Cheesy Butter Giant Prawn

1. Clean the scampi and cut in the middle of the belly.

2. Sprinkle salt and black pepper and let them stay for a while.

3. Heat a pan on stove. Add in 1 tablespoon oil. When it’s smoke hot. Put the scampi in.

4. Fry scampi till the shell turn pink.

5. Cut in 20 g butter and 3 minced garlic cloves. Sauté till aromatic.

6. Pour in 1/2 cup hot water. Cover the pan with lid and let the scampi simmer for 5 mins.

7. Take the scampi out in a plate. Add 1 pieces of cheese ( yes, I used the type for sandwiches and hamburgers). Turn to low heat. Keep stirring and reduce sauce to condensed.

8. Pour sauce over scampi. Garnish with parsley.

I have to say the sauce is perfect for bread.

Fried Creamy Custard

It’s a very popular dessert in China. I remember I had it when I was very little. Crispy outside, creamy and soft inside.

Ingredients:

Milk 250g

Corn starch 30g

Sugar 25g

Put all these three ingredients in a sauce pan. Heat it and bring to boil. Turn to low heat. Keep stirring and it will become more and more condensed. When there is no flowing milk and bubbles start to come out, turn off the heat.

Prepare a container, line it with plastic wrap. Pour the custard inside. Flatten the surface with a spoon.

Cover the container with a lid and put into fridge.

When the custard is ready, it will be as firm as tofu. Cut it into shapes you like, cubes or long strips. Sprinkle flour over them. Make them evenly be coated with flour. Then dip in the egg and bread crumbs. Deep fry till golden brown.

Inside is soft like silky tofu. But it’s sweet, so it also tastes like ice cream.

It’s the first time for my husband to try it, he loves it very much.

Thin Tomato Pizza

Press dough into baking pan. Poke with fork several times.

Brush pizza dough with pizza paste and any paste you like. Sprinkle mozzarella cheese slices over it with cherry tomato slices.

It’s really easy and quick.

Preheat oven to 220 degree C.

Put pizza into oven and bake for 15-18 mins till cheese melts.

Seared Scallops

1. Thaw scallops. Wipe them with kitchen towel to absorb all the water.

2. Season them with a little salt and black pepper.

3. Heat a pan on stove. Add in a little oil. When the pan is smoked hot, place scallops in it one by one.

4. Fry for 2 mins. Then flip them in order too. The downside will be brightly brown in color. Cut in 2 Tablespoon butter.

5. Use a small spoon to scoop hot melted butter onto scallops. Fry for another 2 mins.

6. Sprinkle a little dried thyme and serve hot.

Quick Breakfast – Pancake

In a bowl, mix 90g flour, 1 tsp baking powder and 1 pinch salt.

Melt 15g butter in another bowl. Add in 20g sugar, 1 egg, 100 ml milk and 1/4 tsp vanilla in order. Add in new ingredient after previous ones mixed well.

Then add dry ingredients into butter bowl 1/3 at a time. Mix till just combine.

Heat a pan. Brush with oil. Scoop one spoonful batter into the pan. When many small bubbles show on the surface, flip it over. Fry till the other side turns golden brown.

Serve with maple syrup.

Fried Pork Slices in Sweet & Sour Sauce (Guo Bao Rou)

Guo Bao Rou is a classic dish in Notheastern Chinese cuisine. I still remember when going out with my friends to have northeastern cuisine, we would definitely order this Guo Bao Rou.

1. Cut pork into medium slices.

2. Sprinkle salt and a little black pepper. Mix them well.

3. In a small bowl, add in 100g starch (better be potato starch). Then add in water higher than starch. Stir well. Then let it rest for 10-20 mins. Starch will stay in the bottom layer and water in the upper.


Pour the water out.

4. Prepare carrot shreds, scallion shreds, ginger, and minced garlic.


5. Heat some oil in a skillet. Dip pork slices in wet starch and then dry starch. Gently put them in the oil. Deep fry till the shell becomes hard and lightly golden brown.

6. Leave a little oil in the skillet. Heat again. Put all the ginger, garlic, carrot and scallion into skillet. Sauté a bit.

7. Add in 50 g white vinegar and 50 g sugar. Stir gently to let sugar dissolve.

8. When the sauce starts to condense, add fried pork slices into skillet. Keep stirring to let each slice be coated with sweet and sour sauce.

When sauce almost dry, turn off the stove.

Serve hot.

Pork Chop With Plum Sauce

I think plum sauce is a good choice for pork due to its sweet & sour taste.

1. Sprinkle salt and black pepper over pork chop. Give pork a bit massage.

2. Heat oil in the pan. Fry pork chop till both sides turn golden brown.

3. Add in 2 or 3 garlic cloves. Fry for another 1-2 mins.

4. Put in 2-3 tablespoon plum sauce. Also pour in 3 tablespoon hot water.

5. Simmer pork chop for 2-3 mins. Turn to high heat. Reduce sauce till condensed.

Oven-roasted Scampi with Butter & Garlic

When my husband and I were in Bangkok, we had a very giant Prawn in a restaurant. And several days ago, we found such a giant Prawn in supermarket. So we bought two.

Preheat oven to 200 degree C.

1. Clean Prawns and cut them into halves. I didn’t cut them through just left a big cut on their belly.

2. Sprinkle salt and black pepper over Prawns.

3. In a small bowl, add in 10 g butter. Then use a garlic press to press 4 cloves garlic. Add in 1/2 tsp black pepper. Mix well.

4. Press butter garlic mixture into the cut on belly. Brush shell with a little honey.

5. Into the oven and roast for 15-20 mins.

Simple Cocoa Brownie

Butter 120g

Sugar 110g ( I reduced sugar, because I used Starbucks cocoa, which contains sugar)

Starbucks cocoa powder 55g

1/2 tsp vanilla

2 eggs

Flour 70 g

1/4 tsp baking powder

1/4 tsp salt

Almond ( optional)

Preheat oven to 180 degree C.

1. Melt butter in a bowl simmering in hot water.

2. Remove butter from heat. Add sugar, cocoa, vanilla and eggs alternatively. Add new ingredient after blend well.

3. Add flour, baking powder and salt. Mix till just combine.

4. Pour batter into baking pan. Spread almond on surface.

5. Bake for 20 mins. Check with a toothpick.

Cool down and cut into small pieces.

Tom Yam Gong Soup

My husband and I had very good Tom Yam Gong Soup when we were in Bangkok. I really love it. Can’t wait to try after we come back.

I bought Tom Yam Gong paste from supermarket.

It’s a really quick soup.

1. Add 400 ml water in the pot. Add in chopped blue ginger and lemongrass. Bring to boil.

2. Add in whole pack of Tom Yam paste. Also with a little coconut milk to reduce its spiciness.

3. Stir with low heat. When boil again. Add in Prawns and straw mushroom. Simmer for several mins till Prawns are cooked.

4. Add in chopped onion, red chili, coriander and squeeze in a little lime juice. Boil for another 1-2 mins.

Serve hot.

Nice soup.

If there is any soup left, don’t throw away. Pour it over cooked noodles. Very delicious!
