Homemade Tomato Sauce

Apart from searching for recipes, one of my hobbies is watching movies about food.

I watched the Japanese Movie Little Forest the other day. It tells a story of a little girl living in the countryside. She plants vegetables and fruits and makes dishes with them. One scen is about her making tomato sauce with the tomatoes she plants. So I imitated her way of doing that.

1. First, wash some cherry tomatoes. Actually, you can use small tomatoes or big ones, depending on how big your jar is. And cut a cross at the bottom of each one.

2. Then put them in hot water for several seconds. If your tomatoes are bigger, let them stay longer in hot water.

3. Put them into icy water. And the tomato skin can be easily removed.

4. Put peeled tomatoes back into hot water. Boil them with a little salt. Don’t put too much.

5. Then put the tomatoes along with some salty hot water into sterilized jar. Please don’t make the jar too full.

6. Put the jar into hot water. And boil it for several minutes. Make sure the lid is not cover too tight.

7. After boiling, cool the jar for a while and tighten the lid.

The movies says, put the jar in the fridge. When you feel hot in summer, you can take a bite, and it makes you feel very cool.

I took them out and heat in a pan with some sugar.

Then poured them on cooked spaghetti. It tasted really great.

Quick & Easy Stir-fry King Oyster Mushroom

I love all kinds of mushroom.

This dish is very simple.

1. Tear king oyster mushroom into thin slices or you can just cut it.

2. Heat some oil in the pan. Stir fry chopped garlic first. Then put mushroom in. A lot of water will come from mushroom while stir frying.

3. Add some oyster sauce, a little light soy sauce and a little dark soy sauce. Stir fry evenly. Stir fry till mushroom becomes dry and no more water in the pan. Then the dish is done.

Potatoes are very soft and tasty.

Easy Shiitake Chicken Leg Soup

This soup is very easy. Just put chicken leg in a pot, add in enough water. At first, use medium heat. After water gets boiled, turn to low heat. Cook for half an hour. Then add in shiitake and wolf berries. Cook for at least another half an hour. Add in salt and it’s done.

It actually took me one hour and a half to make this soup. Just the longer you cook it, the better it will taste.

Ladyfinger Omelet

Actually I don’t like ladyfinger very much. Because it is sticky inside, which tastes a bit weird to me. But I like ladyfinger omelet.

Two ladyfingers removed off two ends and put into boiling water for 1-2 minutes. Put some salt in the water.

Beat 3 small eggs in a bowl.

Heat a little oil in the pan. Pour the egg in and spread one layer in the pan. When egg starts to solidify, put one ladyfinger at one end of the pan. Then roll the egg with ladyfinger in it to the other end of the pan.

Pour egg into the pan. One ladyfinger put next to the omelet already made. Then roll them together to the other end.

Repeat the procedure above till all egg used up.

It will become a big omelet and cut it into small pieces.

Bacon Potato Soup

1. Cut potato and onion into small pieces. (Here I used two potatoes and one onion.)

2. Heat the oil in the pan. Put in the bacon bits. When the bacon bits get a little burnt, take them out.

3. Stir fry onion first. Then the potato pieces.

4. Add in enough water that covers potato pieces. Boil them till potato gets soft.

5. Use blender to smash potatoes.

6. Put smashed potato back into the pan. Add a little water or the soup will get burnt easily. Also add in light cream, salt and black pepper powder. Keep stirring till all the things mix well.

Ladle the soup out into bowl, and add in the bacon bits.

Quick & Easy Fried Zucchini

I like zucchini very much. I also like simply frying them with a pan.

Just spread some oil in the pan. Put zucchini slices in the pan. When the downside turn a little golden brown, flip them over and fry the other side. Spread some salt and black pepper. When both side are done, take them out in the plate.

You can stir fry zucchini with sausage slices, which also tastes good.

Scrambled Egg With Beef

I didn’t know beef can be cooked in this way until in college. Both egg and beef taste tender. It’s a dish I and my friends must order when we ate together outside.

It’s also an easy and quick dish.

Ingredients:

Beef ( cut into thin slices, marinate with a little salt, light soy sauce, cooking wine, oyster sauce, sesame oil and starch)

3 eggs ( beat in a bowl, add a little salt)

Spring onion ( chopped into small pieces)

1. Heat some oil in the pan. ( a little more oil than usual)

2. Put beef slices in the pan. Stir fry till they get slightly golden brown and almost done.

3. Put fried beef slices in egg and mix well.

4. Heat some oil in the pan. Pour egg and beef in the pan. Once the bottom turn solidify, stir fry. Sprinkle spring inion. Then take them all out in the palte.

Mashed Potato

Potatoes peeled off and steamed or boiled.

Mash them in a large bowl. Then add in some vegetables bits. ( I used carrot, sweet peas and corn. Boiled already). Mix them well. Add in a little salt and black pepper powder.

If you also fry steak as I did. Don’t throw away the butter left in the pan.

Heat the butter again. Put in onion and carrot slices. Keep stir frying till carrots get a little burnt. Then add in water covers all ingredients in the pan. Cook for around 5 minutes. Then take all the carrot and onion out. Just leave sauce in the pan. Add some flour and oil in a bowl, mix them well. Then add the batter into the pan. Keep stirring till the sauce gets condensed. If you think it’s a bit plain, you can add a little salt. Then pour the sauce onto mashed potato in the plate.

Ge Da Soup

It’s a traditional soup in China. When I was little, my mom always cooked me this soup, especially in cold weather or when I was sick.

It also has an interesting name. Ge Da in Chinese means a lump, a knot, even means pimple on face. But here it means the flour in the soup. Because the flour will become many small lumps.

There are many kinds of ge da soup, and there are also ge da soup restaurants in China. Tomato and egg ge da soup is probably the most common one.

1. Prepare a half bowl of flour.

2. Add a little water in the flour.

3. Stir flour with a chopstick very quickly till flour lumps are shaped.

4. Heat a little oil in the pan. Put in tomato pieces. ( I used 2 large tomatoes, peeled off and chopped into small pieces).

5. Stir fry tomato a little, then add in 2 bowls of water. Cover the pan with lid.

6. When water boiled and tomato soup becomes a little condensed, add in all the flour lumps ( flour ge da). Stir with chopsticks, in case they stick together.

7. When the flour lumps are cooked. Beat an egg in a bowl, stir evenly. Then pour egg into the pan, while pouring, you should also keep stirring with chopsticks.

8. Add in spring onion pieces and salt.

If you like, you can also add a little sesame oil to your soup.

The flour ge da ( lump) tastes very chewy. When I was little, I liked finding ge da in the soup. It’s very interesting to me.

Chinese people do love tomato and egg. We make them into soup and dish. We also make them go well with rice and noodles.

If you notice the Olympic Games, you will find even Chinese athletes wear red and yellow. Chinese netizens call that tomato and egg color. 🙂
