Homemade Pork Floss

Actually I didn’t know where floss can be used except bread until my husband told me he used to add floss in porridge. And the other day, when I was in a supermarket shopping for ingredients to stuff my fridge, I noticed that a box of 300g lean pork is s$3.5 while a small box of pork floss is over S$5.0. I was like “hmm, since lean pork is much cheaper, maybe I can try to make pork floss by myself.”

Actually, making pork floss doesn’t need many ingredients, but it does requires a lot of patience.

1. Cut lean pork into slices around 1 cm thick.

2. Place pork into a pot. Add in enough cold water about 2-3 cm higher than pork.

3. Turn to high heat and bring the water to boil. Skim the soup, remove the foam. Add in ginger slice, star anise, 1 tablespoon cooking wine and 1 tsp salt. Cover the lid and simmer for 30 mins.

4. Take the pork out. Cool and let them dry.

5. Put all pork into a zip bag. Use rolling pin to pat the pork till there is no more big lumps of meat. If there is still big chunk of pork, you can tear it into small pieces by hand.

6. Heat a pan. Add in 2 tsp oil. Turn to lowest heat.

7. Add pork in. Stir fry with patience till pork starts to become a bit fluffy.

8. Add in 1 tablespoon light soy sauce and 1 tablespoon sugar.

9. Stir fry till pork fully mixed with soy sauce and sugar.

10. Put fried pork pieces into a blender. Blend till they become completely fluffy.

11. Then put them back into the pan. Stir fry to dry them up.

12. Spread them in a big plate. Cool down and also to dry up completely.

Garlic Butter Sauced Salmon With Linguine

1. Sprinkle salt and pepper over the salmon on both sides.

2. Heat a pan. Drizzle in olive oil. When pan is hot. Add salmon in with the skin side down. Sear both side till golden brown. About 3-4 mins for each side. Then fry each side for another 1-2 mins.

3. Set fried salmon aside. Heat a pan. Oil in. Sauté chopped 2 cloves of garlic till aromatic.

4. Cut in 1 tablespoon butter. When butter melts, pour in 1/4 cup white wine or water.

5. Add in 1/4 cup heavy cream. Stir well.

6. Season with salt and pepper. Spread the sauce over salmon.

 

7. Heat the sauce again, add in mixed herbs. And add in cooked linguine or pasta. Toss a bit.

One sauce suits for both salmon and linguine.

Cheesy Eggplant Croquette

  1. Peel the 1 large eggplant and remove stem. Chop it into small cubes. Also prepare 1/2 chopped onion and 3 cloves of chopped garlic.
  2. Heat a pan. Add in 1 tablespoon oil. Sauté onion and garlic first till aromatic.
  3. Add in eggplant cubes. Stir fry till softened. Season with salt and black pepper. Make sure eggplant is completely cooked.
  4. Place eggplant in a big bowl. Beat in one egg. Add chopped spring onion or parsley. Also add in 2 tablespoon bread crumbs.
  5. Take a spoonful eggplant in the palm. Stuff in cheese. Then close it up. You can make it into ball shape too.
  6. Coat eggplant croquettes in bread crumbs. And fry till golden brown.

I really love them.

Shrimp & Broccoli Linguine

I guess this is a very healthy dish. 🙂 Oh, I forgot, I also add some sausage in this dish. Let’s just pretend sausage is not there. 🙂

1. Cut broccoli into small pieces. Blanch in boiling water for 2 mins. Then drain them and set aside.

2. Cook linguine till almost cooked. Let’s say 1-2 mins less than required.

3. Heat a little oil in the pan. Fry shrimps till pinkish. Add in a little chopped garlic. Fry till aromatic.

4. Add in drained broccoli and 2 tablespoon stock. If you want your linguine taste creamy, you can also add in cream or cheese or both at this step. Stir evenly. Sprinkle mixed spices.

5. Add linguine in and simmer for 1-2 mins.

6. Season with salt and black pepper.

Cinnamon Walnut Coffee Cake

It’s been a long time for me to do baking since last time. Recently, my husband starts to have coffee almost everyday. Why doesn’t he have coffee before? That’s because he’s afraid he would be addicted to coffee. But why he drinks coffee now? That’s because he cannot resist the attraction of coffee. Yeah, I know sometimes my husband is so complicated and contradictory.  Sign~

Since he picks up the habit of drinking coffee, baking a coffee cake sounds a good idea to me.

Ingredients:

chopped walnut 1 cup

brown sugar  1/4  cup

cinnamon powder 1 tsp

flour  1 tbsp

coffee 2g (I didn’t intend to add coffee. Just that my husband heard I was going to bake a coffee cake. He lent his coffee to me very generously. Yeah, he didn’t know coffee cake is to be served with coffee, not made from coffee.)

ALL THE FIVE INGREDIENTS ABOVE IS TO FOR TOPPING AND FILLINGS. Mix them well in a bowl and set aside.

For the cake:

butter 1/2 cup

sugar 1 cup

vanilla  1 tsp

egg 2

baking soda 1/2 tsp

baking powder 1 tsp

salt 1/4 tsp

flour 2/3 1 cup

plain yogurt 3/4 cup

preheat oven to 180 degree C.

  1. Cream butter with sugar till light and fluffy.
  2.  Add in vanilla and eggs (one by one).  Mix well.
  3. Mix baking soda, baking powder, salt and flour in a bowl.
  4. Add 1/3 dry ingredients into butter, then 1/2 yogurt. Add the rest dry ingredients and yogurt alternately. Mix well before adding.
  5. Spread 1/2 batter into the baking pan. Sprinkle around 1/3 walnut & cinnamon mixture over it.
  6. Add the rest cake batter, and top with the rest walnut & cinnamon mixture.
  7. Into the oven for 40-50 mins.

Trotter & Soy Bean Soup

My husband suddenly mentioned collagen the other day. Trotters came to my mind immediately. So I decided to cook this soup. A very classic Chinese trotter and soy bean soup.

It’s a very simple but time-consuming soup.

  1. Wash trotters in water and remove the hair.
  2. Soak soy beans in advance for 2 or 3 hours at least.
  3. Place trotters, soy beans, ginger slices, in a pot. Add in enough water.
  4. Turn to high heat, bring it to boil first. Skim the soup. And simmer with low heat for 2 hours at least.
  5. Season with salt and garnish some chopped spring onion.

I used the rice cooker’s soup function and simmer it for over 4 hours. It turned out amazing.

Soup is sticky and rich. Meat can easily fall off from the bone. My husband drank a whole big bowl of soup very fast. He couldn’t stop and kept saying “delicious”.

Steamed Enoki Mushroom

Enoki mushroom is a necessary ingredient for hotpot or Sichuan ma la pot. Steam enoki mushroom is another way to cook them.

1. Remove the root. Rinse enoki mushroom under water. Drain them and place them in a plate.

2. Heat a pan. Add in 1 tablespoon oil. When oil is hot, add in 1 tablespoon chopped garlic and 1/2 tablespoon chopped ginger. Stir fry till aromatic. Also add in the salt and a little sugar.

3. Pour the hot oil over enoki mushroom in the plate.

4. Steam enoki mushroom over boiling water for 8 mins.

5. A pot juice will come out. Pour it out into the pan. Heat the pan again. Add in a little light soy sauce, sesame oil, sugar, and starch water. Reduce a bit. Pour back over the enoki mushroom.

Beef Stew 2.0

The first time my husband and I wen to buy groceries after he came back, I suddenly stopped in front of the beef shelf. A voice talked to me in my mind “buy some beef and cook beef stew”. Then I bought beef. Haha.

I cooked tomato beef stew before. This time I’m gonna make a beef stew 2.0. 🙂

1. Cut beef into small cubes. Prepare 3 big rotten tomatoes. Cut a cross at the bottom. Soak in hot water for a little while. Peel them and chop into small dives.

2. Heat a pan. Oil in. Fry beef till brownish. Set them aside.

3. Same pan. Add in chopped 1/2 onion and 3 cloves of garlic. Sauté till aromatic. Add in tomato dice. Sprinkle a little salt and black pepper. Simmer a bit.

4. Transfer everything into a deep pot. Add all beef in. Pour in stock covers all ingredients. Also add in star anise, bayleaf, dried thyme. I also add in 1 tablespoon tomato sauce to make color brighter and 2 tsp sugar. Cover the lid. Simmer for 1 hour and a half. Trust me, your kitchen will be full of incredible smell.

5. Prepare 1 carrot and 2 small potatoes. Cut into small chunks. Add them into the pot. Simmer for another 30 mins.

6. Mix 2 tablespoon flour with water or stock till no lumps. Pour into the pot. Quickly stir evenly to make it rich and thick.

It’s perfect to go with rice or noodles. My husband really really loved it. He finished all rice in a great speed and kept saying yummy.

Scramble Eggs With Bitter Gourd & Shrimps

I’m not surprised that my husband likes sweet food. But he also likes bitter gourd, which really does surprise me.

I think I used to cook bitter gourd by frying it or stir frying With scrambled egg or making it soup. I cooked scrambled eggs with bitter gourds for many many times. This time, I would like to add shrimps in.

It’s still quite easy.

1. Beat 3 eggs in a bowl. Stir with chopsticks. Cut 1/2 bitter gourd into slices (remove the seeds and white part first). Thaw the shrimps if you use frozen ones.

2. Heat 1 tablespoon oil in the pan. When it’s hot, pour the egg in. When the bottom starts to solidify, stir egg with chopsticks till almost cooked. Set aside for later use.

3. Add a little more oil if needed. Fry the shrimps till pinkish. Set them aside too.

4. Fry the bitter gourd slices in the same pan. Stir fry for around 3 mins.

5. Add all egg and shrimps back into the pan.

6. Season with salt and a little sugar. Stir fry evenly for another min.

Ready to serve.

Simple and healthy. Especially suitable for hot weather in summer.

Mashed Potato

1. Cut potatoes into small chunks. If your potatoes are very clean, you can peel them after boiling. If not, please peel them before boiling. Boil potatoes in hot water with some salt till completely soft.

2. Mash potatoes with a fork and set aside for later use.

3. Heat a sauce pan. Cut in 15g butter. When butter melts, add in 15g flour. Keep stirring till they get fully mixed. Keep low heat to avoid getting burnt.

4. When the flour & butter mixture turns brown, pour in 1 cup chicken stock. Keep stirring let flour & butter mixture dissolve in stock.

5. Season with 1/2 tablespoon light soy sauce, 1/4 tablespoon dark soy sauce, salt and black pepper. Keep stirring to reduce the sauce till very condensed and thick.

6. Pour sauce over mashed potato.
