My First Try of Soup Curry

When my husband and I were in Hokkaido several days ago, we tried a famous local dish – soup curry.


A really nice dish that surprised us.

I wanted to try this dish at home.

1. Prepare vegetables you like.


I chose pumpkin, cabbage, potato, carrot, eggplant, shiitake and cauliflower. Add in a little olive oil, toss a bit.

Preheat oven to 190 degree C and bake for 30 mins.

2. While vegetables are in the oven, prepare curry chicken. Heat a little olive oil in the pan. Add in chopped onion, garlic and ginger. Stir fry till aromatic.

3. Add in 1 tsp cinnamon powder, 1/2 tsp nutmeg powder, bay leaf, 1 tsp paprika powder and 1 small curry cube ( I’m out of curry powder). Stir fry a bit.

4. Pour in 1 tsp mirin,  1 tsp light soy sauce, 1 tsp tomato sauce, 1 box of chicken stock and 1/2 cup water. Mix them all well.

5. Put chicken in the pan. Cover it with lid and simmer for 30 mins.

When the vegetables are done, check whether they are cooked.


Potato and carrot are a bit hard. Put them in the pan and simmer with curry chicken.

I also add in peeled tomato.


In a big bowl, put chicken at the bottom, then lay the vegetables above. Pour the soup over it.


Serve with half-boiled egg and rice. Sprinkle a little black pepper.


Mine tastes lighter. And my soup is much less. Next time, I should try with curry powder and improve.

Walnut Bread

I followed this recipe but changed a little.


Sourdough:

Bread flour 58g

Whole grain flour 58g

Water 71g

Yeast 1/2tsp (original recipe is 1/16tsp)

Mix all the sourdough ingredients. Let it rest for at least 2 hours. Original recipe said let it rest for overnight. That’s why I increased yeast to 1/2 tsp.
Walnut paste:

Walnut 50g

Water 50g

Honey 40g

Melted butter 20g

Salt 1 pinch

Blend all these ingredients in blender till paste.
Bread ingredients:

Bread flour 306g

Whole grain flour 34g

Water 145g

Salt 8.5g

Yeast 2g

Mix all the bread ingredients together into a dough. Let it rest for 30 mins.

Then fold in sourdough and walnut paste. Mix well into a big dough. Let it rise into 2 times big.

Preheat oven to the highest.

Knead it and press the air out. Let it rise again for another 40 mins. Cut the surface with pattern you like.

Turn oven to 230 degree C.  Put in 1/4 cup water and let the water steam arise. Put bread dough into oven. Bake for 15 mins. Then take the water out and bake for another 25-30 mins. If the color too dark, cover with foil.



My husband and I love this bread very much.

Blueberry Shortbread

I followed this recipe strictly.

Ingredients:

Flour 125g

Sugar 50g

Butter 100g

Fresh blueberries 150g

1. Preheat oven to 180 degree C.

2. Mix flour and sugar in a bowl. Cut in butter.

3. Rub them with fingers till become coarse crumbs.

4. Press 2/3 crumbs into baking pan. Sprinkle blueberries over crumbs.

5. Spread the rest crumbs on the top also with a little extra white sugar.

6. Bake for 30 mins.


Super Easy Basic Waffles

We bought a waffle maker yesterday. I couldn’t wait to cook some delicious waffles with it. My husband wanted Belgian waffles. So I found some recipes online and tried them. Yet, it was a big failure. Waffles I made tasted like strong baking soda flavor stuff. It’s not easy for me to quit, especially on cooking. I thought I should start with basic ones. And I found a wonder recipe online. Lucky me!

It’s super easy. No need to beat the egg white with electric mixer.

I just halved the batch.

Ingredients:

Egg 1

Milk 200g

Olive oil  1/6 cup

Flour 1 cup

Baking powder 1/2 tsp

Salt 1/4 tsp

Sugar 1 tsp

Vanilla 1/2 tsp
Preheat waffle maker first. And then prepare the batter.
1. Mix flour, baking powder, salt and sugar in a big bowl.

2. Mix egg with milk, oil and vanilla in another bowl.

3. Combine dry ingredients with wet ingredients. Don’t overmix. Stop when they just combine. It’s ok if there’s still flour bumps.

4. Pour batter over preheated waffle maker.

5. Serve with syrup and fruits you like. You can also add nuts or butter.


Chestnut Bread

Last time when my husband and I went back to my hometown in Shandong, China. I mentioned that I needed some chestnuts to bring back to Singapore for cooking. My auntie kept that in mind and bought me a big box of organic chestnut. I was really surprised. So I brought many packs back to Singapore.

Recently, this chestnut bread just came to my mind. So I tried with those chestnuts full of my family’s love.

Ingredients:

Bread flour 150g

Whole grain flour 100g ( I used rough whole grain flour)

Yeast 6g

Sugar 12 g

Warm water 170ml

Salt 3g

Chestnut ( cooked already. I used many around 200g. They were chopped in blender, not very finely, but roughly)

1. Dissolve yeast in warm water.

2. Mix bread flour, whole grain flour, sugar and salt in a large bowl.

3. Add yeast water in dry ingredients.

4. Knead all ingredients into dough. Keep kneading for 20 mins. That takes a lot energy. 

5. Fold in chestnut.

6. Place dough in a big bowl. Cover with plastic wrap. Let it rise till 2 times as big as before.

7. Knead the dough and press air out. Let it rest for 5 mins.

8. Make the dough into shape you like. I divided it into two smaller ones. Sprinkle some flour. Cover them with plastic wrap and let it rise again till 1.5 times as big as before.

9. Preheat oven to 190 degree C. Bake for 20 mins.



They smell so good. And my husband loves them. 

Very crunchy outside but soft inside.

And I believe they are healthy too.

Crispy Almond Twist

It’s a super easy snack.

Ingredients:

Puff pastry

Egg

Chopped almond or grate almond

Sugar
1. Brush puff pastry with egg.

2. Sprinkle sugar and grate almond over it evenly.

3. Use a rolling pin roll the pastry to press almond and sugar into it. Or you can just use your palm.

4. Flip the pastry over and repeat step 1,2 & 3.

5. Cut pastry into strips. And twist them slightly.

6. Preheat oven to 200 degree C. At the same time, let the pastry rest for around 10 mins.


6. Bake for 15-20 mins. Till they turn golden brown.


Cashew Nut Cookies

It’s a traditional Chinese snack. And it’s very easy to make.

Ingredients:

Butter 100g softened

Sugar 60 g

Egg (half for the dough, half to brush on the dough)

Flour 180g

Baking soda 1/2 tsp

Salt 1 pinch

Cashew nuts some

1. Cream butter with sugar in a bowl.

2. Add in half egg. Stir well.

3. Add in dry ingredients ( flour, baking soda and salt).

4. Knead all ingredients into a dough ball. And refrigerate for 30 mins.

5. Divide the big dough into many small ones. Each is around 8-9 g.

6. Preheat oven to 175 degree C.

7. Brush small dough balls with egg. Then press cashew nut on each one lightly.

8. Brush egg on cashew and dough again.


9. Bake for 20 mins.



They smell so good and taste very nice as well. Very crispy.

Dried Cranberry Shortbread

It’s super easy and delicious.

Ingredients:

1 cup unsalted butter softened

3/4 cup icing sugar

1 tsp vanilla

2 cup flour

1/2 tsp salt

1/2 cup dried cranberries finely chopped
1. Preheat oven to 160 degree C.

2. Mix butter , sugar, vanilla, flour and salt by hand in a bowl till just combined.

3. Fold in dried cranberries.

4. Press dough into baking pan.

5. Bake for 30 mins till pale golden.

6. Cool and cut.




Cinnamon Rolls

I really wanted to try cinnamon rolls before. And I found this amazing recipe:

I halved the batch and also did a bit change.

Ingredients:

For the roll:

4g yeast

1/2 cup milk

1/4 cup sugar

40 g margarine 

1/2 tsp salt

1 egg

2 cup flour ( I used bread flour)

Filling :

1/2 cup brown sugar

1 1/4 tsp cinnamon 

40 g margarine
1. Dissolve the yeast in warm milk in a large bowl.

2. When the foam starts to show up, add in sugar, margarine, salt, egg and flour. Mix them well.

3. Knead the dough into a big ball. Place the dough in a big bowl, cover it with plastic wrap and put in in warm place till it rises 2 times as big as before.

4. Combine brown sugar and cinnamon together to make filling.

5. Roll the dough with rolling pin into a big and thin piece. 

6. Sprinkle softened margarine on the surface. Then sprinkle brown sugar and cinnamon mixture evenly on it.

7. Roll the dough from one eng to the other. 

8. Cut the roll into smaller pieces.

9. Place small rolls in warm place. Cover them with plastic wrap and wait till their size doubles.


10. Preheat oven to 180 degree C. And bake for 20 mins.




Yummy. You can also top with icing you like.

Because I used bread flour, so they are really soft inside.

Rosemary Focaccia

It’s an easy and yummy bread.

Ingredients:

Bread flour 200g

Water 150g

Yeast 4 g

Salt 4 g

Rosemary

Olive oil 50 ml

1. Mix flour, water and salt in a big bowl.

2. Knead into dough till smooth and cling together around 10 mins.

3. Brush olive oil in a bowl and place dough into it. Cover the bowl with plastic wrap and let it rise till 2 times as big as before.

5. Press the dough into baking pan. Sprinkle rosemary, salt and black pepper. Also sprinkle some olive oil.

6. Cover the dough with plastic wrap for another 20 mins.

7. Poke the dough by finger for several times. Sprinkle some olive oil again.


8. Preheat oven to 200 degree C. And bake for 25 mins or till surface turns golden brown.



The bread is really delicious. It can also be served with soup:
