Big Bone Pear Soup

It’s the first time for me to try this dish. It’s a very simple Soup. But if you want the soup to be more delicious, it will take more time to cook it.

First, pour enough water in a deep pot. Put big bone or ribs into it. 

Turn to high heat. When water boils, remove the foam floating on surface. 

Turn to low heat. Cover the pot with lid. Boil for at least half an hour. In Chinese cuisine, good soup is usually a bit time consuming. I let the bone boil in pot for around one hour. And the soup become milky white in color.

Then add in pear chunks. And boil for at least another half an hour. Sprinkle some salt before serving.


It just needs bone or ribs, pear, water and salt. So it’s a simple soup. But it turns out very delicious. Pear adds sweetness to it. My husband loves it.

Garlic & Honey Prawn Rice

1. In a bowl, mix 1/4 cup honey, 1/4 cup light soy sauce, 1 tsp dark soy sauce, chopped garlic (3 cloves) and a little chopped ginger.

2. Clean prawns. Remove head and shell. Marinate then in sauce for at least 30 mins.


3. Heat a skillet. Add in a little olive oil.

4. Fry prawns till each side turns red. Then pour in marinating sauce. And cook for another one min or two.

5. Sprinkle chopped spring onion.

6. Take the prawn out. Keep heating the sauce till it gets a bit condensed. Then turn off the stove.

7. Put cooked rice in the skillet. Mix well with sauce. Then sprinkle prawns over it.


My husband loves it very much. He said it’s amazing!

Cereal Prawns

One of my husband favorite dishes.

1. Clean prawns and marinate with some salt and cooking wine for around 10 mins.

2. Heat some oil in the pan. I didn’t deep fry those prawns I just pan fried them. Dish them out till the shell turns red. I pan fried them with high heat so that the shell would be crunchy.

3. Melt a small piece of butter in the pan. Add in chopped red chili, spring onion and curry leaves if you have. 

4. Put in cereal. Stir fry for a min or two. Then add prawns back in the pan. 

5. Keep stir frying evenly for a little while. And ready to serve.

Dried Cranberry Shortbread

It’s super easy and delicious.

Ingredients:

1 cup unsalted butter softened

3/4 cup icing sugar

1 tsp vanilla

2 cup flour

1/2 tsp salt

1/2 cup dried cranberries finely chopped
1. Preheat oven to 160 degree C.

2. Mix butter , sugar, vanilla, flour and salt by hand in a bowl till just combined.

3. Fold in dried cranberries.

4. Press dough into baking pan.

5. Bake for 30 mins till pale golden.

6. Cool and cut.




Cinnamon Rolls

I really wanted to try cinnamon rolls before. And I found this amazing recipe:

I halved the batch and also did a bit change.

Ingredients:

For the roll:

4g yeast

1/2 cup milk

1/4 cup sugar

40 g margarine 

1/2 tsp salt

1 egg

2 cup flour ( I used bread flour)

Filling :

1/2 cup brown sugar

1 1/4 tsp cinnamon 

40 g margarine
1. Dissolve the yeast in warm milk in a large bowl.

2. When the foam starts to show up, add in sugar, margarine, salt, egg and flour. Mix them well.

3. Knead the dough into a big ball. Place the dough in a big bowl, cover it with plastic wrap and put in in warm place till it rises 2 times as big as before.

4. Combine brown sugar and cinnamon together to make filling.

5. Roll the dough with rolling pin into a big and thin piece. 

6. Sprinkle softened margarine on the surface. Then sprinkle brown sugar and cinnamon mixture evenly on it.

7. Roll the dough from one eng to the other. 

8. Cut the roll into smaller pieces.

9. Place small rolls in warm place. Cover them with plastic wrap and wait till their size doubles.


10. Preheat oven to 180 degree C. And bake for 20 mins.




Yummy. You can also top with icing you like.

Because I used bread flour, so they are really soft inside.

Soy Beans & Pig’s Feet Soup

Pig’s feet are very popular among women due to abundant collagen.

1. Soak soy beans in water for hours till they get a bit softened.

2. Add enough water in clay pot. ( clay pot is perfect for slow cooking dishes). Put pig’s feet in pot. Turn to high heat. When water boiled, flip pig’s feet over and braise for another minute or 2. Then turn off the heat. Take pig’s feet out. Rinse and drain. 

3. Add clean water in clay pot and put pig’s feet in again. Also put in soaked soy beans, several ginger slices, and star anise. Turn to low height. Cover the pot with lid and slow cook for 2 hours.

4. Before serving, sprinkle some salt and chopped spring onion.


My husband loves it.

Buttermilk Biscuit

I just halved the batch.

Ingredients:

1 cups flour

1/8 tsp baking soda

1 tsp baking powder

1/2 tsp salt

3 tsp butter

1/2 cup buttermilk
1. Preheat oven to 235 degree C.

2. Mix all dry ingredients in a bowl.

3. Cut in butter and use ginger to make it crumbs.

4. Add in buttermilk and mix till combine.

5. Pat the dough till it’s about 1/2″ thick.

6. Fold the dough around 5 times and gently press the dough to 1 inch thick.

7. Use cutter to cut into small pieces.

8. Place them on cookie sheet with enough space to rise.


9. Bake for 10-12 mins.



They are really delicious.


Serving with some homemade lemon jam is even better.

Banana Walnut Cake


I baked it according to this recipe:

But I changed a bit.
Ingredients:

2 cups flour

1 tsp baking soda

1/4 tsp salt

1 egg

1 cup sugar

1/2 cup olive oil ( original recipe said vegetable oil)

1/2 tsp vanilla

3 mashed banana

1/2 cup walnut

1/3 cup walnut

1. Preheat oven to  170 degree C.

2. Mix flour, baking soda and salt in a bowl.

3. Blend egg, sugar and olive oil in another bowl.

4. Combine flour mixture with egg mixture. Blend well.

5. Add in vanilla and mashed banana.

6. Fold in 1/2 cup walnut. ( I just put walnut in a plastic bag and roll it with a rolling pin).

7. Place batter in baking pan.

8. Sprinkle 1/3 cup walnut on the top.

9. Bake for around 50 mins, till toothpick comes out clean.



It tastes really great.

Big Bone White Gourd Soup


It’s an easy soup to cook. But it needs at least one hour. 

Put big bone in a deep pot with enough water. Turn to high heat.

When water boils, take the big bone out and rinse. Pour the water in the pot out.

Big bone in the pot again with enough water. Turn to medium heat. When water boils, turn to low heat. And slow cook for at least half an hour. I cooked it for 1 hour.

Add in white gourd pieces and some wolf berries. Simmer for at least another half an hour.

Sprinkle salt to season and some chopped spring onion. And ready to serve.

Glutinous Rice Chicken Soup


Glutinous rice needs to be soaked in water for overnight.

Stuff chicken with glutinous rice, 3 or 4 garlic cloves, 2 or 3 red dates. And then tight the chicken up in case the stuff inside run out.

Put chicken in a large deep pot. Add in enough water. Make spring onion a knot, then add in the pot with several ginger slices.


1. Turn to high heat. When the soup boils, remove the foam on the surface. 

2. Then turn to low heat and cook for 45 mins.

3. Turn off the stove and keep the lid on for another one hour.

4. Sprinkle salt. Turn on low heat and braise for another half an hour.

5. Sprinkle some chopped spring onion. And ready to serve.



Chicken tastes soft and juice. You can serve with kimchi.

There will be a lot of soup left. Please don’t throw away. It can be reserved in a bottle and placed in the fridge.
