king oyster mushrooms, just cut them into slices before cooking.

  1. Heat a pan, add in 1 tbsp oil.
  2. Arrange mushrooms in the pan in single layer. When the down side turns golden brown, flip them over.If you want to add more flavor, you can add in some chopped garlic and butter.
  3. When the other side also turns brown. Fry each side for another 2 or 3 mins with low heat.
  4. Season with salt and black pepper.

And done!

Easy Hotdogs

Main ingredients are bread, sausage, butter, and mayonnaise.

Just because the other day I bought 1 pack of bread, and later I forgot about it. So I tried this way to consume them.

  1. Boil sausage (mine are the frozen type bought from supermarket) in hot water for about 10 mins.
  2. Cut bread into halves, but not cut them through completely.
  3. Spread butter over the cut side.
  4. Pan fry bread with the butter side down till slightly golden brown.
  5. Also fry the sausage a bit with the same pan.
  6. Place sausage in between the breads.
  7. Add in the sauce you like. I chose mayonnaise.

It’s very simple. my husband like them.
