Creamy Mushroom Linguine

1. Heat a pan on stove. Add in 1 tablespoon olive oil.

2. When oil is hot, add in 2 cloves of chopped garlic. Stir fry till aromatic.

3. Add in 1 chopped small shallot. Stir fry till transparent.

4. Put in all the mushroom slices. Stir fry a bit. Turn to low heat, cover the lid. Juice will come out. Simmer for a little while.

5. Pour in 1/2 cup milk. Bring to boil. Zest in cheese. Stir to melt.

6. Season with salt, black pepper and mixed herbs.

7. Dissolve 1 tablespoon flour in a little water. Pour the flour water into pan. Stir to condense sauce.

8. Off the stove. Put in cooked linguine. Blend well.

White Radish Ge Da Soup

You can choose green radish as well.

1. Grate white radish into shreds.

2. Heat 1 tablespoon oil in the pot. Sauté dried shrimp, and chopped ginger. Then add in white radish shreds. Stir fry for a little while.

3. Pour in 2 cups hot water. Bring to boil.

4. Prepare 1/2 cups flour. Add in water while stir to make small lumps.

5. Add flour lumps into the soup. Stir to avoid sticking to the pot. Simmer for 2-3 mins.

6. Pour in 1 or 2 beaten eggs. Stir a bit.

7. Season with salt and sprinkle chopped spring onion.

Serve with 2 drops of sesame oil.

Stuffed Mushroom

My husband has a new hobby – gardening. He agreed to plant basil as I always use basil for cooking.

Today I asked him to cut off a little basil for me to cook pizza. He gave me a Bunch! So I used some of them to cook this stuffed mushroom.

Preheat oven to 170 degree C.

1. Prepare 200 g mushroom. Wash clean. Remove the stem. Don’t throw away stem. They can be used to make filling.

2. Chop stem into very tiny bites. Also chop 2 cloves of garlic.

3. Heat 1 tsp olive oil in the pan. Sauté garlic a bit. Add in stems. Sauté till aromatic.

4. Season with salt, black pepper and a little mixed herbs. Juice will come out from stem. Turn to low heat. Simmer a bit till it dries up.

5. Turn off the heat. Add in chopped fresh basil. Stir well. And the filling is done.

6. Put filling into mushroom with help of spoon. Press by finger.

7. Top with cheese.

8. Into the oven for 20 mins.

Braised Duck Leg

1. Wash two duck legs in water. Then wipe them with kitchen towel.

2. Heat a pot on stove. Sear the duck leg till brownish, because duck contains much fat.

3. Add in 2 tablespoon sugar, 1 tablespoon light soy sauce and 2 tsp dark soy sauce. Stir fry to let duck leg be coated with dark sauce.

5. Pour in enough hot water covers duck. Add in ginger slices, and star anise. Bring to boil. Then turn to low heat. Cover with lid and simmer for 1 hour.

6. Remove the lid. Turn to high heat to reduce the sauce.

Serve hot with white sesame and chopped spring onion.

Bread Crumbs Prawn 避风塘炒虾

This is a very popular dish in China, especially in southern part. And I think it’s originated from Hongkong.

1. Prepare prawn. Remove the intestines with the help of toothpick.

2. Put Prawns in a bowl. Add in 1/2 tsp salt, 1 tsp white pepper powder and 1 tablespoon cooking wine. Marinate for 15 mins.

3. While the Prawns are marinated, you can prepare other ingredients: 3 cloves of chopped garlic, a little chopped ginger, 2 chopped red chili, 2 chopped spring onion and 1/2 cup bread crumbs.

4. Wipe the Prawns with kitchen towel. Mix them with 2-3 tablespoon corn starch. And let them be coated with starch.

5. Deep fry them till golden brown. Set aside.

6. Heat 2 tsp oil in the pan. Sauté ginger, garlic red chili and spring onion till aromatic.

7. Add in 1 tsp sesame oil, 1 tsp soy sauce, 1/2 tsp salt, 1 tsp black pepper, 2 tsp sugar and 1 tablespoon cooking wine. Stir to let the sauce reduce.

8. Add in bread crumbs. Stir fry to bring bread crumbs brownish.

9. Add all the fried prawns into the pan. Stir fry to mix them evenly.

Ready to serve.

My husband loves it very very much.

Lemon Chicken Chop

1. Prepare a boneless chicken breast. Cut into two halves if it’s too thick. Pound chicken with the back of knife.

2. Marinate chicken with 1 tablespoon light soy sauce, 1/2 tsp salt, 1/4 tsp white pepper, 1 egg white and 2 tsp sesame oil for 20-30 mins.

3. Heat frying oil in the pot.

4. Coat chicken with corn starch and flour mixture. (Ratio of corn starch and flour is 2:1).

5. Fry chicken till golden brown. Set aside to cool down.

6. Heat 1 tsp oil in a sauce pan. Sauté 2 cloves of chopped garlic till aromatic.

7. Add in juice of 3/4 lemon and 1/4 cup water. Then 1 tablespoon honey and 1 tablespoon sugar. Bring to boil.

8. Add in lemon slices of the rest 1/4 lemon. Simmer the sauce till thickened.

9. Cut chicken chop into slices. Glaze with lemon sauce.

Curry Fish Balls

1. Heat 2 tsp oil in the pan. Sauté chopped garlic, chili and 1/2 onion till aromatic.

2. Add in 1 tablespoon curry powder, curry leaves. Stir fry a bit.

3. Add in fish balls and pour in enough water covers all ingredients.

4. Bring to boil. Turn to low heat and simmer for 10 mins.

5. Add in 1/4 cup coconut milk or milk. Simmer for another 5 mins.

6. Season with salt and sugar.

Pepperoni Pizza

Recently, we are really busy moving to a new house. A new house means a new kitchen to me. I am so excited that I will have new cooking equipment.

Our new oven is Bosch with 3D hot air.

The first dish I cook by it is pepperoni pizza. We were so exhausted and I thought pizza is a simple dish for me to prepare.

1. Prepare pizza dough, please refer to:

2. I made pizza sauce by myself with cherry tomatoes.

3. Preheat oven to 250 degree C.

4. Press pizza dough into baking pan. Brush pizza sauce over it.

5. Sprinkle a lot of cheese.

6. Place pepperoni pieces on the top.

7. Into the oven and bake for 7 mins.

Taste really good. I’m very happy with my new oven.

Yellow Braised Chicken (黄焖鸡 Huang Men Ji)

Huang Men Ji is a famous dish in Shandong cuisine. There are so many Huang Men Ji restaurants all over China. The full name is 黄焖鸡米饭, which means yellow braised chicken served with steamed rice.

1. Prepare chicken, cut chicken into small or medium chunks. In my hometown, chicken is usually chopped into small pieces, then got stir fried or braised.

2. Heat 1-2 tablespoon oil in a pot. (Authentic Huang Men Ji is cooked with clay pot.)

3. Add in 1 tablespoon sugar. Stir fry till sugar got melted and browned.

4. Put chicken into pot. Be careful of the hot oil. Stir fry to let chicken be coated with browned sugar.

5. Add in several ginger slices and dried chili rings. 1 tablespoon shaoxing wine, 1 tablespoon light soy sauce and 1/2 tablespoon dark soy sauce. Blend evenly.

6. Pour in enough hot water covers all chicken. Also add in Shiitake mushroom slices . (You can add a lot, because shiitake will become very yummy after braised.)

7. In with 2 tsp white pepper powder, 1 tsp salt. Put on lid. Turn to low heat and simmer for 25 mins.

8. Remove the lid. Turn to high heat. Reduce the sauce a bit.

9. Add in celery. Simmer for 2 mins.

10. Add in pepper. Simmer for another 2 mins.

Serve with rice.

My husband said it’s very similar to the one he had when he’s in my hometown. And it goes perfect with steamed rice.

Crispy Skillet Chicken Breast

1. Cut one whole chicken breast into two halves. Thinner chicken can be cooked easily. Sprinkle salt and black pepper on both sides of the chicken.

2. In a bowl, add in 1 cup flour, 4 tablespoon bread crumbs, a little salt, black pepper and mixed herbs.

3. Prepare 1 egg, and 3/4 cup milk in another bowl. Mix them well.

4. Dip chicken in flour mixture, then egg and flour at last. Shake off the excess.

Preheat oven to 220 degree C.

5. Melt 30g butter in skillet. Place chicken in side. Into the oven for 10 mins.

6. Flip over and bake for another 10 mins.
