Red Bean Bun


I’m a red bean fan. I love almost everything about red bean. This red bean bun needs red bean paste. I used the one bought from supermarket.

Ingredients:

Bread flour 200g

Sugar 18g

Salt 2.5g

Yeast 3g

Butter 15g

Water 100-120g

Red bean paste 300g
1. Mix flour, sugar, salt, and yeast in a bowl.

2. Pour water in and stir with chopsticks at the same time. 

3. Knead all ingredients into a dough.

4. Cut butter in. Keep kneading till butter is fully absorbed.

5. Put dough in the bowl. Wrap with plastic and let it rise till 2 times big.

6. Press the air out and divide dough into 6 small balls.

7. Press each ball flat. Put a red bean ball (50g) in the center. Wrap it up. Then place red bean buns on a baking pan. Into the oven with a big bowl of hot water under it.

8. Let it rise till 1.5 times big.

9. Preheat oven to 190 degree C. Sprinkle black sesame on the bun. Place a pan on the top of them to press them a bit.


In the oven and bake for 18 mins.


A little crispy outside but really soft and sweet inside. I love them.

Hawaiian Pizza


I guess Hawaiian pizza should be the most controversial one due to the controversial ingredient – pineapple.

Preheat oven to 220 degree C.

1. Press pizza dough into pizza pan or skillet like I did.

2. Use a fork to poke pizza dough several times.

3. Brush dough with tomato sauce or pizza sauce.

4. Sprinkle cheese over it. Then small bacon slices and pineapple slices on it. And top with cheese.

5. Bake for 15-20 mins till cheese melts and becomes golden brown.


My husband ate it up BY HIMSELT!

Fried Bitter Gourd Slices

Honestly, I don’t like bitter gourd. Although, it’s a very healthy vegetable. Its strong bitterness keeps me stay away from it. However, my husband likes it. So sometimes I use bitter gourd in my cooking but have very few of them during the meal. My opinion towards bitter gourd changed when last time my husband and I had lunch in a Malay restaurant. They served fried bitter gourd slices. I tasted it and it was really nice. Not very bitter and also crunchy. Of course, my husband liked it immediately. Then I searched the recipe online but found some special ingredients are needed, like chick pea flour ( I don’t know what that is). I decided to cook my own fried bitter gourd slices.

1. Cut bitter gourd into slices. I also remove all the seeds. Place them in a bowl. Sprinkle salt. And set them aside for about 40 mins to let bitter juice come out.

2. Dry bitter slices with kitchen towels. Slightly squeeze them to make them very dry.

3. Place dried slices in another bowl. Sprinkle paprika powder, a little salt, black pepper and flour. Just make sure each slice is coated with thin flour mixture.


4. Heat oil in the pan. Fry them till golden brown.



Very crispy and much less bitter than usual.

Simple Pizza

I couldn’t remember how many times I have made pizza. Because it’s really simple and convenient. All I just need to do is prepare dough in the morning or before I go out. In the afternoon when I get home, I can easily make pizza with prepared dough. And it only takes around 20 mins. Super quick and delicious as well. My husband is also a pizza fan. So every time I make pizza for dinner, he’s as happy as a child.

For the pizza dough.

Since my “rich experience” in pizza, I can make dough without and measurement. I just mix some flour, a little olive oil, salt, sugar and yeast in a large bowl. Then stir flour mixture with chopsticks and add into water at the same time. Stop pouring water when big flour lumps appear. Then use hand to make all ingredients into a big dough. Drizzle a little extra olive oil on the dough. Spread evenly on dough’s surface with hand. Cover the bowl with plastic wrap. Let it rise till 2 times big.

Preheat oven to 200 degree C.

Press dough into a pizza pan. I always use my skillet. Then poke with fork. Brush tomato sauce. Sprinkle a little cheese. Then cherry tomatoes ( chopped into halves) and black olive slices. Then spread extra cheese.

Into the oven and bake for 15-20 mins.


Serve with some basil leaves on it.


I have made this simple pizza for many times.

Fish And Chips

My husband is a crazy fan of fish and chips. When we dine out, I always choose dish from different cuisine, but he just has fish and chips in his tray, almost every time. As the only chef at home. I feel it is my mission to learn how to cook delicious fish and chips.

For the fish fillet, I used tilapia. It’s red when raw, but white when cooked.

Mix 1/4 cup flour and 1/4 cup corn starch in one bowl.
For the batter:

Mix 1 cup flour, 1/4 cup corn starch, a little salt, black pepper and 1 tsp baking soda in another bowl. Then pour into water ( soda water is required in original recipe. But plain water also turns out well in my experiment) to make batter. Stop when the batter feels like pancake batter. I can’t tell how much water I added. I just stopped when I felt it’s ok.
Heat oil in a frying pan. I didn’t measure how high the temperature is. Drop a little batter into it, if the batter can hold together and you can heat the sizzling, I think it’s ready.

Coat fish fillet with dry flour mixture first. Shake off the excess. Then dip in the batter. And fry them till beautifully golden brown.

Serve with potato chips.


I just bought frozen potato chips from supermarket and fried them.

Add some cabbage with mayonnaise.


It immediately became one of my hunsband’s favourite dishes.

Pork Chop With Roasted Apple

1. Cut an apple into 8 parts, remove the core.


2. Line them in the baking pan. Sprinkle mixed herbs, a little salt. And pour in some white wine.


3. In the oven, turn to 220 degree C. And roast for 10-15 mins.


4. Coat pork chop with flour. Shake off the excess.

5. Heat a little olive oil in the pan. Fry the chop till each side turns a bit golden brown.


6. Pour in red wine. Simmer a little while to let the wine reduce into thick and sticky sauce.


7. Place pork chop in the plate. Glaze with sauce.


Serve with roasted apple.

Red Wine Braised Beef

1. Cut beef into medium chunks.

2. In a piece of gauze, wrap in 1 tablespoon black pepper whole , 1 tbs ground black pepper, 1 tbs cloves, 1 tbs fennel and 2 cloves garlic. Wrap them up. Put into pot with beef.


3. Pour red wine into the pot covers all ingredients. Add 1 tbs balsamic vinegar and 1 tbs soy sauce.


4. Let beef soak in all ingredients for overnight.

5. Slow cook for 3 – 3.5 hrs.


Place the beef in the plate and pour reduced sauce over it.



Beef is very soft and tasty.

Garlic Butter Lobster

1. Put lobster in boiling water for 4 mins.

2. Take lobster out and soak it into cold water.

3. In a bowl, add in minced garlic.


Then chopped chili, parsley and sprinkle salt. Mix well. Then add in butter. Stir them.

4. Cut lobster into halves.

5. Spread garlic butter onto lobster.


6. Heat a skillet on the stove. When it becomes smoke hot, put the lobster in with the butter side down.


7. Heat a bit then turn them over.


8. Place lobster in a plate. Pour garlic butter over it.



My husband loves it.

Spare Ribs Soup ( With Red Dates & Ginkgo)

1. Rinse spare ribs in water.

2. Put ribs in a deep pot. Add in enough water higher than ribs.

3. Turn to high heat. When water boils, skim it. 

4. Turn to low heat. Add in 2 or 3 red dates. 

5. Cover the pot with lid. Let it slow cook for at least 40 mins. I let it boil for 1.5 hrs. The meat will become very soft and come off from the bone very easily.

6. Add in ginkgo. I read on internet that it could be poisonous if you have too many ginkgo one time. So I just put in 10 ginkgoes. And boil for another 15 Mins.


Serve hot.


You can also sprinkle a little spring onion.
