Cheesey Croquette 


1. 2 medium potatoes peeled and cut into small pieces.

2. Boil or steam till done.

3. Put frozen carrot dices, corns and sweet peas in boiling water for several seconds. Then take out and drain.

4. Mash potato pieces in a bowl. Add in carrot, corn and sweet peas. Stir well.

5. Sprinkle salt and black pepper. Stir evenly.

6. Put a spoonful of mashed potato in hand. Add in some cheese. Then wrap it up and make into round shape.

7. Coat rounds with a thin layer of flour, then egg mixture and bread crumbs at last.

8. Fry in the pan till golden brown. I just shallow fried them.



Served with sauce you like.

Tempura 


It’s an easy dish to cook without much preparation.

1. Make batter. I used tempura flour. Please read the instruction about the ratio of water and flour.

2. Prepare prawns ( remove head and shell but leave the shell on the tail). Cut vegetables into slices. I recommend carrot, eggplant, mushroom and French beans. French beans can be just cut into medium pieces.

3. Heat the oil in a deep pot. Put a chopstick in it. If many small bubbles show up at the bottom, then it’s ok to deep fry.

4. Dip prawns and vegetables in the tempura batter and deep fry till golden brown.




Udon soup would be a good choice to be served with.

Stir Fry Mushroom With Bell Pepper, Carrot & Green Chili


It’s a quick and easy vegi dish.

1. Heat a little oil in the pan. Add in some chopped garlic. Stir fry a bit.

2. Put in mushroom ( torn into shreds) and thin carrot slices. Keep stir frying till mushroom turns softened. Cover the pan with lid. And braise for around 2 mins. If the pan is too dry, you can add a little water.

3. Add in chopped bell pepper and green chili. Stir fry a bit. 

4. Add in a little light soy sauce and oyster sauce. Stir fry evenly.

5. If the dish is too light, you can add a little salt. Stir evenly then dish out.

Stir Fry Vermicelli With Vegetables

Ingredients:

Vermecelli ( cooked in boiling water till almost done, not completely done. Then rinse and drain)

Onion shreds 

Carrot shreds

Spinach ( cooked in boiling water for several seconds. Then squeese the water out and drain)

A little chopped ginger

1 tsp light soy sauce

1 tsp dark soy sauce

1 tsp sugar

A little salt

1 tsp white sesame 

1. Heat a little oil in the pan. Put in ginger. Stir fry a bit.

2. Add in onion and carrot. Stir fry till they turn softened.

3. Add in vermicelli, stir fry evenly with carrot and onion. 

4. Add in light soy sauce, dark soy sauce and sugar. Then stir fry evenly for around 2-3 mins.

5. Add in salt and spinach. Stir fry evenly.

6. Last add in sprinkle white sesame.

Kung Pao Chicken Without Peanuts


Ingredients:

Chicken (cut into small dices. Marinated with a little salt, cooking wine, light soy sauce and cornstarch)

Carrot & cucumber ( both chopped into small dices)

Oil

Pixian bean sauce

Sugar
Because my husband doesn’t like peanuts, so I didn’t use peanuts here. There are peanuts in authentic Kung Pao Chicken.

1. Heat some oil in the pan. Put in chicken bits. Stir fry till chicken turns white in color. The take them out.

2. Put carrot bits in and stir fry for around 2 mins. Then add in cucumber bits. Stir fry for another min. And take them out too.

3. Add 1 tsp Pixian bean sauce in the pan. ( Pixian bean sauce is commonly used in Sichuan dishes. It is spicy and salty. If you don’t want it to be very spicy, you can use less). Stir fry till the oil turns red.

4. Add in chicken together with carrot and cucumber. Stir fry evenly.

5. Add in 1 tsp sugar. Quick stir fry evenly. 

Chicken Vegetable Soup


It’s an easy soup to make.

Ingredients:

Chicken ( I used 2 big chicken wingsticks)

Shiitake 

Bamboo shoot ( cut into medium pieces)

Carrot ( chop into medium pieces)

Snow pea ( put in boiling water for 1 min. Take out and drain)

Oil

Light soy sauce

Salt

Hot water

1. Heat a little oil in the pot. Put in chicken. Stir fry a bit till the color turns a bit golden.

2. Add in carrot and bamboo shoot with a little light soy sauce. Stir fry a little.

3. Pour in hot water covers all ingredients. If you have soup-stock, that’ll be better. Add in several shiitakes. Cover the pot with lid. 

4. When all ingredients are done, add in snow peas. Then simmer for another 4 or 5 mins. Spread some salt.

Stir Fry Stingray With Vegetables

1. Cut stingray fillet into small pieces and marinate it with a little salt, cooking wine, light soy sauce and corn starch.

2. Heat some oil in the pan. Put stingray pieces in. Stir fry them till a bit golden brown.and take them out.

3. Stir fry chopped garlic in the pan. Then add in chopped vegetables ( I used carrot and celery. Carrot was cut into thin slices, and celery was cut into small pieces). Stir fry till vegetable gets softened.

4. Put stingray in the pan. And stir fry with vegetables. Add in a little light soy sauce and a little water. 

5. Quick stir fry a bit. If it tastes plain, add in a little salt. And it’s done.

Lobster Soup

1. Cook lobster in the boiling water. When it’s done, take out the lobster meat.

2. Prepare vegetable part. I used 1 medium potato, 1 medium onion, 1 medium carrot, 2 small tomatoes, 2 pieces of celery. Chop them into small pieces.

3. Heat some oil in the pan. Put in onion first. Then add all the rest vegetables in. Stir fry a bit. Add in a little salt and black pepper. Pour in enough water covers all ingredients ( I used the water cooked lobster). Cover the pan with lid.

4. When all the vegetables get softened, take them out and put in blender. Blend them well till smooth.

5. Pour vegetable smoothie back into pan. Heat it with low heat. I added some water (cooked vegetable) so that it won’t be very condensed.

6. Add in 2 tsp light cream. Keep stirring till it boils again. Mix in a little herbs you like and a little salt if it tastes plain.

7. Put lobster meat bits in the soup plate with some cheese. Pour soup into plate.

I also put the lobster head in the plate for decoration. My husband said it looks like a swimming lobster. 🙂

Easy Vegetable Soup


Vegetables I used includes tomato, shiitake, carrot and spinach.

1. Remove peel of tomato. Chop tomato and carrot into small pieces.

2. Heat a very little oil in the pan. Put tomato pieces in. Stir fry a bit.

3. Add in enough water. Put carrot and shiitake in.

4. Simmer till carrot softens. Because I cooked other dishes at the same time, so I let the soup simmer for about 30 mins.

5. Finally, add in spinach. Add some salt and a little sugar.

Easy Braised Chicken With Shiitake 

This dish is actually similar to yellow chicken stew. Yellow chicken stew is really popular in China. I guess there are yellow chicken stew restaurants in every China’s city.

It’s a dish made mainly of chicken, shiitake and green bell pepper.

I cooked it in a relatively easy way.

1. Cut boneless chicken leg into medium pieces. You can use other chicken parts, but I don’t recommend chicken breast.

2. Heat some oil in the pan. Put in chicken, stir fry till chicken gets a little golden brown on the edge.

3. Add in carrot and shiitake slices. Stir fry for a while.

4. Add in 1 tsp light soy sauce, 1 tsp dark soy sauce and 1 tsp sugar. Stir fry evenly.

5. Pour in enough water covers all ingredient. Cover the pan with lid and use low or medium heat.

6. Before the sauce in pan is almost dry. Put in bell pepper pieces, and turn to high heat.

7. Keep stir frying till sauce is dry.


It’s an ideal match for rice.

If you want it to be spicy, you could add a little dry red chili at first.
