Oven-roasted Tomatoes

Recently, I’m crazy about tomatoes. I always want to try sun dried tomato, yet weather here in Singapore is very humid. So I guess sun dried tomato is impossible here. Then this oven-Roasted tomatoes came to my head.

And it’s very easy.

1. Chop tomatoes into slices (around 0.5cm thick). You can use cherry tomatoes or any ones of small size.

2. Place all tomato slices in a big bowl. Drizzle in olive oil, spread a little salt and add in dried herbs you like. I used dried oregano. Toss a bit.

3. Put tomato slices in baking tray and arrange them in one layer. You can put them very close to each other. Because they will shrink after dehydrated.

4. Preheat oven to 200 degree C. Roast tomato for 15-20 mins or till they get wrinkled and a bit burnt on the edge.

They can be used in Spaghetti or pizza or salad. I’m a big fan.

Roasted Chicken That I Have No Idea How Many Times I have Tried

I have tried roasted chicken in many different ways so many times that I cannot even count.

But I guess as long as my husband loves roasted chicken, I will never stop my way of exploring. Since he will never be fed up with roasted chicken, so I guess I will just keep on trying.

1. Prepare herbs, I chose rosemary and thyme. You can also use fresh herbs.

2. Stuff a pieces of butter under the skin on chicken’s breast with chopped herbs.

3. Sprinkle salt and olive oil all over the chicken and inside too.

4. Preheat oven to 200 degree C.

5. Place chopped onion in the baking tray.

6. Place a lemon inside the chicken. Tie the chicken with kitchen twine.

7. Roast chicken for 50-60 mins.

Chicken will be beautifully brownish colored. Remove the kitchen twine. Cut chicken into pieces. Squeeze lemon to let lemon juice with juice in the tray. Heat a bit to reduce sauce. Drizzle sauce all over the chicken.

Cabbage Chicken Roll

1. Prepare fillings:

Minced chicken 100g (u can also use minced pork or beef)

1/2 diced onion

2-3 chopped Shiitake mushroom (optional)

Salt and pepper

Mix all the ingredients well in a bowl.

2. Prepare 6 -8 cabbage leaves.

3. Soak cabbage leaves in hot water till softened.

4. One roll needs 2 cabbage leaves. Place 1 cabbage leaf on the table. Put a spoonful filling at one end. Then roll to the other end. Put the roll on one end of another cabbage and roll again. I made 3 big rolls with 6 cabbage leaves. You can also make it into 4 small ones.

5. For the sauce, I made from fresh tomato. You can also use canned tomato chunks.

Cut a cross at the bottom of tomato (2 medium ones). Soak in hot water for a little while. Peel them off. Chop into small chunks.

6. Heat a pan or a pot. Add in a little oil. Sauté 2 chopped garlic. Add the tomato in. Sprinkle a little salt. Stir fry till softened and juice comes out. Add in 1 tablespoon tomato sauce and 1/2 tablespoon sugar to balance the sour taste. Also add in a little dried oregano or herbs you like.

7. Pour in 1/4 cup water. Stir well.

8. Place cabbage rolls in. Turn to low heat. Cover the lid. Simmer for 10 mins.

9. Flip the rolls over. And simmer for another 5-8 mins.

10. Season with salt and pepper.

I think it will go well with pasta.

Flat Garlic Bread

1. Dissolve 1 tsp yeast and 1 tsp sugar in 1/4 cup warm water. Let it ready for 5 mins.

2. Mix 1 cup flour, 1 pinch salt, 1/2 tsp dried oregano, 1 tsp butter and 3 cloves chopped garlic in a bowl.

3. Add yeast water into flour mixture. Mix all ingredients and knead into a dough. Brush a little oil onto the dough.

4. Let the dough rise till 2 times big.

5. In a small bowl, mix 1/4 cup melted butter, 3 cloves garlic, 2 tablespoon chopped coriander.

6. Divide dough into 2 or even more smaller dough balls and flatten them into thin disc.

7. Brush butter garlic mixture onto the dough very generously.

8. Into 180 degree C oven and bake for 10-15 mins.

Salted Lemon

Last time, when my husband and I went to shopping for groceries, I found there’s sale on lemon. So I bought 2 packs of lemon. Then I decided to make salted lemon with them.

It’s quite easy.

1. Wash lemon in water. Sprinkle some salt over them. Rub with fingers. Then rinse under water. Dry them with kitchen towel.

2. Weigh them. This step is important. Cos we need to know the weight, then we can decide how much salt is needed. Salt should be 10%-15% weight of lemon. For example, my lemon is 150g, then the salt I use should be somewhere between 10g – 15g.

3. Cut lemon into wedges or slices. Put them in a sterilized jars.

4. Add in salt. Tighten the cap.

5. Shake the jar or bottle. Put it into fridge for 3-7 days.

Don’t forget to put a date label on it.

Salted lemon can be used to cook or to make drinks.

Roti John

It’s like a egg meat sandwich.

Ingredients:

Minced chicken 100g (season with salt and pepper)

Bun (I chose hotdog buns, you can choose baguette or any other bread you like)

Eggs 2

Chili sauce 1/2 tablespoon

Butter

Salt

Black pepper

Slices of 1/2 onion

1. Cut 2 hotdog buns into halves, don’t cut through.

2. Heat a pan. Add in a little butter. When melted, place buns in with cut side down to fry a bit.

3. Heat pan again. Add in a little extra butter. When melted, sauté onion till transparent. Add in minced chicken. Stir fry till chicken gets white.

4. Beat 2 eggs in a bowl, add in 1/2 tablespoon chili sauce and a little salt to taste.

5. Pour egg into the pan to mix with chicken and onion.

6. Place 1 bun with cut side down onto the egg. Turn to low heat. Tuck the egg under the bread. When egg is cooked, take the bun out with the help of spatula.

7. Put 2 slices of cheese onto the egg & meat filling. Then place the other bread on the top also with the cut side down.

8. Heat the pan. Melt a little better. Put the bread sandwich in. Fry each side till crispy or golden brown.

Cut into small pieces and serve hot.

Recipe: Chocolate Pound Cake

I always ask my husband about which pic to choose as featured image of blog. He gives me his opinion usually from a very different perspective.

He chose this picture for this blog. And his reason is that this picture look like it’s snowing.

I was like: WHAT???

Anyway, I still followed his advice.

If you always do baking at home and search baking recipes on YouTube. I bet you know Stephanie Jaworski from Joy Of Baking. She gives so many great recipes and demonstrations, which are very easy and hardly to fail. I really like her videos. And I tried some of her recipes, they turned out really great.

I followed her instructions about this Chocolate pound cake, except I reduced sugar and I didn’t do the glaze at the end.

If you don’t have time for video, I can show you the steps:

Preheat oven to 180 degree C.

1. Dissolve 25g cocoa powder in 60 ml very hot boiling water. Set aside to cool down.

2. Prepare dry ingredients: 180g flour, 1 tsp baking powder, 1/2 tsp salt. Mix them well.

3. Cream 225g butter with 200g white sugar (in video, she says 250g. I reduced sugar to keep it less sweet) till light. Add in 1 tsp vanilla extract. And 4 eggs one by one.

4. Add in cocoa water mixture. Stir well.

5. Add in 1/2 dry ingredients and 2 tablespoon milk. Mix well. Then add the rest dry ingredients.

6. Patter in baking pan. Bake for about 60 mins.

When it’s 50mins, I checked with toothpick, it didn’t come out very clean, so I baked for another 10 mins. I didn’t make the glaze and just dust icing sugar instead. Yeah, that’s why my husband related it to snowing.

See? Stephanie’s instruction is always simple and clear to catch up with.

My husband loves the cake.

Lamb Chop With Mashed Potato Pancakes

We don’t eat mutton that often. This is a very simple dish.

1. Sprinkle salt and pepper over lamb chop on both side. Rub it with finger to let flavor come in.

2. Peel 2 medium potatoes. Cut into cubes. Steam or boil them till cooked. Mash them in a bowl. Season with a little salt and pepper.

3. Heat a pan. Add in oil. When pan is hot, put lamb chop in. Don’t move it. Sear it for 4-5 mins.

4. Flip the chop over. Also add in 2 cloves of garlic, rosemary and cumin seed. Use a spoon to scoop oil and pour over the chop. Fry for another 4-5 mins. Put chop in a plate and rest for a while.

5. Add 3 tablespoon flour into mashed potato. Mix well and scoop a spoonful mashed potato and form it into a ball shape. Flatten a bit. Fry in the same pan till both sides turn golden brown.

Very simple and quick and yum dish.

Spinach Omelette

I wanted to try something beside scrambled egg. It’s a really easy dish. All you need are spinach, eggs, cheese, salt, black pepper and oil.

1. Remove root of spinach. Wash them clean and drain.

2. Cut spinach into small pieces. Better be small, cos mine was too long, not very easy to cut.

3. Beat eggs in a bowl. Season with salt and black pepper. Also sprinkle in some cheese.

4. Heat a pan. A small Non sticky pan is better. Add in some oil. Stir fry spinach first. Spinach juice will come out, pour it out. Separate spinach a bit.

5. Pour egg & cheese mixture in. Cover the pan with lid. When the eggs get solidified. Turn off the heat.

6. Place a big plate over the pan. Make the pan upside down to let the omelette out.

You can cut it into smaller pieces before serving .

Bismarck Pizza

Last time, when my sister and her boyfriend came to visit us, we went an Italian restaurant for dinner. The restaurant name is Saizeriya. The restaurant claims to serve fusion food of Japanese and Italian. Its rating is 4.7, which is very high on Google and many comments are positive. And the price is very reasonable and affordable. The most important thing is food there is very nice. We tried its pizza, spaghetti, soup, escargot, and ravioli. All are very nice.

There is one special pizza, Bismarck pizza. We tried it for the first time. Pizza looks not very hard to make, since I can tell the main ingredients are pizza dough, cheese, bacon, spinach and egg. Yes! An egg in the middle, that’s why it’s special and also why my husband loves it. Egg is the key part. Although I don’t know exactly how to cook it, I tried to copy the one we had in the restaurant today.

Preheat oven to 200 degree.

I made it in a very simple way. Brush pizza dough with a little tomato sauce. Then sprinkle mozzarella cheese. ( I just tore the mozzarella ball with my hand.)

Cut 2 strips streaky bacon and spread them over pizza dough and make a circle in the middle. That’s the spot where I crack an egg. Sprinkle a little black pepper on the top.

Into the oven for 13-15 mins.

While pizza was baking. I bleach several stalks of spinach in water for 30 seconds. Then soaked them in cold water. Squeeze them very hard to let the water out.

In the last 3 mins, spread cooked spinach over the pizza.

And the Bismarck pizza is done with a beautiful egg in the middle.
