Korean Army Stew

It’s really like spicy one-pot dish.

1. Prepare ingredients. Vegetables you like. I chose onion, mushroom, Chinese cabbage, tofu and sausage. Cut them into smaller pieces and place them in the pot.

2. Prepare sauce:

2 tablespoon Korean chili paste, 1 tablespoon light soy sauce, 1 tablespoon sugar, 1 tablespoon chili powder, 1 tablespoon water. Mix them well.

3. Pour sauce into the pot. Pour in stock which can reach half height of the ingredients.

4. Turn on the heat. When all ingredients are almost cooked. Add in instant noodles and 1 piece of cheese along with some kimchi.

Wait till noodles are cooked, ready to serve.

Dried Noodle with Eggplant Sauce

Recently, noodles become the most frequently-seen dish on my table. When I am too busy to cook, I turn to noodles. When I don’t know what to eat, I turn to noodles. Noodles are really my good friends.

Eggplant is always my good friend. So I decide to put both of my good friends in one dish. And ……. eat them. 🙂

1. Chop eggplant into medium strips. Black fungus and green chili into shreds. Also prepare chopped garlic.

2. Heat a little oil in the pan. Fry fish Ngoh Hiang slices a bit. You can also choose minced pork.

3. Add in eggplants. Fry till soft.

4. Add in 2 tsp light soy sauce, 1 tsp dark soy sauce, 1 tsp oyster sauce, and 1 tsp sugar. Mix well.

5. Pour in 1/4 cup water. Also add in black fungus. Simmer a bit.

6. When the water reduces, add in a little starch water.

7. Add in garlic and chili. Quickly stir fry a bit. Season with salt.

Pour eggplant over cooked and drained noodles.

Teriyaki Chicken Leg

1. Prepare a whole boneless chicken leg. Sprinkle a little salt and black pepper.

2. Use the back of knife to hit chicken a bit.

3. Heat a pan on stove. When the pan is hot, put the chicken inside with skin side down. Flip over when the skin turns golden brown. Fry the other side till brown, too.

4. If there is much oil after sear, you can pour the oil out.

5. Add in 1 tablespoon light soy sauce, 1/2 tablespoon dark soy sauce, 1 tbsp sugar and 1 tablespoon honey. Let the chicken be coated with sauce.

6. Pour in hot water just enough to cover the chicken. Cover the lid and simmer for a while.

7. Remove the lid. Turn to high heat to reduce the sauce.

Yummy.

Chopped Cold Chicken

Chopped Cold Chicken (白斩鸡)is a popular dish in Guangdong cuisine.

1. Prepare a very big pot. Big enough for a whole chicken.

2. Add in enough water that can cover whole chicken. Also add in cooking wine, star anise, chopped ginger and spring onion.

3. Bring the water to boil. Grab the chicken. Soak it in hot water and pull it out immediately. Do this in-and-out procedure 3 times.

4. Then put whole chicken into pot. Boil for 1 min.

5. Soak the chicken into cold water to make the skin more elastic.

6. Put chicken into pot and boil for 4 mins.

7. Put the lid on and boil for 1 min.

8. Turn off the stove. Don’t move anything. Keep the lid on. Don’t even touch it. Let the chicken have a good spa for 40 mins. If you want your chicken to be more tender, you can use less time. But that may means you will see blood in the chicken bone. I like to play the safe card. So I let the chicken be there for 40 mins. And by the way, my chicken is around 800g. Bigger chicken needs more time.

9. After a good sauna. Chicken will feel hot. Put it into icy cold water immediately.

10. Brush sesame oil onto it.

Cut it. Don’t throw the chicken soup away. It’s ideal to make other soup or to boil dumplings/ wantons.

Drizzle light soy sauce.

And EAT!

Not-so-spicy Spicy Chicken Thighs

I was trying to make some spicy roasted chicken. But they turned out not so spicy. So I came up with that funny name. 🙂

1. Place chicken thighs in a big bowl. I only used two since it’s only for me and my husband.

2. Then I added 2 tablespoon chili powder, 1 tablespoon five spice powder, 1 tsp salt, 1 tsp black pepper, 1 tablespoon paprika powder, and 1 tsp ginger powder. I thought chicken would be spicy enough. And I marinated them for like 3 hours.

3. Preheat oven to 200 degree C. In the oven for 25 mins. Chicken skin will become very tightened and dry.

4. I was worried chicken would be too spicy for my husband. So I mix 1 tablespoon honey and 1 tablespoon tomato sauce ( my plan was chili sauce) and brush it onto the chicken. Roast for another 5 mins.

Should’ve be spicy but turned out not.

Still my husband loved them. Flavor really goes in and very tasty.

Pork Chop With Mushroom Sauce

1. Hit pork chop with the back of knife. Cut the edge of pork fat so that chop won’t curl up during cooking.

2. Season pork with salt and black pepper.

3. Heat a pan. Add in olive oil. When the oil is very hot, put the chop in.

4. Flip over when the downside turns golden brown.

5. Add in thyme and 2 cloves of garlic. Also cut in 2 tablespoon butter.

6. Flip again when the other side is golden. Use a spoon to scoop hot butter over chop. Fry for another 3-4 mins.

7. Set pork chop aside for later use. Don’t wash the pan. Use the same pan to cook mushroom.

8. Heat the same pan. Add in mushroom slices. Stir fry till mushroom softens.

9. Pour in 1/2 cup chicken stock. Turn to low heat. Simmer for several mins.

10. Season with salt and pepper. Dissolve 2 tsp corn starch in a little water.

11. Pour starch water into pan. Stir evenly.

Serve pork chop with mushroom sauce.

Pepperoni Pizza

Recently, we are really busy moving to a new house. A new house means a new kitchen to me. I am so excited that I will have new cooking equipment.

Our new oven is Bosch with 3D hot air.

The first dish I cook by it is pepperoni pizza. We were so exhausted and I thought pizza is a simple dish for me to prepare.

1. Prepare pizza dough, please refer to:

2. I made pizza sauce by myself with cherry tomatoes.

3. Preheat oven to 250 degree C.

4. Press pizza dough into baking pan. Brush pizza sauce over it.

5. Sprinkle a lot of cheese.

6. Place pepperoni pieces on the top.

7. Into the oven and bake for 7 mins.

Taste really good. I’m very happy with my new oven.

Sweet & Sour Fish

1. Cut fish into slices or small chunks. Beat one egg in a bowl and prepare 1/2 cup corn starch in another bowl.

2. Dip fish in egg first and then in starch. Let them be coated with starch evenly.

3. Deep fry fish slices till golden brown. Set aside.

4. Heat 1 tablespoon oil in the pan. Add in chopped 1/2 onion, chopped 1 tomato, red capsicum, and yellow capsicum. Stir fry for 2 mins.

5. Add in 2 tablespoon tomato sauce, 1 tablespoon chili sauce, 2 tsp sugar and 1/2 cup water. Bring the sauce to boil.

6. Add in starch water to thicken the sauce.

7. Put in fried fish slices. Stir fry to let fish be coated with sauce.

Sweet & Spicy Pork

1. Cut pork into one-bite size. Put pork cubes in a bowl. Add in 1 tablespoon light soy sauce, 1 tablespoon sweet cooking wine, 2 tsp sugar, 2 tsp oyster sauce. Mix them well and let them marinate for 30 mins.

2. Coat marinated pork with corn starch. Don’t discard the marinade.

3. Fry pork cubes till golden brown and the shell becomes very hard.

4. Heat a little oil in the pan. Sauté chopped garlic and ginger till aromatic.

5. Add in 2 tablespoon sweet chili sauce, 1 tablespoon marinade and 1/4 cup water.

6. Bring to boil. Then add in the fried pork and simmer for a while till sauce reduces.

7. Add in onion, red pepper and asparagus. Stir fry for 3 mins and let the sauce becomes very condensed.

Serve hot.

Sweet & Sour Pineapple Pork

Ingredients:

Pork ( cut into small cubes or slices)

Corn starch

Egg 1

Pineapple cubes 1/2 cup drained

Onion 1

Spring onion

Tomato sauce 3 tablespoon

Sugar 1 tablespoon

Water

Salt

1. Put pork slices in a bowl. Add in a little salt and 1 tablespoon corn starch. Mix with hand. Let them rest for 10-15 mins.

2. Beat one egg into the bowl. Mix well. Then add in 3-4 tablespoon corn starch. Mix well with hand again.

3. Deep fry pork slices in oil. Take them out when turns a golden brown.

4. Heat the oil and fry the pork for the second time to make the Shell hard and crispy.

5. Heat a little oil in the pan. Add in chopped onion. Sauté till aromatic.

6. Add in pineapple cubes, 3 tablespoon tomato sauce, 1 tablespoon sugar ( if you don’t want it to be very sweet, you can reduce sugar). Dissolve 1 tsp corn starch in 2 tsp water. Also pour starch water into pan.

7. Keep stirring the sauce. When the sauce reduces to condensed. Put the fried pork back into the pan. Stir to let each pork be coated with sweet & Sour Sauce.

8. Garnish with chopped spring onion. And serve hot.
