Crispy Pork Chop By Oven

My husband and I love crispy pork chop. However, deep fried crispy chop pork needs too much oil. So it’s not a good option for me when I prepare daily meals. This recipe is very easy. No oil is needed.

1. Pound pork chop several times on each side. Sprinkle some salt and black pepper for a while.

2. Coat pork chop with a layer of flour, then egg and bread crumbs at last. (Bread crumbs need to be stir fried in the pan till golden brown).

3. Preheat oven to 200 degree C. Put pork chop in the oven for 20 mins. 

4. Out in the plate, cool and cut into small pieces.

A Sichuan Dish- Hui Guo Rou (Double Cooked Pork Slices)


I love Sichuan Food. But due to that my husband can’t eat spicy food, I seldomly cook spicy dish. Hui Guo Rou is a typical Sichuan dish. I made it less spicy and it turned out my husband loved it.

1. Put pork belly in boiling water for several mins till a chopstick can easily go through it.

2. Take the pork out. Rinse and drain. Then cut into thin slices.

3. Heat a little oil in the pan. ( because there is fat in pork belly, a very little oil is enough. If you use non-stick pan, you can even not add any oil).

4. Put pork slices in the pan. Stir fry till a bit golden brown and curly. Take pork slices out.

5. Add 1 tsp Pixian bean sauce in the pan. Stir fry till red oil comes out. If you want it to be more spicy, you can add some chopped dried red chili.

6. Put pork slices back in the pan. Stir fry evenly with bean sauce. Add in 1 tsp light soy sauce, 1 tsp cooking wine and 1 tsp sugar. Stir evenly.

7. Add in chopped garlic bolt and green chili. Stir fry till garlic bolt is done. Dish out.

Pan Fried Pork Chop


Pork chop marinated with salt and black pepper for a while.

1. Heat pan with medium-high heat.

2. Put pork chop in the pan. Fry each side for around 3 mins.

3. Add in a pieces of butter in the pan. When butter melted, use a spoon to scoop butter onto chop. Flip the chop, and keep doing this procedure. Till chop is done.

4. Take chop in the plate. Chop onion and bell pepper into strips. 

5. There will melted butter left in the pan. Heat it. 

6. Put chopped vegetables in. Stir fry.

7. Add in a little salt, black pepper and sugar. Simmer for around 2 mins.

Then the side dish is done. Put it aside the chop.

Roasted Pig Knuckle


Use knife to make one or two slices on the thick skin. Then prepare celery leaves, onion, and garlic. Chop them into small granules or pieces. Sprinkle some salt on knuckle. Then cover the knuckle with chopped vegetable mixture and wrap them tightly with a plastic outside. Put in the fridge overnight.

1. Take off the plastic wrap and wash off the vegetable mixture on the surface.

2. Steam knuckle for 50 mins.

3. Preheat oven to 220 degree C. Put steamed knuckle in oven and bake for 40 mins. You can move the knuckle to make the color evenly brown while baking.


After baking, the skin of knuckle becomes very crispy. The inside is very tender and juicy.

Pan Fried Pork Bun


Dough wrapper:

200g flour, a little yeast, a little baking soda mix with water into a dough. Wrap with plastic for 20-30 mins.
Pork filling:

Minced pork 250g mix with light soy sauce, dark soy sauce, salt, sesame oil, chopped spring onion, chopped ginger, Ground assorted spice and a little sugar.

Mix them well.
Divide dough into small pieces. And make each piece into wrapper.


Then put some pork filling in the center.


Wrap the pork filling tightly.


Heat some oil in the pan. Put bun in the pan with the top down.


When the bottom turn golden brown. Add in water as high as 1/2 bun’s height.

Cover the pan with lid. Till the water dry.
Sprinkle some black sesame and chopped spring onion.


ο»ΏStir Fry Pork With Potato Slices


Chinese ways of cooking potatoes are very different from western ones. 

Ingredients:

Pork (cut into thin slices, marinated with a little salt, light soy sauce and corn starch)

Potato (cut into thin slices)

Bell pepper ( cut into small pieces)

Light soy sauce

Salt

Water

1. Put potato slices in boiling water till they are almost done. Take them out, rinse and drain.

2. Heat some oil in the pan. Put in pork. Stir fry till pork gets golden brown.

3. Add in bell pepper and potato slices with 1 tsp light soy sauce, a little salt and water. Quick stir fry for 2-3 mins.


Quick and easy Chinese cuisine.

Stir Fry Pork With Ladyfinger


Actually, I didn’t expect this dish will taste so good. And it’s very simple.

1. Put ladyfingers in boiling water for 2 minutes. Then take them out, remove two ends off and cut them into small pieces.

2. Cut pork into thin slice. Heat some oil in the pan. Stir fry pork till it gets a little golden brown.

3. Add in ladyfinger, a little light soy sauce and salt. Quick stir fry for another minute or two. And it’s done.


As to pork, I recommend pork belly, because it contains fat, which makes it taste better.

Braised Pork With Potato And Vermicelli


Apart from dumpling, vermicelli is another food to help me with my nostalgia.

Vermicelli is a commonly seen food in northern part of China, especially in winter. Just imagine, it’s chilling outside, and you have a bowl of braised pork with vermicelli on your table. All the coldness will be gone.
Ingredients:

Oil, pork (cut into slices), potato ( chopped into medium pieces), vermicelli, light soy sauce, dark soy sauce, salt, water.

1. 


Heat oil in the pan, put in pork slices. Pork with a little fat would be perfect and it will taste better. The oil will come from the fat. Stir fry till the pork turn a bit brown.
2.


Add in potato pieces. Keep stir frying till the edge of potato turns transparent.
3.


Add in a little dark soy sauce and some light soy sauce. Keep stir frying till each pork and potato piece coated with soy sauce.
4.


Add in water enough to cover all ingredients in the pan. Then cover the pan with lid. Braise with medium heat.
5.


When the water becomes less, and potato softens, put in vermicelli. The vermicelli I used is easy to cook. Only takes five minutes to be cooked. And no need to be soaked in the water before cooking. Please read instruction on the vermicelli’s pack before cooking.
Vermicelli will be softened. Then stir it with potato and pork.


You can use chopsticks to stir vermicelli, because it’s easy for them to stick together.
After around 5 minutes, the dish is done when vermicelli is done. You’d better try it to make it’s truly done. Add in salt. And stir evenly.

Vermicelli will become transparent. And potato also tasty for braised with pork and soy sauce for such a long time.

Moo Shu Pork (Fried Pork With Scrambled Eggs And Fungus)


I think many people are very familiar with this Chinese dish. The first time I saw this dish’s name on the menu, I was surprised. Because its Chinese name is “ζœ¨ι‘»θ‚‰”( mu Xu Rou), while “mu” means wood, ” Xu”means beard. I was like what kind of dish is that! πŸ™‚

But it turned out to be a delicious dish with pork, egg, carrot, black fungus and cucumber. 

It’s not a difficult dish to cook.

Ingredients:

Pork ( cut into pieces, marinate with a little salt, light soy sauce, and starch for 10 or 15 minutes)

Eggs (2 or 3)

Black fungus ( if you use dry ones, please soak them in water for several minutes. Please note that black fungus soaked in water for a long time could be poisonous, so just several minutes is fine. Romove their bottoms, and tear them into small pieces with hands)

Carrot ( chopped into pieces)

Chopped Celery ( because I didnt have cucumber, so I use celery instead. Cucumber would be better. )

Oil, salt, starch, water, sugar, chopped garlic (optional)

1. Make omelet. Take the omelet out once they solidify.


2. Heat a little more oil in the pan. Put the marinated pork slices in. Stir fry till they get brown and take out.

3. If there is no oil in the pan, add in a little. Put in the garlic, then carrot. Stir fry for around 2 minutes, then add in celery (or cucumber ). Stir fry for another minute or two. 

4. Put in pork and black fungus. Stir fry for 1-2 minutes.

5. Add in salt, light soy sauce and sugar. Stir fry evenly.

6. Put into the omelet. Stir evenly with the other ingredients.

7. At last pour in a little starchy water and quick stir fry for a minute.


Ready to serve.
