Beef Stir-fry with Kailan

1. Trim the end of kailan.

2. Boil one pot of water, add in 1 tsp salt. Blanch kailan for 2-3 mins. I used baby kailan, so I just boil them for 2 mins.

3. Put beef slices in a bowl. Add in 1 1/2 tsp light soy sauce and 1 tablespoon corn starch. Mix them well.

4. Prepare other vegetables. 3 shiitake mushrooms, 1 small carrot, 2 green or red chili, 1 stalk leek. Chop them into small size.

5. Heat oil in the pan. Put marinated beef slices in. Quickly stir to separate slices apart. When the beef turns no more pinkish, take them out and set aside.

6. Add in 1 tablespoon oil if needed. Sauté a little chopped ginger. When aromatic, add in carrot and Shiitake mushroom. Stir fry for 2-3 mins.

7. Add beef back in the pan. Stir fry for 1 min.

8. Add in 1 tsp sweet cooking wine, 1/2 tsp light soy sauce, 1 1/2 tsp oyster sauce. Stir fry evenly.

9. Put in chili and leek. Stir fry for another minute.

Spread kailan in the plate. Put beef over kailan.

Carrot Cake ( with Pineapple & Walnut)

I baked carrot cake before. It was good.

Carrot Cake

I tried this new recipe and I loved this one. Very moist and taste better. Pineapple also improves the texture. My husband also likes it very much.

Ingredients:

1 cup flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 cup sugar ( I cut the sugar, because I don’t want it to be very sweet and also the canned pineapple I used were sweet).

1/2 cup vegetable oil ( I used canola oil)

2 small eggs

1/2 tsp vanilla

1 cup shredded carrot ( I also chopped them to make them shorter)

1/2 cup chopped walnut

1/2 cup chopped pineapple

1. Preheat oven to 175 degree C.

2. In a bowl, mix flour, baking soda, baking powder, salt and sugar.

3. Add in oil, egg & vanilla. Mix till smooth.

4. Fold in carrot, walnut and pineapple.

5. Pour batter into greased baking pan.

6. Bake for 45-50 mins.

You can also do the frosting. But I’m too lazy to do that. And plain cake is good enough for me. :p

Fried Pork Slices in Sweet & Sour Sauce (Guo Bao Rou)

Guo Bao Rou is a classic dish in Notheastern Chinese cuisine. I still remember when going out with my friends to have northeastern cuisine, we would definitely order this Guo Bao Rou.

1. Cut pork into medium slices.

2. Sprinkle salt and a little black pepper. Mix them well.

3. In a small bowl, add in 100g starch (better be potato starch). Then add in water higher than starch. Stir well. Then let it rest for 10-20 mins. Starch will stay in the bottom layer and water in the upper.


Pour the water out.

4. Prepare carrot shreds, scallion shreds, ginger, and minced garlic.


5. Heat some oil in a skillet. Dip pork slices in wet starch and then dry starch. Gently put them in the oil. Deep fry till the shell becomes hard and lightly golden brown.

6. Leave a little oil in the skillet. Heat again. Put all the ginger, garlic, carrot and scallion into skillet. Sauté a bit.

7. Add in 50 g white vinegar and 50 g sugar. Stir gently to let sugar dissolve.

8. When the sauce starts to condense, add fried pork slices into skillet. Keep stirring to let each slice be coated with sweet and sour sauce.

When sauce almost dry, turn off the stove.

Serve hot.

Caramelized Chicken Legs

Original recipe: (I couldn’t find the link)


1. Preheat oven to 180 degree C.

2. Clean chicken legs and sprinkle a little salt and black pepper.

3. In a bowl, add in 3/4 cup honey, 1/2 cup soy sauce, 1/4 tomato sauce and 3 cloves minced garlic. Mix them well.

4. Place chicken legs in a skillet. Pour the sauce in.


5. Bake for 45 mins. ( flip over halfway)

6. I put in some baby carrots. Then turn to 200 degree C. And bake for another 15-20 mins till sauce becomes condensed.




Baked carrots are perfect for pasta or rice.

Mixed Vegetables Stir-fry 

This dish has a beautiful Chinese name, which is “He Tang Xiao Chao”. “He tang” means pond full of lotus, and “Xiao Chao” means stirfry. The dish is very colorful and pleasant to the eyes.

This dish requires many different vegetables. I always like lotus root, black fungus, snow peas, carrot and kernels.

1. Put lotus root slices and carrot slices in a deep pot. Pour in enough cold water and add in some salt. Turn on the stove.

2. When the water boils, add in trimmed snow peas. Boil for another 2-3 mins.

3. At last, add in black fungus and kernels. Boil for another 1 min.

4. Rinse all the vegetables and drain.

5. Heat a little oil in the pan. Sauté chopped garlic.

6. Put all the drained vegetables in the pan. Stir fry for 2-3 mins.

7. Sprinkle salt and stir fry for another minute. Then ready to serve.

Cheesy Vegetable Chicken Rolls

I found this recipe on Weibo.

1. Prepare a pices of boneless chicken leg. And a larger piece of aluminum foil.

2. Brush foil with olive oil. Then spread chicken on it with skin side down. 

3. Sprinkle some salt on chicken.


4. Put one piece of cheese at one end of the chicken.


5. Put vegetable shreds on it. I chose cucumber, carrot and celery. Spread some corn starch at the rest part of chicken.


6. Roll the chicken from one side to another. Tie it with kitchen twine tightly. And sprinkle some salt and black pepper on the roll.


7. Put chicken roll at one end of foil. Roll the foil up. And tigh two ends.


8. Preheat oven to 200 degree C. Around 30 mins.

9. Heat a little oil in the pan. Put chicken roll in the pan. Fry till skin becomes golden brown.

10. Take off the kitchen twine and cut into small pieces.



Beef Potato Stew

Ingredients:

Beef (cut into slices)

Onion (chopped into shreds)

Potato & carrot ( cut into medium chunk)

Sauce:

Light soy sauce: cooking wine: sugar =3:2:1
1. Heat a little oil in the pan. Put in beef slices and stir fry a bit.

2. Take the beef out in the plate.

3. Add a little more oil in the pan. Put in onion, potato and carrot. Stir fry for 2-3 mins.

4. Add in sauce. Stir fry evenly.

5. Pour in enough hot water covers all ingredients. Also add beef back in the pan.


6. Cover the pan with lid and braise for 20-30 mins till potato and carrot turns softened. Then ready to serve.


Bacon Lasagna 

Because I didn’t have minced beef at home, so I used bacon instead.

Tomato sauce:

1. Heat a little oil in the pan. Add in carrot  , onion and garlic dices. Stir fry till softened.

2. Add in chopped tomato, 2 tsp tomato sauce, a little salt and black pepper. Stir fry evenly.

3. Add in some water. Turn to low heat. Simmer till all ingredients soften and sauce becomes very condensed and dry.

White sauce:

1. Melt 25 g butter in the pan with low heat.

2. Add in 25g flour. Stir slowly.

3. Pour in 200 ml milk and a little nutmeg powder.

4. Keep stirring till sauce becomes very condensed.
Bacon needs to be pan fried a bit.

Lasagna (4 pieces) in boiling water for 7 mins.

Preheat oven to 220 degree C.
Grease baking pan.

Put in 1 piece lasagna and brush tomato sauce. Place bacon and 2 cheese slices. 

Then put in another layer of lasagna. Brush white sauce.

Then another layer of lasagna with tomato sauce, bacon and cheese.

And so on.
The top layer should be tomato sauce. And sprinkle grated cheese over it.

Bake for 30 mins.



Stir Fried King Oyster Mushroom

I cooked this dish when I stayed with my family in China during holidays and my family loved it, especially my father.

I used 4 vegetables: garlic ( a little), king oyster Mushroom, carrot and bell pepper.

1. Heat a little oil in the pan. Add in garlic slices and stir fry a bit. Put in carrot slices. Stir fry till carrot turns a bit softened.

2. Add in king oyster Mushroom slices. Stir fry. Water will come from Mushroom. Just keep stir frying till water all gone.

3. Put in bell pepper slices. Stir fry a bit.

4. Add in oyster sauce( I added 1 tsp). Stir fry evenly. If the dish still tastes a bit light, you can add a little salt. If it tastes ok, it’s done.
