Crispy Skillet Chicken Breast

1. Cut one whole chicken breast into two halves. Thinner chicken can be cooked easily. Sprinkle salt and black pepper on both sides of the chicken.

2. In a bowl, add in 1 cup flour, 4 tablespoon bread crumbs, a little salt, black pepper and mixed herbs.

3. Prepare 1 egg, and 3/4 cup milk in another bowl. Mix them well.

4. Dip chicken in flour mixture, then egg and flour at last. Shake off the excess.

Preheat oven to 220 degree C.

5. Melt 30g butter in skillet. Place chicken in side. Into the oven for 10 mins.

6. Flip over and bake for another 10 mins.

Chocolate Banana Cupcake

Ingredients:

1 cup flour

3/4 cup sugar

1/3 cup cocoa powder

3/4 tsp baking soda

3/4 tsp baking powder

1/4 tsp salt

2 small mashed bananas

1 egg

1/2 cup water

1/4 cup canola oil

1/4 cup milk

3/4 tsp vanilla

1. Preheat oven to 180 degree C.

2. Mix all the dry ingredients (flour, sugar, cocoa powder, baking soda, baking powder, salt) in a big bowl.

3. In another bowl, mash 2 small bananas with a fork. It’s ok if there’s still lumps. Beat in 1 egg. Stir well.

4. Pour in water, canola oil, milk and vanilla. Mix well.

5. Pour wet ingredients mixture into dry ingredients. Mix well.

6. Pour batter into muffin pan. Bake for 20 mins. Test with a toothpick. If toothpick comes out clean, then they are done.

Super moist and soft. Banana lumps turn to be creamy in the middle.

Double Cheese Pizza With Homemade Pizza Sauce

For pizza sauce:

1. Wash 1 cup cherry tomatoes in water. Cut a cross at the bottom of each tomato.

2. Soak tomatoes in boiling water for a little while to make it easy to peel them.

3. Heat a sauce pan. Add in 2 tsp olive oil. When the oil heated, add in 2 cloves chopped garlic. Sauté till aromatic.

4. Add in all the peeled cherry tomatoes. Stir fry and press with spatula or a spoon. It’s fine to have some tomato lumps. That actually makes pizza taste better.

5. Add in 1 tsp salt, 1/2 tsp dried herbs, 1 tsp sugar and 1 tablespoon tomato sauce. Mix all the ingredients well and set aside to cool down.

I found a very inspiring video on YouTube. And this enthusiastic Italian cook showed everybody how he made a perfect pizza. I just followed his guide.

For the pizza dough:

1 1/2 cup bread flour

1/2 cup warm water (more or less due to different flour)

3 g instant yeast

1 tsp salt.

Mix flour and salt in a bowl. Dissolve yeast in warm water. Pour yeast water into flour. Knead into a dough. If the flour is too sticky, then add more flour. Fold the dough several times. Then place it in a bowl, cover with plastic and let it rise till 2 times big.

Preheat oven to 220 degree C.

Press the dough into a big thin pizza dough. Brush pizza sauce. Sprinkle a little salt. Drizzle olive oil. Grate Parmesan cheese. Then sprinkle mozzarella cheese (I’m always very generous with mozzarella cheese, that’s why my pizza always looks white on the surface. 🙂 ), and basil leaves. Drizzle a little olive oil again.

Into the oven and bake for 7 mins.

The whole kitchen is full of sweet fragrance . It smells so so good.

So far, this is the best pizza I’ve ever cooked. It tastes so so good.

Very soft, and cheesy. Tomato sauce I made has a special texture and adds more flavor to the pizza. Every ingredient works so well.

Oven Roasted Pork Ribs

This is a slow cook recipe.

1. In a small bowl, add in 2 tsp salt, 2 tsp black pepper, 2 tsp paprika powder, 1 tsp dried thyme, 2 tsp sugar, 1 tsp ground ginger, 1 tsp ground garlic. Mix them well.

2. Sprinkle seasoning over ribs and rub ribs by hands.

3. Wrap ribs with plastic and into the refrigerator for over night.

4. Preheat oven to 150 degree C.

5. Put ribs on aluminum foil. Seal them. On the tray and into the oven. Bake for 2 hrs.

6. While ribs are baking, you can prepare for the brushing sauce. Here is the sauce I used: 1 tablespoon sweet cooking wine, 2 tablespoon tomato sauce, 1 tablespoon sugar, 1 tsp black pepper and 1 tablespoon honey. Mix them well.

7. Open the foil. Take the ribs out. Save the meat juice for topping sauce.

8. Brush ribs with brushing sauce. Into the oven for 15 mins. Then brush again and bake for another 15 mins.

9. Pour the meat juice in sauce pan. Turn to low heat. Add in 2 tsp tomato sauce and 1 tsp sugar. Slow simmer till condensed.

10. I served the ribs with boiled corns, creamy linguine and potato wedges. Pour topping sauce over ribs and corn.

For potato wedges:

The ribs are really juicy and tender. Very easily fall off from the bones. My husband loves them very very much.

Crispy Herbs Chicken Thigh

1. Prepare two chicken thighs. Discard the fat.

2. In a big bowl, add in 1/2 cup flour, 2 tbs bread crumbs, 1 tsp salt, 1 tsp black pepper and 1 tsp mixed herbs. Mix them well.

3. In another bowl, beat in 1 small egg and pour in 50 ml milk. Stir well.

4. Coat chicken thigh with flour first, then dip in egg and coat with flour again.

5. Heat a pan. Add in 2 tbs butter. When butter melts, put chicken thighs in. Fry each side till golden brown.

6. Preheat oven to 210 degree C. Bake chicken thighs for 15 mins. Flip over and bake for another 10 mins.

Prawn & Bacon Pizza

For the pizza dough:

Simple Pizza

Preheat oven to 200 degree C.

1. Press pizza dough into a baking pan or a skillet.

2. Poke it with a fork for several times.

3. Brush it with tomato sauce.

4. Sprinkle mozzarella cheese.

5. Place several chopped bacon pieces over the pizza dough. Then spread shell-removes Prawns. I also added some pepper flakes.

6. Season with a little black pepper and mixed herbs.

7. Top with cheese.

8. Into the oven and bake for 15-18 mins.

Bacon & Pineapple Burger

It just came to me when I was preparing for making burgers at home. Since bacon and pineapple are a good match on pizza, so I wondered how will it go if I put them in burger. It turned out not bad.

For the burger bun:

Pineapple slices are from canned ones. Drain them first.

Heat a pan on the stove. Fry bacon till crispy.

Then fry pineapple slices a bit.

Cut burger bun into halves. Place bacon slices on it. Then one pineapple slice. After that is cheese. And again bacon and pineapple slice.

You can serve it with salad and potato wedges.

My husband thought it’s very special. But he loved it after tried it.

Cocoa Chocolate Cake

Last night, I saw a picture of chocolate cake online. And I really really wanted to have a piece of it. So I decided to make my own chocolate cake by myself. Remember my husband bought a pack of Starbucks cocoa before? There’s still some left. So I’m gonna use it to make my cocoa chocolate cake.

The first time I saw this recipe, I was wondering is it true that boiling water is required in it? I was not so sure about it. But after I tried it, I realized how great this recipe is.

Ingredients:

1 cup sugar ( cocoa powder I used from Starbucks already contained sugar. So I cut off the sugar in original recipe)

1 3/4 cup flour

3/4 cup cocoa powder

1 1/2 tsp baking soda

1 tsp salt

2 eggs

1 cup milk

1/2 cup canola oil (original recipe said vegetable oil)

2 tsp vanilla

1 cup boiling water

1. Preheat oven to 175 degree C.

2. In a big bowl, mix sugar, flour and other 4 dry ingredients.

4. Add in eggs, milk, oil & vanilla.

4. Add in boiling water. Stir well till smooth.

5. Pour batter into greased baking pan. Bake for 30-35 mins.

You can add frosting you like. I like this cake very much. Soft and moist.

Carrot Cake ( with Pineapple & Walnut)

I baked carrot cake before. It was good.

Carrot Cake

I tried this new recipe and I loved this one. Very moist and taste better. Pineapple also improves the texture. My husband also likes it very much.

Ingredients:

1 cup flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 cup sugar ( I cut the sugar, because I don’t want it to be very sweet and also the canned pineapple I used were sweet).

1/2 cup vegetable oil ( I used canola oil)

2 small eggs

1/2 tsp vanilla

1 cup shredded carrot ( I also chopped them to make them shorter)

1/2 cup chopped walnut

1/2 cup chopped pineapple

1. Preheat oven to 175 degree C.

2. In a bowl, mix flour, baking soda, baking powder, salt and sugar.

3. Add in oil, egg & vanilla. Mix till smooth.

4. Fold in carrot, walnut and pineapple.

5. Pour batter into greased baking pan.

6. Bake for 45-50 mins.

You can also do the frosting. But I’m too lazy to do that. And plain cake is good enough for me. :p

White Chocolate Cranberry Cookies

I changed it a bit.

Butter 170g

1 cup dark brown sugar ( you can also use light brown sugar)

1/4 cup white sugar

1/4 tsp vanilla

3/4 tsp baking soda

1/4 tsp baking powder

1/2 tsp salt

1 egg

2 1/4 cup flour

2 cup white chocolate

1 cup dried cranberries

1. Preheat oven to 190 degree C.

2. Cream butter with brown sugar & white sugar till light and fluffy.

3. Add in vanilla, baking powder, salt, baking powder and egg one after another.

4. Add in flour. Mix till just combine.

5. Fold in white chocolate chips and dried cranberries.

6. Place small dough balls on baking tray and bake for 12 mins.

Cookies are soft and white chocolate melted. Actually, I already reduced sugar. But these cookies are still a little too sweet for me. So if you don’t want them to be very sweet, you can also use less sugar.
