One-pot French Beans & Noodles

Ingredients:

French Beans / Long beans 200g  (trimmed and cut into shorter pieces)

pork belly 200g (cut into slices)

fresh noodles 300g

garlic 3 cloves (chopped)

light soy sauce 1 tbsp

dark soy sauce 2 tsp

oyster sauce 1 tsp

sugar 1 tsp

water 1 cup

 

1, Heat a pan, Add in 2 tsp oil. Fry pork with low medium heat to sear out the fat till the edge turns slightly golden brown color. Set pork aside for later use.

2, Use the same pan (with the remaining oil), stir fry garlic till aromatic.

3, Add in French beans, stir fry for about 2 mins.

4, Add all the pork back into the pan. Stir fry for another min.

5, Add in light soy sauce, dark soy sauce, oyster sauce and sugar. Stir fry evenly.

6, Pour in water.

7. Bring to boil with high heat. Pour out 1/3 of the stock.

8, Lid on and simmer with low heat for 3 mins.

9, Spread noodles over pork and beans. Cover with lid and simmer for 3 mins.

10, Noodles will absorb the stock, so add in half of the stock kept in step 7 evenly over the noodles. simmer for 3 mins.

11, Mix noodles with pork and beans. Add in the rest stock. Simmer for 3 mins.

12, Stir noodles and reduce the sauce. Check whether noodles are done. If no, simmer a bit longer, add in a bit more water if needed. If yes, ready to serve.

Simple Roasted Saba Fish

Due to the COVID-19, it’s really difficult to find fresh meat, seafood and vegetables in supermarket. Cos all the shelves are empty. I just found this frozen saba fish in the fridge. So seems that I have no other choice.

This dish is super easy. Just 3 steps.

1, Season saba fish with salt and black pepper on both side.

2, Preheat oven to 200 degree.

3, Put fish into the oven and roast for 18-20 mins.

Ready to serve!

Chocolate Chip Cookies

Since the COVID-19 situation got really serious, we try to stay at home and not go out. I tried to bake the cookies I have done so many times – chocolate chip cookies!

Ingredients:

unsalted butter 1/2 cup

white sugar 1/2 cup

brown sugar 1/2 cup

egg 1

vanilla 1 tsp

flour  1 & 1/4  cup

baking soda 1/2 tsp

salt 1 pinch

chocolate chips  1 & 1/2 cup

walnut 1 cup (chopped and toasted. You can preheat oven to 150 degree C, and toast for about 10-15 mins. Just take them out when you can smell the aroma.)

 

  1. Cream butter with sugar (whit and brown) till light.
  2. Beat in egg.
  3. Add in vanilla. Give it a good stir.
  4. Sieve in flour, baking soda and salt. Combine till just blended.
  5. Add in chocolate chips and walnut. Stir well.
  6. Place dough in the fridge for about 30 mins.
  7. Scoop 1 tbsp dough and make a dough ball. Place them on the tray. And put into fridge for about 40 mins.
  8. Preheat oven to 180 Degree C, and bake for 12-15mins. Just keep an eye on the oven. When the edge of cookie turns golden, that’s the sign of being done.

Crispy Fried Pork Belly

It’s a Thai style dish. My husband and I once had dinner in a small Thai restaurant. This dish was served there and we were so impressed.

Ingredients:

250g pork belly

1/2 teaspoon white pepper

1 tablespoons fish sauce

1/2 tablespoon oyster sauce

1/2 tablespoon sesame seed

1/8 cup tempura flour

This dish is actually very simple to make. Just mix all the ingredients above in a bowl. And marinate the pork for 30 mins. Deep fry for 10-15 mins till brownish and crispy.

Cool down and cut into slices.

Since it’s an oily dish, you can serve it with chili sauce (squeeze in a little lime juice will be better.)

It’s not a very healthy dish, so please don’t eat too much. 🙂

 

Soy Sauce Chicken Wings

This is one of my husband’s favorite dishes.

Ingredients:

chicken wings joint 6-8

cooking wine 1 tsp

light soy sauce  1 tbsp

dark soy sauce 2 tsp

sugar 1/2 tbsp  (you can reduce according to your taste)

ginger slice 2 or 3

water

  1. Mix light soy sauce, dark soy sauce, sugar and cooking wine in a bowl.
  2. Add chicken wings in and marinate for 2 hours.
  3. Heat a pan, add in a little oil. Fry chicken wings till both sides turn golden brown.
  4. Pour in marinade, Stir fry a bit to let them fully mixed.
  5. Pour in enough water just covers all the chicken.
  6. Bring to boil with high heat. Then turn to low heat and simmer for 20-25 mins with lid on.
  7. lid off and turn up the heat to reduce the sauce.

Cooking for Charlie

I tried to cook rice and chicken before for my dog Charlie.

Home Cooked Food for My Dog Charlie

After that, I tried some other ways to make home cooked food for my Charlie.

  1. Canned  food & rice.

It’s pretty simple. You can just mix dog canned food with cooked rice. Dog canned food can be easily bought from supermarket, and there’re so many choices to make. No matter chicken, beef or lamb.

Charlie loved it.

2. Salmon macaroni

I chop salmon (no skin) and carrot into very tiny pieces. Put them in a pot with macaroni and some green peas. Add in macaroni and enough water. Cook them according to the instruction on macaroni’s package, usually 8-10 mins. You can cook longer to make sure everything is fully cooked.

First time for Charlie to try salmon. He was so excited and keep licking his mouth before I served this meal to him.

After he finished his meal, he still kept licking his bowl all around the house. 🙂

Crispy Fried Pork (Xiao Su Rou 小酥肉)

Ingredients:

lean pork 250g

starch 80g

eggs 2

salt 1/2 tsp

five spice powder  1/2 tsp

 

  1. Cut pork into slices or strips. About 3-5 mm.
  2. In a bowl, add in starch (sweet potato starch would be the best choice, but I tried with corn starch and turned out not bad.) and beat in eggs. whisk till fully combined.
  3. Add in salt and spice powder. Stir well.
  4. Add pork slices into the batter. Stir to let them be fully covered with batter.
  5. Deep fry in oil till golden brown.
  6. To make them crispier, heat the oil and fry again.

 

Fried pork can be used to cook other dishes, like stew or sweet & sour pork. It’s a very popular dish during Chinese New Year in some part of China.

Laksa Hot Pot

The other day, I got a laksa hot pot soup base from the cashier of supermarket. I wanted to have nice hot pot for a long time. And I have never tried laksa flavor before.

This is the soup base I got. It has 2 parts: powder and paste.

Meat and vegetables are the main ingredients for hot pot.

First, I wash and cut vegetables and meat. Then follow the instruction to get soup base ready.

Meat in first, then the seafood part, vegetables at last. But vegetables like potato, sweet potato and shiitake mushroom can be put in earlier.

Home Cooked Food for My Dog Charlie

My husband and I got this poodle Charlie last month. Ever since this little cutie came to our house, our life completely changed.

I feel so lucky to have such a little playful buddy as our family member.

Most time, Charlie has dog food which was bought from pet store. But sometimes, especially on some big occasion, I will cook for him.

Actually, cooking for dog is much easier than cooking for human, as there is no need to season or to make different flavor. Home cooked dog food has a very simple rule – boil.

Ingredients I use are always chicken breast, potato and carrot. Charlie is only 3 kg now. He was 1.5 kg when he first came. So Charlie has very little appetite. He can’t eat too much.

The very simple way to deal with ingredients is to chop everything into small dices. You can choose 1 vegetable and 1 meat. For example. I always chop chicken breast (about half of my palm size), 1/4 of a medium potato, or 1/4 of a medium carrot. You can adjust the ratio. Put them into a bowl, add in enough water covers everything. Bring to boil, then turn to low heat and simmer for 15 mins or till they are completely cooked.

There are 2 ways I used to cook for Charlie.

  1. Cook meat & vegetable and rice separately. Cos most time, I also need to cook for me and my husband. So Charlie’s meat & vegetable will be cooked in a small pot. After they are done, I will just add in 1-2 tbsp cooked rice from rice cooker. Mix them well. Cool down and give it to him.

2. Cook meat, vegetable and rice together. This way is much simpler. You just need to put everything into rice cooker. I usually cook 2 meals at one time for him. Then I can save the rest and keep in fridge. He will enjoy for the next meal. Food cooked this way is nicer since it will give rice more flavor.

Charlie  obviously like cooked food much more than dog food. He’s often distracted by the sound while he’s having dog food. He needs to go and check. But when he’s having home cooked food, he’s more concentrated and cannot wait to finish them all.
