Stir Fry Shrimps With Vegetables

 This is a healthy and quick dish. 

1. Prepare shrimps and vegetables. (I chose frozen ones, which are really convenient)

2. Marinate shrimps with 1 tsp light sauce, 1 tsp cooking wine, 1 tsp salt and 1 tsp starch.

3. Frozen vegetables in boiled water for 2 minutes. 

4. Heat the oil in pan, and stir fry shrimps till the color becomes reddish. And remove the shrimps out. 

5. Stir fry vegetables for 1-2 minutes.

6. Add in the shrimps and a little salt. Stir fry evenly.
  

Ready to serve.
  

Chicken Soup Noodle

When my husband feels sick, I cook him chicken soup. Actually, every time I make chicken soup, it’s possibly to leave some over. So I keep the left soup in a jar and stored in fridge. Stored chicken soup can be used to cook. And the easiest one is to cook noodles.


This is the fresh soup not the stored one.

It’s easy to make chicken soup. 

Put chicken in a deep pot. Add in enough water and several ginger slices. Turn to high heat at first. When the soup boiled, turn to low height. If you want really good chicken soup, you’d better cook it for at least one hour. The soup will taste really great. I cooked it for about one hour and a half. And add some salt to it, or it will be plain. I also added several shiitake, because I really like it.

You can cook noodle when chicken soup is almost done. Just cook noodle with water. When noodle is cooked. Take it out and drain. After drained, put noodle in a bowl. 

Scoop some chicken soup and add to noodle in the bowl. If you like, you can add some green vegetables and chopped spring onion. 


My husband are it all, even he’s sick. It’s very nutritious.

Chinese Fried Spring Onion Pancake


If you ask me what are the food I miss most in my hometown, fried spring onion is definitely one of them.

It’s not hard to make. But I never make the ones as good as my mom makes.

1. Mix flour with some warm water. Make it a round dough and cover with plastic wrap for around 20 mins to let water and flour mix well. My mom told me I should add in some oil too. Or the pancake will taste a bit dry. Turns out she’s true.

2. Divide dough into several evenly-sized small ones.

3. Use a rolling pin to make small dough big and thin. 

4. Spread oil, salt, black pepper and chopped spring onion on it evenly.


5. Roll it from one end to the other.



6. Roll it up from one end to the other.


7. And use rolling pin to make it a little flatter.


8. Fry in pan till both side golden brown.


I think my mom is right. It taste a bit dry. Maybe I should’ve add fold in some oil in dough.

Steamed Pear With Sugar Cube


It’s ideal for people who has sore throat or coughing. My husband felt sick today. So I steamed a pear for him.


1. Remove the peel of pear. Cut the top off. Use a spoon to remove the seed in the middle. 


2. Add several sugar cubes in the middle hole.


3. Put the top back.


4. Put pear in a bowl. And put the pear in boiling water in a pot. Water should be lower than the bowl. Then cover the pot with lid. Steam for 30 mins with low heat.


Pear will be soft. Sugar cubes will be melted. 

Easy Vegetable Soup


Vegetables I used includes tomato, shiitake, carrot and spinach.

1. Remove peel of tomato. Chop tomato and carrot into small pieces.

2. Heat a very little oil in the pan. Put tomato pieces in. Stir fry a bit.

3. Add in enough water. Put carrot and shiitake in.

4. Simmer till carrot softens. Because I cooked other dishes at the same time, so I let the soup simmer for about 30 mins.

5. Finally, add in spinach. Add some salt and a little sugar.

Scrambled Egg With Cucumber And Black Fungus


My husband loves eggs, and I love vegetables. Black fungus is said that can help clean waste in Hunan body. So I think it’s a healthy dish and also a dish makes both of us happy.

1. Make scrambled egg. And take them out.

2. Heat a little oil in the pan. Add in cucumber slices and stir fry till they get a little done.

3. Add in black fungus. Stir fry for another 1 minute or two.

4. Add scrambled egg into the pan with a little salt. Quick Stir fry evenly.

Easy Red Date Chicken Leg Soup


Chicken leg and several red dates in a pot. Pour in enough water that higher than ingredients. Turn to medium heat and cook for around 1 hour and a half. The soup will become a little white in color. Before turn off the stove, add a little salt. If you like, you can also add some wolf berries. 

In Chinese medicine, red date is good for skin and health. So it’s ideal for women to have.

Scrambled Egg with Zucchini


Becside my husband is crazy about eggs, I try to cook scrambled eggs with many different vegetables. 

This is also an easy dish to cook.

1. Make scrambled egg. And put it in the plate.

2. Heat a little oil in the pan. Put in zucchini slices. Keep stir frying till zucchini is done.

3. Add in scramble egg, some salt. And stir fry evenly.

Easy Braised Chicken With Shiitake 

This dish is actually similar to yellow chicken stew. Yellow chicken stew is really popular in China. I guess there are yellow chicken stew restaurants in every China’s city.

It’s a dish made mainly of chicken, shiitake and green bell pepper.

I cooked it in a relatively easy way.

1. Cut boneless chicken leg into medium pieces. You can use other chicken parts, but I don’t recommend chicken breast.

2. Heat some oil in the pan. Put in chicken, stir fry till chicken gets a little golden brown on the edge.

3. Add in carrot and shiitake slices. Stir fry for a while.

4. Add in 1 tsp light soy sauce, 1 tsp dark soy sauce and 1 tsp sugar. Stir fry evenly.

5. Pour in enough water covers all ingredient. Cover the pan with lid and use low or medium heat.

6. Before the sauce in pan is almost dry. Put in bell pepper pieces, and turn to high heat.

7. Keep stir frying till sauce is dry.


It’s an ideal match for rice.

If you want it to be spicy, you could add a little dry red chili at first.
