Fish Maw Soup

In fact, I’ve never had fish maw before I came to Singapore. Fish maw is not that popular in my hometown as it is in southern part of China. The story began on one day, my husband received a CNY gift, which contained many traditional Chinese ingredients for CNY and that’s how we got a can of fish maw. Never cooked fish maw before. But I still wanted to give it a try.

Main ingredient of this soup is fish maw. To make the soup more tasty, I made some fresh chicken stock.

Just put a half chicken into a pot with some ginger slices. and cook for 2 hours.

Apart from fish maw, I also used clams. I guess seafood like shrimps and crab meat also goes well with this soup.

  1. Boil a pot of chicken stock.
  2. Take the fish maw out, drain and cut into smaller pieces. The liquid in the can is also edible, so I just poured everything (there are also some shiitake mushroom slices) into the pot.
  3. When stock boils, add fish maw in. Skim the soup when it boils again.
  4. Clams in and simmer for 5 mins.
  5. Dissolve 1 tablespoon starch in 2 tablespoon water. Pour starch water into the soup and stir evenly.
  6. Beat 1 egg into a bowl. Pour egg into the soup while stirring the soup.
  7. Boil for another minute and season with salt.

Soup is easy.

My husband loves it very much.

Oh. For the chicken I used to make chicken stock, It can be served as one dish. Just cut in into smaller chunks. Mix 2 tsp light soy sauce and 2 tsp sesame oil. pour the sauce over chicken.

Vegetable Soup

Before anything. Yeah! That’s a whole potato in the soup.

It’s a rally light and simple soup. And of course, it’s also healthy. Even my husband, a 100% meat lover, falls for this soup.

Ingredients (serving for 2)

potatoes 2 (peeled)

carrot 1  (cut into thick strips)

onion 1 (cut into quarters)

1/4 head of cabbage

celery 2 stalks

bacon 5 or 6 slices

salt

black pepper

stock 1 cup

water 2 cups

  1. Place peeled potatoes, carrot strips and onion quarters into a pot.
  2. Add in water and stock. (You can adjust water and stock according to your preference. You can even use all water or all stock). Also add in 1 pinch salt and 1 dash black pepper. Turn to high heat. Bring to boil. Turn to low heat. Lid on and simmer for 15-20 mins.
  3. Put celery strips, bacon slices and cabbage into the pot. Same procedure. Bring to boil with high heat and simmer with low heat for 25 mins.
  4. Season with salt and pepper.

It can be served with baguette or any bread you like.

Even though no sugar is added to this soup, it still tastes a bit sweet. I cooked this soup on my husband’s birthday. And served it with garlic bread. He really loved it.

Rib Soup Again! (with Lotus Root and Black Kidney Beans)

My husband is a crazy soup lover. Chicken soup and Rib soup are two kinds which I always cook for him.

This time, I tried to make soup with black kidney beans.

1. Soak kidney beans in advance. 2-3 hrs maybe.

2. Wash ribs under water over and over again.

3. Place ribs in a pot. Add in enough water. Bring to boil with high heat. Skim all the dirt.

4. Turn to low heat. Simmer for 30 mins.

5. Add in lotus root and beans. Simmer for another 30 mins.

6. Seasons with salt.

Mixed Mushroom & Tofu Soup

This post is actually connected to the last one (egg stuffed mushroom).

Egg Stuffed Mushroom

Because I Scratched off the black gills of portoballo mushroom. Didn’t want to throw them away. So I came up with this soup.

  1. heat a pan. Saute 1 chopped garlic.
  2. add in black gills. The whole kitchen will smell great.
  3. add in shiitake mushroom slices. Stir fry a bit.
  4. pour in 1 cup stock. Also add in brown mushroom. Bring to boil then turn to low heat and simmer for 5 mins.
  5. cut in tofu cubes. Simmer for  another 5-8 mins.
  6. season with salt and garnish with chopped spring onion.

Very easy and nice soup.

Corn Soup

1. Cut all the kernels from a fresh corn.

2. Put corn in a pot. Add in 1/2 cup milk. Bring to boil then turn to low heat and simmer till corn is cooked.

3. Pour all the corn with milk into a blender. Blend till smooth.

4. Pour back to pot. Turn to low heat. Keep stirring while heating. Bring soup to boil again.

5. Season with salt and pepper.

Healthy Bean Soup

It’s a soup made of different kinds of beans. It’s very healthy.

There was a period of time, I cooked regularly. My husband’s grey hairs became much less. Recently, I decided to cook it again.

Main ingredients are beans. I measured with my own hands.

Ingredients:

A handful of Red beans

A handful of Kidney beans

A handful of red kidney beans

Half handful of Barley

Soak all the ingredients above for overnight. Barley belongs to cold food, so it should’t be used less.

When cook it, also add in

Half handful of black sesame

Half handful of walnut

6-8 red dates (cut a bit)

Some Chinese yam (Huai Shan, peeled and chopped)

Black sesame is good for hair. Walnut is good for brain. Red dates are good for skin.

Put all ingredients in a deep pot. Pour in enough water, cos it will take at least 2 hours.

My husband hates the beans. He just eats walnut, Huai Shan, drink the soup and leave all the beans. So I put a lot of water into the pot. Otherwise, the soup will be very thick. Of course, if you are Ok with it, you can add less water.

I cooked it for 3 hours. If you want it to taste sweet, you can add in sugar.

Chicken Shrimp Wanton Soup Recipe

My husband is big fan of Wanton noodles. When we were in a short trip in Penang, we had very nice wanton noodles at a street stall. He seemed to be addicted to wanton noodles. So after we came back in Singapore, I think I can work a bit on wanton recipe.

This time, I used minced chicken instead of minced pork.

For wanton filling:

Minced chicken 200g

shrimps (no shell) 200g ( I put at least 1 whole shrimp in each wanton. You can coarsely chop the shrimps and use less)

Shiitake Mushroom 4 chopped

Water chestnuts 8 ( 3 were blended into paste and the other 5 are chopped into coarse mince)

Chopped ginger 1/2 tsp

Five spice powder 1/2 tsp

Light soy sauce 1 tsp

Salt 1 tsp

Oyster sauce 1 tsp

Black pepper 1/2 tsp

Water 1 tablespoon

Mix all the ingredients above in a big bowl. Stir with chopsticks to combine them all.

Wanton wraps were bought from supermarket.

These are the wantons I made them in gold nugget shape. I made many and put them in a box then put into freezer. So it will be convenient when my husband wants to have wanton. Just take them out from fridge and boil for 8 mins.

Boiling them needs about 8 mins. Place them in chicken soup ( which was made by a whole chicken leg and simmered for at least 30 mins). Garnish with chopped spring onion.

You can see the shrimp inside. Soup is also very nice.

Trotter & Soy Bean Soup

My husband suddenly mentioned collagen the other day. Trotters came to my mind immediately. So I decided to cook this soup. A very classic Chinese trotter and soy bean soup.

It’s a very simple but time-consuming soup.

  1. Wash trotters in water and remove the hair.
  2. Soak soy beans in advance for 2 or 3 hours at least.
  3. Place trotters, soy beans, ginger slices, in a pot. Add in enough water.
  4. Turn to high heat, bring it to boil first. Skim the soup. And simmer with low heat for 2 hours at least.
  5. Season with salt and garnish some chopped spring onion.

I used the rice cooker’s soup function and simmer it for over 4 hours. It turned out amazing.

Soup is sticky and rich. Meat can easily fall off from the bone. My husband drank a whole big bowl of soup very fast. He couldn’t stop and kept saying “delicious”.

Clams & Tofu Soup

A very nice and easy soup.

1. Wash clams clean in water.

2. Place clams in a pot. Add in ginger slices and a little salt and water. Boil till all the shells open. Skim the stock. Take all the clams out in a bowl. And set stock aside.

3. Cut bacon into small pieces. Heat a pan. Stir fry bacon till aromatic.

4. Pour the stock in. Bring boil.

5. Add in tofu chunks. Boil for 3-5 mins, depending on the size of tofu.

6. Add the clams in. Bring to boil again. Season with salt.

Serve hot.

Top with chopped spring onion.

White Radish Ge Da Soup

You can choose green radish as well.

1. Grate white radish into shreds.

2. Heat 1 tablespoon oil in the pot. Sauté dried shrimp, and chopped ginger. Then add in white radish shreds. Stir fry for a little while.

3. Pour in 2 cups hot water. Bring to boil.

4. Prepare 1/2 cups flour. Add in water while stir to make small lumps.

5. Add flour lumps into the soup. Stir to avoid sticking to the pot. Simmer for 2-3 mins.

6. Pour in 1 or 2 beaten eggs. Stir a bit.

7. Season with salt and sprinkle chopped spring onion.

Serve with 2 drops of sesame oil.
