Cranberry Scones


I followed this video:

ingredients:

2 cups flour

1/3 cups sugar

2 1/2 tsp baking powder

1/2 tsp salt

1/2 cup butter

2/3 cup cranberry (I used dried cranberry)

2/3 cups milk

1 tsp vanilla
1. Mix flour, sugar , baking powder and salt in a large bowl.

2. Cut in butter. And use hands to make crumbs.

3. Add in cranberries.

4. Mix vanilla and milk together. Then pour mixture into the flour crumbs till it clings together.

5. Pat dough into a round one and cut into triangle shape.


6. Preheat oven to 200 degree C. Brush scone with milk.

7. Bake for 17 mins.


They taste really good. Crunchy outside but soft inside.

Brazilian Cheese Bread

I got the recipe from my English teacher. I changed the recipe a little bit.

Ingredients:

Water 45 ml

Milk 45 ml

Olive oil 45 ml

Tapioca flour 125 g

Salt 1 pinch

Half beaten egg

Grated Parmesan cheese 30 g

1. Boil water, milk, olive oil together with low heat. Once boiled, remove from the stove.

2. In a large bowl mix tapioca flour with water, milk & oil mixture. Mix them well.

3. Add in Parmesan cheese and knead again.

4. Last add in half egg.

5. Preheat oven to 200 degree C. Make batter into small balls. And place them on the baking pan.

6. Bake for 20 mins.

Mushroom, Corn & Bell Pepper Pizza

Ingredients:

Mushroom (put in boiling water for 2 mins. Take out. Drain and squeeze the water out)

Frozen corn kernel ( put in the boiling water for 1 min. Take out. Drain and squeeze the water out)

Bell pepper ( chopped into small pieces)

1. Poke the pizza dough with a fork for several times.

2. Brush pizza dough with creamy pizza sauce.

3. Sprinkle corn kernels and mushroom. Then spread bell pepper on them.

4. Sprinkle some black pepper. 

5. Spread cheese on the top.

6. Preheat oven to 230 degree C. Bake for 10 mins.

Spinach Bacon Pizza

For pizza sauce:

Small onion 1 (optional, if you don’t like, you can delete it.)

Butter 15g

Flour 15g

Milk 200g

Salt

Black pepper 

Mixed herbs (optional)

1. Heat butter in the pan. When it melts, put in flour. And quick stir evenly.

2. Add in chopped onion. Stir a bit.

3. Pour in milk. Turn to low heat. Keep stirring till sauce becomes condensed.

4. Sprinkle some salt, black pepper and mixed herbs.


The sauce is done.

I used 250g spinach. Cut off the root and wash clean. Put spinach in boiling water for around 40 seconds. Add in 1 tsp salt. Then take spinach out and drain.

After cooled, squeeze the water out of spinach. Try to squeeze very hard. After squeezing, chop the spinach into small pieces.
Brush the pizza dough with sauce. (Remember to poke pizza dough with fork before this step). Then sprinkle spinach and bacon bits. Last, spread cheese as much as you like.

Preheat oven to 230 degree C. Bake for around 10-12 mins.



My husband loves it.

Easy Thin Pizza


Pizza dough:

Bread flour   100g

Salt   1/4 tsp

Yeast   1/4 tsp

Olive oil   1/4 tsp

Water    60 ml

Mix all the ingredients together in a large bowl till they cling together into a dough.

Cover the bowl with a lid or a plastic wrap till the dough becomes 2 times big.

Knead it to let the air out. And use a rolling pin to stretch it into a big thin pizza dough.

Use a fork to poke several times on the dough. Brush the dough with tomato sauce. Sprinkle cheese as much as you like. And last spread several sausage slices or ham. If you like, you can also sprinkle some mixed herbs on it like I did.

Preheat oven to 240 degree C. Bake for 10 mins.


It’s a easy pizza to make and also yummy. 

Cranberry White Chocolate Chip Cookies

Ingredients:

Sugar 75 g

Brown sugar 25g

Margarine 120g

Egg 1

Vanilla 1/4 tsp

Cinnamon 1/4 tsp

Baking soda 1/4 tsp

Salt 1 pinch

Flour 70g

Oats 1 cup

Dried cranberry 1/4 cup

White chocolate chips 60g ( or as much as you like)

1. Cream butter with sugar & brown sugar.

2. Beat in egg and vanilla.

3. Add in cinnamon, baking soda, salt and flour.

4. Fold in oats, dried cranberries, and white chocolate chips. Press a spoonful better to the baking pan.


5. Preheat oven to 190 degree C. Bake for 10-12 mins.

Blueberry Coffee Cake

For the cake:

Butter 50g

Sugar 70g

Egg 1

Milk 60g

Flour 140g

Baking powder 1 tsp

Salt 1/4 tsp

Blueberry 1 small box ( because I only had 1 small box, which is around 120g. You can add more if you like rich blueberry flavor)

1. Mix flour, baking soda, and salt in a large bowl.

2. In another bowl, cream butter and sugar till creamy.

3. Beat in egg and vanilla.

4. Add in flour mixture and milk alternately till flour mixs in. Stir in blueberries.

Pour the batter into pan.

For the top:

Brown sugar 50g

Flour 3 tsp

Cinnamon powder 1 tsp

Butter 2 tsp

Combine all the topping ingredients in a small bowl (except butter). Cut in butter. And make them into crumb. Sprinkle over batter.
Preheat oven to 180 degree C. Bake for around 45 mins. Or when it can pass the toothpick test.

Easy Bread

Ingredients:

Bread flour 300g

Warm water 100g (original recipe said 37 – 40 degree C.)

Yeast 2 tsp (original recipe said yeast powder)

Sugar 10 g

Egg 1

Melted butter 25g

Salt 1/2 tsp

1. Add yeast into warm water till foam shows up. ( I followed it, but I didn’t see any foam. Maybe the temperature of my warm water was not high enough. But I still moved on).

2. Add melted butter and egg mixture into yeast water and stir well.

3. In a large bowl, mix flour, sugar and salt.

4. Add yeast water into flour. Fold flour into a big dough. (Original recipe said kneading for 10-15 mins) I kneaded it for around 15 mins.

5. Put dough in a large bowl, cover it with lid or plastic wrap till it becomes 2 times big.

6. Divide it into several small pieces and make it into shapes you like. (Original recipe said let them relax for 10 mins. But I forgot, so I skipped it).

7. Put them in the oven with a large bowl of hot water under the baking pan till they become 2 times big.

8. Preheat oven to 180 degree C. Bake for 20-25 mins.

They are perfect match for soup.

Lemon Pie

Crust:

Flour 140g

Sugar 40g

Butter 120g

Mix butter into flour & sugar till it clings together. Press into pan. Use a fork poke several times on it. Bake in the oven with 180 degree C for 20 mins till lightly brown.

Filling:

Egg 2 

White sugar 150g

Lemon juice 40ml

Flour 20g

Baking soda 1/4 tsp

1/4 lemon zest

Beat together eggs with sugar and lemon juice. Add in flour, baking powder and lemon zest. Mix well. Then pour filling over cooled crust.

Bake for 25mins with 180 degree C.

After it is done and cooled, sprinkle icing sugar.

Peanut Butter Cookies

Ingredient:

Butter 120g

Peanut butter 120g

Sugar 100g

Brown sugar 100g

Egg 1

Vanilla 1/2 tsp

Flour 180g

Baking soda 3/4 tsp

Salt 1/4 tsp

1. Cream butter, peanut butter with sugar & brown sugar.

2. Beat in egg and vanilla. Mix well.

3. In a bowl mix flour, baking soda and salt. Then add flour mixture into butter mixture. Mix well.

4. Preheat oven to 190 degree C. Scoop dough and press into baking pan. Bake for 12 mins. 



Crunch outside but very soft inside. Even my husband doesn’t like peanut butter, he loves this cookie.
