Cheesy Meatball Pasta

Homemade Beef Burger 

I used the recipe of beef patty for beef burgers.

Sometimes, I like to make some extra meatballs and freeze for later use. It’s very convenient.

1. Heat some oil in the pan. Add in meatballs and bring to brown.

2. Add in 1 cup of chopped tomato. Stir fry a bit.

3. Pour in 250 ml stock and 1/2 cup milk. Sprinkle 1 tsp mixed herbs. Bring to boil. Then simmer for 15-20 mins.

4. Add in 1/2 cup shredded cheese.

5. Stir to melt cheese and add in cooked pasta. Blend well.

6. Season with salt and black pepper.

No-failure Oven Roasted Chicken

I tried it several days ago and my husband loved it.

First, prepare marinade. In a sauce pan, add in several ginger and garlic slices. Pour in 50 ml cooking wine and 100 ml light soy sauce. Add in 3 tablespoon sugar and bay leaves. Turn on the stove and heat it till sugar melted. Then turn off the stove and set it aside.

For the chicken, here I used a half chicken. Use a toothpick to poke it several times so that marinade can work better.

Put chicken in a zip bag or a container. Pour the marinade in. Give it a good massage. Then put the lid on and put into fridge for overnight or even longer like one day or two days.

When it’s ready to cook, preheat oven to 190 degree C. Bake for 40 mins.

You can wrap the chicken wing with aluminum foil to prevent it getting burnt. ( I should’ve done that earlier).

Oven-Roasted Tomatoes

Preheat oven to 170 degree C.

1. Clean cherry tomatoes and cut them into halve.

2. Sprinkle salt, black pepper, olive oil, minced garlic and rosemary over tomatoes. And mix them well.

3. Place tomatoes in baking pan and then put into oven. Bake for around 30 mins.

If you want them to be drier, you can prolong the baking time.

Roasted tomatoes can be used in spaghetti or other dishes.

Skillet Cheese Meatball

Meatballs I used are made by myself. Here is the link:

Preheat oven to 200 degree C.

Heat skillet on the stove. Add in some oil. Fry meatballs till they turn golden brown.

Pour in half bottler of pasta sauce ( around 170g) with 2 tsp water. Heat for a little while to let each meatball coated with condensed sauce.

Put skillet into oven. Bake for 15 mins.

Then sprinkle cheese shreds over it. And heat for another 5 mins or till all cheese melts.

Take skillet out. Sprinkle grate Parmesan and parsley.


It tastes really grate.


Also the cheesy tomato sauce is a terrific match for bread.

Homemade Meatball & Meatball Spaghetti 

For meatball:

Minced pork 300g

Egg 1

Salt  1 tsp

Black pepper powder  1/2 tsp

Small onion 1 ( chopped and pan-fried first)

Bread crumbs 40g

Garlic powder 1/2 tsp
Mix all the ingredients in a big bowl by hand.

Then make small meatballs.


Heat a little olive oil in the pan. Fry meatballs till golden brown. Then take them out.


Heat the oil left in the pan. Add in chopped garlic ( 2 cloves) and sauté.

Pour in pasta sauce ( I used around 170 g). And I also added 2 tsp water. Stir well.

Add meatballs in pasta sauce. Turn to low heat and keep stirring till sauce becomes very condensed.

Put cooked spaghetti into sauce. Sprinkle some black pepper granulate and mix well.

Serve with parsley and grate cheese.


My husband loves it very much.

Bacon Lasagna 

Because I didn’t have minced beef at home, so I used bacon instead.

Tomato sauce:

1. Heat a little oil in the pan. Add in carrot  , onion and garlic dices. Stir fry till softened.

2. Add in chopped tomato, 2 tsp tomato sauce, a little salt and black pepper. Stir fry evenly.

3. Add in some water. Turn to low heat. Simmer till all ingredients soften and sauce becomes very condensed and dry.

White sauce:

1. Melt 25 g butter in the pan with low heat.

2. Add in 25g flour. Stir slowly.

3. Pour in 200 ml milk and a little nutmeg powder.

4. Keep stirring till sauce becomes very condensed.
Bacon needs to be pan fried a bit.

Lasagna (4 pieces) in boiling water for 7 mins.

Preheat oven to 220 degree C.
Grease baking pan.

Put in 1 piece lasagna and brush tomato sauce. Place bacon and 2 cheese slices. 

Then put in another layer of lasagna. Brush white sauce.

Then another layer of lasagna with tomato sauce, bacon and cheese.

And so on.
The top layer should be tomato sauce. And sprinkle grated cheese over it.

Bake for 30 mins.



Roasted Chicken Leg With Basil, Tomato & Garlic


1. Put chicken legs in the baking bowl. 

2. Spread several basil leaves.

3. Cut small tomatoes into half pieces. And sprinkle in the space of baking bowl with some garlic cloves.

4. Sprinkle salt and black pepper.

5. Spread some olive oil onto all ingredients. Use finger to brush chicken leg with olive oil.

6. 175 degree, 90 mins.



It can be served with pasta. Baked tomato is perfect for pasta.

Braised Cauliflower With Tomato


It’s a popular dish in my hometown. Someday my mother told me that she learnt a new dish from her friends. And that new dish is this braised cauliflower with tomato. Later, this dish also showed up in the canteen of my high school.

It’s not a difficult dish to cook. I would also recommend this dish to those people who are on a diet.

First, you need to peel two or three medium tomatoes. Then chop them into small dice. Heat a little oil in the pan. Stir fry tomato dices. When they become softened, add in cauliflower pieces. Stir fry a bit. Then pour in hot water reaches half height of the ingredients. Cover the pan with lid. Braise till cauliflower is done. Sprinkle salt and dish out.

Cheesey Farfalle Pasta

Ingredients:

Small onion 1 (chopped into small bits)

Bacon bits

Tomato 2 (peeled and chopped into small bits)

Frozen green peas ( in boiling water for 1 min)

Farfalle pasta (cooked)

Salt

Black pepper

Cheese

Tomato sauce

1. Heat a little oil in the pan. Add in bacon bits. Stir fry till bacon gets a bit burnt.

2. Add in onion bits. Stir fry a bit.

3. Put in all the tomato pieces. Sprinkle some salt. Add in 2 tsp tomato sauce. Braise for a while till tomatoes become tomato sauce.

4. Add in green peas. Simmer for 1 min. Turn off the stove.

5. Add in cooked farfalle pasta. Sprinkle some black pepper. And stir evenly.


Spread cheese on farfalle. Put in the microwave for around 2 mins till cheese melts.


Very yummy.

Lobster Soup

1. Cook lobster in the boiling water. When it’s done, take out the lobster meat.

2. Prepare vegetable part. I used 1 medium potato, 1 medium onion, 1 medium carrot, 2 small tomatoes, 2 pieces of celery. Chop them into small pieces.

3. Heat some oil in the pan. Put in onion first. Then add all the rest vegetables in. Stir fry a bit. Add in a little salt and black pepper. Pour in enough water covers all ingredients ( I used the water cooked lobster). Cover the pan with lid.

4. When all the vegetables get softened, take them out and put in blender. Blend them well till smooth.

5. Pour vegetable smoothie back into pan. Heat it with low heat. I added some water (cooked vegetable) so that it won’t be very condensed.

6. Add in 2 tsp light cream. Keep stirring till it boils again. Mix in a little herbs you like and a little salt if it tastes plain.

7. Put lobster meat bits in the soup plate with some cheese. Pour soup into plate.

I also put the lobster head in the plate for decoration. My husband said it looks like a swimming lobster. 🙂
